CHERRY-BERRIES ON A CLOUD
A "cloud" of meringue is heavenly when filled with a cream cheese blend and colorful, sweet-tart fruit.

Steps:
- Heat oven to 275°F. Grease bottom and sides of 13x9-inch pan. In large bowl, beat egg whites, cream of tartar and salt with electric mixer on high speed until foamy. Beat in 1 3/4 cups sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not underbeat. Spread in pan.
- Bake 1 hour. Turn off oven; leave meringue in oven with door closed 12 hours.
- In large bowl, mix cream cheese, 1 cup sugar and the vanilla until smooth. In chilled medium bowl, beat whipping cream until stiff. Fold whipped cream and marshmallows into cream cheese mixture. Spread evenly over meringue. Refrigerate at least 12 hours but no longer than 24 hours.
- In medium bowl, mix all topping ingredients until well blended. Spoon over individual servings of dessert. Store in refrigerator.

CHERRY CLOUD ANGEL FLUFF RECIPE
Steps:
- Tear the angel food cake into small pieces, set aside.
- In a medium-sized bowl combine the powdered sugar and cream cheese, beating until well blended and smooth
- Add the whipped cream and blend until light and fluffy. Fold in 3/4 of the torn cake pieces until completely covered.
- In a Trifle dish or large bowl, spoon a bit of cherry pie filling, add a few pieces of torn angel food cake, top with half of the filling. Spread the layer smooth, Repeat the layers, finishing off with the remaining cherry pie filling. Sprinkle with pecans.
- Chill for at least 2 hours prior to serving.

- Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Add cream of tartar; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved., Spoon meringue onto a parchment-lined baking sheet. Using the back of a spoon, form meringue into a 9-in. circle, building up edges slightly., Bake at 275° for 1-1/2 hours. Turn oven off and do not open door; leave meringue in oven for 1 hour. Remove from the oven; cool completely., In a small bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth. Fold in whipped cream until mixture is well blended. To serve, place meringue on a serving platter; fill with cream cheese mixture and top with pie filling.

CHOCOLATE CHERRY CLOUD CAKE
I learned to make this cake in the 1960's, when I had to cook cheap! LOL It's stupidly easy and tastes like a dream and great for emergency take alongs or drop in company. 4 ingredients and add vanilla ice cream, a drizzle glace or whipped cream or whipped topping and you have a hit!

- 1. Preheat oven to 350 degrees.In a large bowl, pour in the can of pie filling,add one lightly beaten egg, and the teaspoon of Almond extract. Using a wooden spoon, blend the liquid ingredients together.
- 2. Add your cake mix to the liquid and fold by hand until the ingredients are fully moistened. The batter will be wet, but appear similar to brownie mix (slightly lumpy).
- 3. Now, you can oil and flour an 11x13 inch pan, but I cheat and simply line it with tin foil. Pour your batter into the pan and spread it lightly and evenly with the back of the wooden spoon. Place pan in oven on top rack and bake for 30 to 35 minutes, Cake will spring back when touched in the center. Can be served slightly warm with vanilla ice cream, or cold with toppings. Extremely light, moist and flavorful.
