CHERRY CHOCOLATE FUDGE
Easy Cherry Chocolate Fudge made with three ingredients in the microwave in less than 3 minutes! Easy fudge recipe ever with tons of cherry and chocolate flavor - no boiling or candy thermometers needed.

Steps:
- Prepare an 8X8 dish by buttering a piece of foil and pressing it into the pan.
- In a glass bowl, melt the chocolate chips by microwaving in 20-second intervals, stirring after each interval until the chocolate is completely melted and smooth. This usually takes me 2-3 intervals. Make sure not to overcook the chocolate or it will start to seize up.
- Stir in the frosting and the chopped cherries and mix until well combined. Pour into prepared pan and spread until even and smooth. Refrigerate for about an hour to set up and then slice into squares. Can store in the refrigerator or at room temperature.

Steps:
- Put the marshmallow creme, margarine and chocolate chips in large bowl.
- Mix the sugar and milk together in a large heavy pan.
- Bring to boil over medium heat, stirring constantly.
- Cook 8 minutes after rolling boil.
- Pour mixture into bowl with marshmallow, margarine and chips and beat.
- Once the mixture is stiff, add the nuts and cherries.
- Pour into 9"x13" pan and cool.
- Cut when cool.

- In a microwavable bowl, combine milk and chocolate chips. Microwave on high until chips are melted and mixture is smooth when stirred, about 1 minute. Stir in almonds, cherries and extract. Spread evenly in a greased 8-in. square pan. Cover and chill until firm. Cut into squares. Store, covered, in the refrigerator.

- LINE 8-inch-square baking pan with foil.
- COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
- STIR in marshmallows, morsels, dried cherries and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan. Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.
- VARIATION: For an equally delicious fudge, try substituting ¾ cup dried berry blend for the cherries.
WHITE CHOCOLATE BAKEWELL (CHERRY AND ALMOND) FUDGE
This is not a true fudge but is so ridiculously easy to make that I had to post it! It also tastes wonderful if you like rich, sweet treats! After making Sam#3's Recipe#305332, I liked it so much that I had to try different variations on the recipe, and this is one that I really like! (Posted with permission). Cook time is chill time.

Steps:
- Put the white chocolate chips and sweetened condensed milk in a saucepan and warm over a very low heat, stirring continuously until the chocolate has melted and the mixture is smooth. Remove from the heat.
- Stir in the almond extract and then the glace cherries.
- Line a loaf pan with cling film (saran wrap) and pour the warm fudge mixture inches.
- Chill in the fridge for at least 3 hours, until completely set (ideally overnight).
- Then turn out of the pan and serve (this is a soft fudge so is best served slightly chilled).
- NB If desired, you can quarter extra glace cherries and scatter them over the top of the fudge before chilling to make it look a little more colourful!
MICHIGAN CHERRY DARK CHOCOLATE FUDGE

- Spray a 13 x 9 inch glass baking dish with non-stick butter flavored baking spray and set aside.
- In a non-stick skillet, melt chocolate chips and condensed milk over low heat until just smooth. Stir in vanilla, cherries and nuts and pour into glass baking dish.

- Line 8-inch square pan with foil.
- Lightly press chopped cherries between layers of paper towels to remove excess moisture.
- Place butter in medium microwave-safe bowl.
- Microwave at HIGH (100%) 1 minute or until melted; stir in powdered sugar, cocoa and evaporated milk until well blended.
- Microwave at HIGH 1-1/2 minutes; stir vigorously.
- Microwave at HIGH an additional 30 seconds at a time, until mixture is hot, slightly thickened and smooth when stirred.
- Do NOT boil.
- Stir in chopped cherries, pecans and almond extract.
- Spread mixture into prepared pan.
- Cover; refrigerate until firm.
- Remove foil; cut into squares.
- Garnish with cherry halves and slivered almonds pressed lightly onto fudge, if desired.
