CREAM CHEESE CHOCOLATE CHIP COOKIES

This is a slightly healthier version of traditional chocolate chip cookies because margarine and cream cheese replace straight butter. They bake up moist and cake-like and have a delicious taste. I always gets rave reviews!

1 (8 ounce) package cream cheese
1 cup margarine
¾ cup white sugar
¾ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 cups milk chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets with non-stick cooking spray (I use butter flavored) and set aside.
  • Combine cream cheese, margarine, and sugars. Blend in egg and vanilla. Add dry ingredients and mix well. Add chocolate chips and mix.
  • Bake 15-18 minutes or until edges are slightly browned. Enjoy!

My baking mojo hasn't just kicked in, it's stuck in overdrive :) This recipe was found at mangiabenepasta.com - a little labor-intensive, but they will be beautiful in Christmas cookie baskets. Chilling time is not included in prep or baking times.

1 cup flour
4 ounces cream cheese, cut into cubes
1/2 cup unsalted butter, cut into cubes
1/2 cup apricot jam
1 cup sweetened flaked coconut
1 cup dried cherries

Steps:

  • In a food processor or electric mixer, combine the flour, cream cheese, and butter.
  • With your hands, gather the dough into a ball, flatten it, and wrap in plastic wrap.
  • Refrigerate for at least 1 hour or up to 24 hours.
  • Preheat oven to 375-degrees F. Butter a baking sheet.
  • Divide the dough into 2 equal pieces.
  • Roll each piece out on a floured surface to a 12x8-inch rectangle.
  • Spread each with 1/4 cup of the jam.
  • Top each with 1/2 cup coconut and 1/2 cup cherries.
  • Starting at the longer end, roll each up jelly-roll style. Seal the seam with your fingers.
  • Cut each roll into 12 slices.
  • Place cookies on prepared sheet.
  • Slightly flatten each cookie so they are of even thickness.
  • Bake 25 minutes or until golden brown. Cool on a wire rack.

1 (3 ounce) package cream cheese, softened
1 cup butter, softened
1/2 cup maraschino cherry, chopped and drained well
1 large egg
1 1/2 teaspoons almond extract
1 cup sugar
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat Oven to 375'.
  • In a large bowl, cream together butter and cream cheese until fluffy.
  • Stir in Remaining Ingredients. (dough will be a bit stiff).
  • Drop by rounded tablespoonsful about 1 inch apart onto ungreased cookie sheet.
  • Bake about 8-10 minutes. Watch them closely and don't let them get too brown.
  • Remove to wire rack to cool.
  • Yield is approximate.

1 cup margarine
1 cup confectioners' sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ cup rolled oats
1 cup cherry baking chips

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Combine margarine, confectioner's sugar and vanilla. Beat until fluffy. Add flour, baking soda and oats. Mix well. Stir in cherry flavored chips (other flavors work well, too!).
  • Drop by rounded teaspoonful onto ungreased cookie sheets and flatten slightly with fingers. Bake for 12 minutes. Remove immediately from cookie sheets and onto wire racks to cool.

1 cup butter, softened
1/2 cup sugar
1 egg yolk
1 teaspoon almond extract
2-1/4 cups all-purpose flour
3/4 cup crushed cornflakes
1/8 teaspoon salt
1 cup cherry baking chips
Additional sugar

Steps:

  • In a bowl, cream butter and sugar. Add egg yolk and almond extract; mix well. Combine the flour, cornflakes and salt; gradually add to creamed mixture and mix well. Stir in chips. Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Coat bottom of glass with cooking spray, then dip in sugar. Flatten cookies with prepared glass, redipping in sugar as needed. Bake at 375° for 10-12 minutes or until the cookies are golden brown around the edges. Remove to wire racks to cool.
