These Cherry Brownie Dream Bars are sure to become your new favorite thing. From the fudgy brownie base to the crunchy topping - every bite of these bars is like a dream come true!

18 oz brownie mix (plus ingredients needed to make brownies)
7 oz marshmallow creme
10 oz maraschino cherries
12 oz semi-sweet chocolate chips
1 cup creamy peanut butter
3 cups crispy rice cereal
Reddi-wip + additional maraschino cherries for topping

Steps:

  • Drain maraschino cherries and pat dry with a paper towel. Cut in half and set aside.
  • Prepare brownies according to package directions for 9x13 baking dish. Cool completely and refrigerate for at least one hour.
  • Spread marshmallow cream on top of chilled brownies and return to the refrigerator for at least 30 minutes.
  • Top with halved cherries..
  • Melt peanut butter and chocolate chips together in a microwave safe-container. Heat on high heat in 30 second intervals, stirring in between.
  • Stir in crispy rice cereal until completely coated. Spread mixture carefully over the top of the cherries.
  • Return to refrigerator for another hour before cutting into bars.
  • Store leftovers in an airtight container in the refrigerator.

These wonderfully dense chocolate brownies pack a cherry punch! Nothing compares to a homemade brownie and these certainly deliver.

Number Of Ingredients 18

12 maraschino cherries with stems
½ cup dark or milk chocolate candy melts
1 (12 ounce) package of semisweet chocolate chips, divided (1 cup)
1 cup unsalted butter, cut into chunks
2 ounces unsweetened chocolate, chopped
¾ cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
1 ¼ cups granulated sugar
3 large eggs
1 tablespoon espresso powder
1 tablespoon vanilla extract
1 (16 ounce) jar maraschino cherries, without stems,drained, dried and chopped
½ cup maraschino cherries drained, dried and chopped
½ cup unsalted butter, room temperature
1 cup confectioners' sugar
1 tablespoon milk
¼ teaspoon almond extract

Steps:

  • Pick out the best cherries, lay them on a paper towel and lightly blot dry.
  • Pour the candy melts into a small microwave safe bowl; heat until candy is melted and creamy (about 1 min.).
  • Line a cookie sheet with parchment or wax paper; dip into the melted chocolate half way up the cherries, lightly shake off any excess chocolate and place on prepared cookie sheet.
  • Set aside to harden.
  • Preheat oven to 325°, line a 9x13-inch baking pan with enough foil to hang over the sides (about 2-inches), spray with non stick cooking spray and set aside.
  • Measure out 1 cup of chocolate chips and set aside. In a medium saucepan combine the remaining chocolate chips, butter and unsweetened chocolate.
  • Cook on low heat, stirring until melted; set aside to cool 5 minutes.
  • Add ¼ cup flour and reserved (1 cup) chocolate chips (from the bag) to a small bowl, stir to combine and set aside.
  • In a medium bowl combine remaining ½ cup flour, baking powder and salt.
  • In a large bowl whisk together the sugar, eggs, espresso powder and vanilla.
  • Stir in melted chocolate mixture until just combined, stir in flour mixture until just combined, stir in chocolate chip mixture and then cherries.
  • Spread in prepared pan; bake 45 to 50 minutes or until toothpick inserted into the center comes out with moist crumbs clinging.
  • Cool pan on rack 1 hour.
  • Refrigerate uncovered until completely cooled (about 2 hours).
  • In a medium mixing bowl beat together the butter, confectioners' sugar, milk and almond extract until light and fluffy (about 2-3 minutes).
  • Stir in cherries.
  • Using the foil, lift brownies from pan; spread frosting over the top.
  • Cut into 12 large pieces or 24 small pieces.

2 teaspoons almond extract

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Mix sugar, oil, and almond extract together in a large bowl until well blended.
  • Combine flour, cocoa, baking soda, and salt in another bowl; stir into sugar mixture until combined. Beat in 1/2 of the cherries using an electric mixer until moistened. Fold in remaining cherries. Pour batter into the prepared pan.
  • Bake in the preheated oven until brownies spring back when gently touched, 25 to 30 minutes.

  • Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Gradually add flour., Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling. Drop remaining dough by teaspoonfuls over filling. Bake 35-40 minutes or until golden brown. Cool completely in pan on a wire rack., In a small bowl, mix confectioners' sugar, extracts and enough milk to reach desired consistency; drizzle over top.

Leftovers should be stored in the refrigerator. However, flavor is best at room temperature. Cook time includes chill time.

These are a favorite everytime I take them somewhere.....they are always the first to disappear. I usually cut them into squares and put them in individual cupcake papers to make serving easier. They are easy to make, too. Prep/cook time does NOT include 4 hours for chilling.

2 (8 ounce) packages low-fat cream cheese or 2 (8 ounce) packages cream cheese
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup unsalted butter
6 ounces unsweetened baking chocolate
2 cups sugar
3/4 teaspoon vanilla extract
3/4 teaspoon salt
4 large eggs
1 1/4 cups all-purpose flour
1 (21 ounce) can cherry pie filling

Steps:

  • Heat oven to 350°.
  • Line a 13 x 9" baking pan with foil, letting ends extend a bit over sides. Lightly coat the foil with nonstick cooking spray.
  • Topping: Beat together all topping ingredients in medium mixing bowl until blended and smooth. Set aside.
  • Brownie: In a large microwavable mixing bowl, melt butter and chocolate using med power -- about 2 minutes---check every 45 seconds and stir. (Can also do in a saucepan over low heat.) Heat until chocolate is melted and smooth -- stir to make a smooth mixture.
  • With wooden spoon, stir in sugar, vanilla and salt into melted chocolate mixture. Add eggs, one at a time, stirring briskly after each egg, until well-blended. Stir in flour.
  • Spoon brownie mixture into prepared baking pan.
  • Scatter heaping Tbsp of topping mixture on top of brownie mixture. Next, scatter Tbsps of cherry pir filling over top. Run tip of a knife through topping and pie filling to create a marbelized look.
  • Bake at 350 for 45-50 minutes or until brownie edges begin to pull away from sides and edges of cream cheese are slightly brown. THE CENTER WILL STILL "JIGGLE" WHEN SHAKEN EVEN WHEN THEY ARE DONE!
  • Cool in pan on wire rack. When cooled, chill for at least 4 hours before cutting.
  • After chilling, simply lift out by using the foil that lines the pan. Place on cutting board and cut into squares, and place into individual cupcake/muffin liners.
