SHEET PAN SAUSAGE PARMESAN WITH GARLICKLY BROCCOLI RECIPE - (4/5)

Sheet Pan Sausage Parmesan with Garlickly Broccoli Recipe - (4/5) image

Provided by Dr_Mom

Number Of Ingredients 22

FOR THE TOMATO SAUCE:
INGREDIENTS
1 1/2 tablespoons extra-virgin olive oil
1 clove garlic, thinly sliced
Large pinch crushed red pepper flakes
1 (14-ounce) can diced tomatoes
1 large sprig basil
1/2 teaspoon kosher salt, more to taste
1/8 teaspoon freshly ground black pepper
FOR THE SAUSAGE AND BROCCOLI:
1 small bunch broccoli (about 12 ounces), cut into 1-inch pieces
2 tablespoons extra-virgin olive oil, more as needed
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon kosher salt
1 1/2 pounds hot or sweet Italian sausage, pricked all over with a fork
1/3 cup fresh ricotta
3 cloves garlic, 2 thinly sliced, 1 finely grated or minced
Freshly ground black pepper
1/2 cup shredded mozzarella
2 tablespoons grated Parmesan cheese
Chopped basil or parsley, for serving
Italian bread, for serving (optional)

Steps:

  • Step 1 Heat oven to 450 degrees. Prepare sauce: In a large skillet over medium heat, heat oil until shimmering. Stir in garlic and red pepper flakes, and cook until fragrant, about 1 minute. Stir in tomatoes, basil sprig, salt and pepper, and bring to a brisk simmer. Simmer until sauce is very thick and most of the moisture is evaporated, 15 to 20 minutes. It should be thicker than the usual marinara sauce. Remove and discard basil sprig. Step 2 While sauce is cooking, toss broccoli with oil, red pepper flakes and salt on a quarter-size rimmed baking sheet (or use a regular sized rimmed baking sheet), and place in oven. Step 3 Arrange sausage in a single layer on a quarter-size rimmed baking sheet or in a 9-by-13-inch roasting pan, and roast along with broccoli until golden on the bottom, about 15 minutes. Flip sausages over so browned sides are on top. Step 4 When you flip the sausages, remove broccoli from oven and toss with sliced garlic. (Reserve grated garlic for later.) Drizzle broccoli with a little more oil. Return pan to oven and continue to roast broccoli and sausages until sausages are cooked through and broccoli is tender and browned, about 5 minutes longer. Step 5 Meanwhile, mix ricotta with grated garlic. Step 6 When broccoli is done, remove from oven and tent with foil to keep warm. Top sausage with tomato sauce and dollops of ricotta, then drizzle with olive oil and grind pepper generously over top. Sprinkle on mozzarella and Parmesan. Bake until cheese is melted and bubbly, and the garlic is opaque, 3 to 5 minutes. Or if you prefer you can broil the cheese to melt it, 1 to 3 minutes. Step 7 Serve sausages, sauce and cheeses with broccoli on the side. Pass crusty bread for sopping up the tomato sauce.

CHERRIES ROYALE - MAGIC PAN RECIPE

Cherries Royale - Magic Pan Recipe image

Number Of Ingredients 24

Filling:
BASIC CREPES
Makes 12 crepes
Flour 1 cup
Eggs, whole, fresh, room temperature 3
Milk 1 1/2 cup
Oil or melted butter 1/2 cup
Salt pinch
6 oz cream cheese, softened
1/2 cup sour cream
1/4 cup powdered sugar
1 Tb. lemon juice
1/8 tsp. almond extract
Topping:
1 - 1 lb can dark, sweet pitted cherries in heavy syrup, drained
(reserve syrup)
Water
1/4 cup sugar
2 Tbsp lemon juice
1 1/2 Tbsp cornstarch
1/4 cup brandy
1/4 tsp almond extract
12 crepes
1/2 cup sliced almonds, toasted

Steps:

  • Sift flour and salt together into mixing bowl. Mix thoroughly with eggs to form a thick paste. Gradually add milk, whisk until smooth-DO NOT OVER BEAT. Batter will have the consistency of thick cream. Cover bowl and refrigerate 2 hours or more (overnight.) Brush a hot crepe pan, 6½ to 7 inches in diameter, with butter or oil. Pour in 1½ to 2 Tbsp batter, tipping pan to coat it with a thin layer. When edge of crepe starts to brown, turn crepe and brown other side. Repeat process, adding oil or butter as needed. If you over beat the batter, it became foamy and if you cooked crepes with foamy batter you ended up with lots of tiny air holes in the crepes. Also, after the batter was strained it was to sit in the walk-in for several hours so that all the air would rise to the top and be eliminated. You're correct-it was strained to assure no lumps. Prepare Filling by beating cheese with sour cream. Mix in sugar, lemon juice and almond extract to blend thoroughly. Chill Prepare sauce by measuring cherry syrup and adding enough water to make 1 cup. Combine with sugar and lemon juice, bring to a simmer over medium heat. Mix cornstarch with ¼ cup water. Stir cornstarch mixture into simmering syrup mixture. Cook and stir about 5 minutes until smooth and slightly thickened. Stir in cherries, brandy, and almond extract; remove from heat and set aside. Spread about 2 tsp filling on half of each crepe. Fold each in half, then in half again to form a triangle. Place on lightly buttered baking sheet; heat 3-4 minutes in a 350º F oven just to heat through. (You can also microwave these for 22 seconds.) Place 2 filled crepes overlapping slightly on warmed individual serving plate. Spoon hot cherry mixture-if necessary, reheat slowly, stirring gently- over each serving. Sprinkle with almonds. Serve immediately.
