CHEF JOHN'S BONELESS WHOLE TURKEY

Chef John's Boneless Whole Turkey image

The idea of removing pesky bones before your bird makes its grand Thanksgiving entrance is worth considering. Not only do you get an impressive looking roast to wow the table, but carving is significantly easier. If you're worried about losing flavor, don't. This tastes virtually identical. Stuff with your favorite stuffing.

Time 2h10m

Yield 20

Number Of Ingredients 4

1 (15 pound) whole turkey, boned
kosher salt and ground black pepper to taste
3 cups prepared stuffing, or more to taste
2 tablespoons heavy whipping cream, or more to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place turkey, skin-side down, on a work surface and arrange meat with your hands into a flat, even surface. Season with salt and black pepper. Press stuffing all over the surface of the meat.
  • Fold long edges of turkey around stuffing into the center of the bird and carefully turn turkey seam-side down. Tie the leg-end of the turkey with kitchen twine to cinch the turkey together. Repeat ties at 2-inch intervals along the length of the turkey, ending with a single tie along the length of the turkey. Season with salt and place in a large roasting pan.
  • Roast turkey in the preheated oven for 15 minutes. Reduce heat to 325 degrees F (165 degrees C) and roast until an instant-read thermometer inserted into the thickest part of the turkey reads 155 degrees F (68 degrees C), about 1 1/2 hours. Transfer turkey to a platter; remove and discard twine. Let rest until internal temperature increases to 165 degrees F (74 degrees C), about 20 minutes.
  • Place roasting pan over medium-high heat and stir cream into pan drippings. Cook and stir until sauce thickens and reduces, 3 to 7 minutes. Pour through a fine mesh sieve into a gravy boat or bowl. Slice turkey crosswise and top slices with gravy.

Time 4h15m

Yield 8

Number Of Ingredients 13

1 large onion, chopped
2 carrots, chopped
2 ribs celery, chopped
2 teaspoons vegetable oil
2 large turkey wings
2 tablespoons cold water
10 cups cold water
4 sprigs fresh thyme
2 cloves garlic
3 tablespoons butter
½ cup all-purpose flour
salt and ground black pepper to taste
1 pinch cayenne pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine onion, carrots, celery, and vegetable oil in a large roasting pan and toss to coat. Place turkey wings on top of vegetables
  • Place roasting pan in the preheated oven and cook until the turkey wings are browned and vegetables are caramelized and softened, 45 to 60 minutes.
  • Transfer turkey wings and vegetables to a large stockpot. Place the roasting pan over a stovetop burner on medium heat. Pour 2 tablespoons cold water into the pan and bring to a boil, scraping up any browned bits. Transfer mixture to the stockpot and add 10 cups cold water, thyme, and garlic.
  • Bring turkey wing mixture to a boil. Reduce heat to low and simmer, uncovered, until meat falls off the bone, about 3 hours. Skim off turkey fat throughout the process and set aside 2 tablespoons.
  • Strain turkey stock and reserve 6 cups of stock; discard all the solids.
  • Heat butter and 2 tablespoons reserved turkey fat in a large saucepan over medium heat. Sprinkle in flour and cook, whisking continuously, until it begins to smell like cooked pie crust, 2 to 3 minutes. Slowly pour in turkey stock, whisking continuously. Increase heat to high and simmer until thick and warmed through, about 5 minutes. Season with salt, black pepper, and cayenne pepper to taste.

  • Roast Turkey and Gravy. View Recipe. Chef John shows you a terrific way to loosen the turkey's skin so you can slip herbed butter beneath it. Buttering up the bird like this, keeps the meat wonderfully moist and flavorful.
  • Mascarpone Mashed Potatoes. View Recipe. Creamy mascarpone cheese creates wonderful texture and a buttery, golden-brown crust. Make these mashers in advance; spoon them into a casserole, and then simply bake until the tops are beautifully golden brown.
  • Pecan and Apricot Sourdough Bread Stuffing. View Recipe. The pilgrims avoided soggy stuffing by not actually having stuffing on the Thanksgiving menu. But that's not really an option for us.
  • French Onion Green Bean Casserole. View Recipe. This is not your mother's green bean casserole. Although it could be your grandma's. Chef John reaches into the past for inspiration, giving traditional green bean casserole a delicious update.
  • Pumpkin-Shaped Dinner Rolls. View Recipe. Chef John says, "This very Instagram-friendly roll is the perfect thing to bring to that holiday gathering, and can be made using your favorite dinner roll recipe.
  • Tangerine Cherry Cranberry Sauce. View Recipe. Does anything say "I care" like cranberry sauce made from scratch? Probably. Because homemade cranberry sauce is just so incredibly easy to make.
  • Perfect Mashed Potatoes. View Recipe. Chef John's mashed potatoes do not shy away from the butter. And that's pretty much the secret to these amazing mashers.
  • Sweet Potato Casserole. View Recipe. Chef John's slightly less sweet take on Sweet Potato Casserole features a touch of maple syrup instead of brown sugar and pistachios instead of mini-marshmallows.
  • Fast Upside-Down Turkey. View Recipe. Here I've tested out not one, but two new things – cooking a turkey at a very high heat, as well as cooking it upside-down, which I've heard for decades is the way to go if you want moist, juicy meat," Chef John says. "
  • Old-Fashioned Cracker Dressing. View Recipe. Here's a very simple variation on a classic stuffing recipe, only crushed saltine crackers stand in for bread crumbs.
