CHEF FLOWER'S POTATO SALAD - KIBRISLI PATATES SALATA
This is my mother's recipe, she always makes it if we had a barbeque. All my relatives have a different version of Patates Salata, some add lemon juice instead of vinegar. Others relatives add beetroot/beet or fresh parsley or fresh mint or onions. This is the way I like it, quick, simple and mums recipe.

Steps:
- Cut potatoes into 1 inch/2.5 cms cubes and boil for 20-15 minutes, or until tender. Drain potatoes then place in serving bowl.
- Add olive oil, white vinegar, dried mint, salt and black pepper, to the potatoes, mix well.
- Allow potatoes to cool down, then you could serve or you can cover and refrigerate up to an hour before serving.
- Enjoy.

- Whisk oil into peanut butter until smooth.

- For bread they suggested using a firm bread!
- soak bread in water and squeezed dry.
- Using a good processor, blend onions, garlic and parsley until evenly chopped.
- Add tarama and bread until evenly mixed. Continue processing and slowly add olive oil and lemon juice.
- Transfer to serving dish and chill at least 2 hours.
- This spread is delicious when accompanied by toast points and celery.
- Tarama is mullet roe from greece. It is available in specialty food markets.

- Boil whole potatoes until tender. Drain and allow to cool.
- When potatoes are just cool enough to handle, but still warm, peel and cut into large dice.
- Chop the parsley, mint, and scallions. (A food processor works great here!).
- Finely mince, or crush to a paste, the cloves of garlic.
- Slowly whisk the olive oil into the lemon juice. Add the garlic, parsley, mint and scallions.
- Pour the dressing over the potatoes and add salt and pepper to taste. (Combining them while the potatoes are still warm will make the tastiest salad.).
- Chill or serve at room temperature.

A Turkish girl, we befriended at the University of Alabama, made this salad along with several other dishes when her mom and aunt came from Istanbul for her graduation. I like the sour salad. - Cut the cabbage in half and discard the outer tough leaves and the inner core.
- Cut each half into quarters and wash under cold water.
- Place each quarter on its side and slice very thin slices with a sharp knife.

On the menu in every Greek restaurant and many non-Greek restaurants as well, this salad has many individual variations, but here are the basics to work from. This is the traditional version that does not include lettuce. This is the way they made it in the Greek restaurant I worked in. They claimed this is the most traditional. All I know is that it is fresh and delicious!

- Wash and dry the tomatoes, cucumber, and green pepper. Clean off the outer skin from the onion, wash, and dry.
- Cut the tomatoes into bite-sized irregularly shaped chunks, removing the core. Salt lightly.
- Slice the cucumber into 1/4-inch slices, cutting slices in half (whether or not you peel the cucumber is a personal choice). Salt lightly. Slice the pepper into rings, removing the stem and seeds. Salt lightly. Slice the onion into thin rings.
- Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Sprinkle with oregano, pour olive oil over the salad, and toss. Just before serving, place the feta on top of the salad, either as a slice or crumbled (as in photo), and toss in some olives. Sprinkle the cheese with oregano (and pepper if desired), mix the oil and water and drizzle over the top, and serve, garnished with hot peppers.
- *Anchovies: if you like this salty fish, add a couple to the salad before tossing.
- For Vegetarian do NOT use the anchovies.
- Capers: toss in a few if you like them.

CHEF FLOWER'S CRACKED WHEAT PILAF - KIBRISLI BULGUR PILAVI
This is one of my mother's recipe, she was born in Cyprus and this recipe has been passed on to her by her mother. It's a quick side dish. My mother has a few recipes using bulgur, but she prepared this one regularly when I was living at home. You could serve it with a scope of plain yoghurt.

- Heat the oil in a small saucepan with lid. Add onion, mix until the onions are transparent. Reduce heat to low and add vermicelli, mix, simmer for two minutes or until the vermicelli looks golden (but not burnt).
- Add bulgur into the saucepan, mix then add the chicken/vegetable stock, tomatoes and season. (Do not add salt if your stock is high in salt), Mix well.
- Cover the pan and simmer very gently heat for four minutes, until the mixture is moist but not watery. If is too dry add more chicken/vegetable stock. Turn off heat.
- Cover with tea towel, place the lid tightly on top and let it stand for 10 minutes before serving.
