Number Of Ingredients 10

1 cup crushed saltines (about 30 crackers)
1 envelope taco seasoning
1/2 cup ketchup
1 can (4 ounces) mushroom stems and pieces, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small onion, chopped
2 eggs, lightly beaten
2 tablespoons Worcestershire sauce
2 pounds lean ground beef (90% lean)
Salsa, sour cream, shredded cheddar cheese and additional olives, optional

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Press into a greased 9x5-in. loaf pan. , Bake, uncovered, at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°. Serve with salsa, sour cream, cheese and olives if desired.

My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
  • Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
  • Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
  • Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

1 large egg, beaten
1/2 cup sour cream
1/3 cup salsa
2 to 4 tablespoons taco seasoning
1 cup crushed tortilla chips
1/2 cup shredded cheddar cheese
2 pounds lean ground beef (90% lean)
Optional toppings: sour cream, salsa, shredded cheddar cheese, shredded lettuce, sliced ripe olives

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Pat into a 3-qt. slow cooker. , Cover and cook on low for 8 hours or until no pink remains and a thermometer reads 160°. Top with sour cream, salsa, cheese, lettuce and olives if desired.

Number Of Ingredients 7

1 lb lean ground beef
1/3 to 1/2 c onion, chopped fine
13 to 15 soda crackers, crushed
1 c chuncky salsa, your favorite
1 1/2 c cheese, shredded (i used cheddar and pepper jack) a mexican cheese blend would be a good choice as well
1 to 2 Tbsp taco seasoning mix
salt and pepper to taste

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Combine ground beef, onion, crackers, taco seasoning, salt & pepper with 1 cup cheese and 1/2 cup salsa. Mix it up as you would a meatloaf.
  • 3. Divide meat mixture into 12 equal pieces. Press in to 12 muffin cups that have been sprayed with a cooking oil such as PAM. Make an intention on each piece with the back of a spoon.
  • 4. Bake 25 to 30 minutes or until meatloaves are done. Top with remaining salsa and cheese; bake an additonal 5 minutes or until cheese is melted.
  • 5. Serve with spanish rice, pinto beans and a slice of cornbread.

1 jar(s) (16 oz) pace picante sauce
1 c crushed tortilla chips
1/2 c cheddar cheese, shredded

Steps:

  • 1. preheat oven to 350.
  • 2. thoroughly mix the beef, 2/3 cup picante sauce and tortilla chips in a large bowl. place the beef mixture into a 3 quart shallow baking pan and shape into an 8x4 inch loaf.
  • 3. bake for 1 hour or until meatloaf is cooked through.
  • 4. sprinkle the meat loaf with the cheese. bake for 5 minutes or until cheese is melted.
  • 5. heat the remaining picante sauce in a 1 quart saucepan over medium heat to a boil. serve the sauce with the meat loaf.

1 pkg. (4.5 oz.) TACO BELL® Crunchy Taco Shells, warmed
1 cup shredded lettuce
1 cup chopped tomatoes
1 cup TACO BELL® Thick & Chunky Salsa

Steps:

  • Brown meat in large skillet; drain. Stir in water and seasoning mix. Add Mexican VELVEETA; cook on low heat until VELVEETA is completely melted, stirring frequently.
  • Spoon evenly into taco shells.
  • Top with lettuce, tomatoes and salsa.

2 tablespoon(s) garlic powder
1 package(s) taco seasoning mix
16 ounce(s) picante sauce
2 cup(s) crushed tortilla
1 1/4 cup(s) cheddar cheese, shredded
- salt and pepper

Steps:

  • In a large bowl, Thoroughly mix together the ground beef, garlic powder, taco seasoning mix, 2/3 cup of picante sauce, crushed tortillas, and 3/4 cup of cheese. Place mixture into a loaf pan.
  • Bake at 350 degrees for 1 hour, or until thoroughly done.
  • Sprinkle the meatloaf with remaining cheese and bake another 5 minutes, or until cheese is melted. In a 1 qt. sauce pan, over med. heat bring remaining picante sauce to a boil. Serve over meatloaf.

2 cups crushed tortilla chips
1 cup shredded cheddar cheese
1 cup salsa
2 large eggs, lightly beaten

2 tablespoons Louisiana-style hot sauce

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker. Coat strips with cooking spray. , In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Shape into a round loaf. Place meat loaf in the center of the strips. Cover and cook on low for 3-4 hours or until no pink remains and a thermometer reads 160°. , Combine the ketchup, brown sugar and hot sauce; pour over meat loaf during the last hour of cooking. Let stand for 10 minutes. Using foil strips as handles, remove the meat loaf to a platter.
