CREAMY CHEESY SPINACH DIP



Creamy Cheesy Spinach Dip image

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese
½ cup shredded mozzarella cheese
¼ cup shredded Cheddar cheese
2 dashes Worcestershire sauce
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.

8 ounces hot pork sausage
1/2 cup onion, chopped
1/2 cup sweet red pepper, chopped
2 garlic cloves, minced
2 (8 ounce) packages reduced-fat cream cheese, softened
1 1/2 cups parmesan cheese, finely shredded
1/4 cup milk
1/4 cup mayonnaise
1/4 cup light sour cream
2 cups fresh spinach leaves, chopped
1/3 cup mild banana pepper ring, drained and chopped
blue corn tortilla chips or sliced and toasted French bread

Steps:

  • In a large skillet cook sausage, onion, sweet pepper and garlic until sausage is brown, stirring often. Drain off fat. Set aside to cool.
  • In large bowl, stir together cream cheese, Parmesan cheese, milk, mayonnaise and sour cream. Add sausage mixture, spinach and banana peppers; gently stir to combine. Spread mixture into a 9" fluted quiche dish or deep dish pie plate.
  • Bake in a 350 degree oven about 30 minutes or until bubbly. Serve with crostini, bagel chips, blue corn tortilla chips, or sliced and toasted French bread.
  • To make ahead: prepare as directed through step 2. Cover and chill for up to 24 hours. Uncover and bake for about 40 minutes or until heated through.

½ medium yellow onion, minced
¼ teaspoon kosher salt
12 oz O Organics® Cream Cheese
¼ cup O Organics® Grade A Half-and-Half
6 oz O Organics® Mexican Shredded Cheese
2 oz O Organics® Shredded Cheddar Cheese
1 cup O Organics® tomato, chopped, divided
¼ cup green onion, chopped
O Organics® Yellow Corn Tortilla Chip, for serving

Steps:

  • Cut 2 thin slices from a jalapeño and set aside, then mince the rest.
  • Heat a medium cast-iron skillet over medium-high heat. Add the Signature Select® Pork Sausage Roll Italian Style and cook, breaking up into small pieces, until browned, 5-6 minutes. Drain any excess grease.
  • Reduce the heat to medium and add the onion, minced jalapeños, salt, and cream cheese. Stir until the cream cheese is melted, then add the half-and-half, O Organics® Mexican Shredded Cheese, and O Organics® Shredded Cheddar Cheese, and continue to cook for 4-6 minutes, or until creamy and melted together. Then add ¾ cup chopped tomatoes and cook for another 1-2 minutes, until heated through.
  • Top with the remaining ¼ cup (50 g) chopped tomatoes, the green onions, and sliced jalapeño and serve with O Organics® Yellow Corn Tortilla Chips for dipping.

1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container sour cream
1 (10 ounce) can extra hot Ro-Tel tomatoes, drained
1 -1 1/2 cup shredded cheddar cheese
1/2 teaspoon fresh minced garlic
4 -5 scallions, chopped

Steps:

  • In a large skillet over medium heat on stovetop, brown sausage; drain.
  • Add spinach, cream cheese, and sour cream.
  • Cook over medium heat until bubbly, stirring occasionally to keep from burning on bottom.
  • Add tomatoes and cheddar cheese and continue to cook, keeping the temperature at medium heat.
  • When cheese is melted, add garlic.
  • Add scallions.
  • Turn heat down to low, to keep warm, until ready to serve.
  • Serve with chips.
