- Cook pasta according to package directions. In a jar with a tight-fitting lid, combine the oil, Parmesan cheese, vinegar, oregano, salt, garlic powder and pepper; shake well. , Drain pasta; rinse in cold water. In a large bowl, combine the remaining ingredients. Add pasta. Drizzle with dressing; toss to coat. Cover and refrigerate for at least 1 hour before serving.

- Cook pasta as directed on package, omitting salt. Rinse with cold water; drain well. Place in large bowl.
- Add all remaining ingredients except lettuce; mix lightly.
- Refrigerate 1 hour.
- Place lettuce in 1-1/2-qt. bowl just before serving; top with pasta mixture.

PEPPERONI PIZZA PASTA
I have MTV's "Teen Mom" to thank for introducing me to the idea of pizza-inspired pasta. As simple as the concept may seem, why had this culinary creation never crossed my mind? My version here is a spin on baked rigatoni, and it's loaded with all of my favorite pizza toppings, including pepperoni, green bell peppers and Italian sausage, so this is not for the faint of heart (or meat). But the real beauty here is that exactly like a pizza, this pasta can be customized to your preferences with any pizza topping imaginable. If you'd put it on a pizza, you can put it in pizza pasta!

Steps:
- Preheat the oven to 350 degrees F.
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package directions. Drain the pasta and set aside.
- While the pasta cooks, add the olive oil to a large heavy-bottomed pot set over medium-low heat. Once the oil is warm, add the onions, bell peppers and a pinch each of salt and pepper and cook, stirring constantly, until the onions are translucent, about 8 minutes. Add the sausage and cook, breaking apart the sausage with a spatula, until browned and cooked throughout, about 10 minutes.
- Reduce the heat to low, add the tomato sauce then add the cooked pasta and 1/2 cup of the pepperoni to the pot; stir to combine.
- Transfer half of the pasta to a 9-by-13-inch baking dish, top with half of the mozzarella, then top with the remaining pasta, followed by the remaining mozzarella, then the remaining 1/4 cup pepperoni.
- Bake the pasta until the cheese is melted, about 15 minutes. Remove the baked pasta from the oven and serve.
PIZZA PASTA SALAD

- In a large bowl, combine your pasta, Parmesan cheese, Mozzarella cheese, sharp cheddar cheese, cherry tomatoes, pepperoni slices, sliced olives, green pepper, and pizza seasoning.
- In a smaller separate bowl, make your dressing by combining your olive oil, red wine vinegar, oregano, garlic powder, and salt. Mix until well combined.
- Pour the dressing mixture over the pasta salad, and let refrigerate for about an hour.
- Serve cold.

- Gently toss all the salad ingredients together in a large bowl.
- Set aside.
- For the dressing, combine the mayonnaise and milk.
- Then add the sugar and vinegar.
- Stir well, and season with salt and pepper to taste.
- Pour the dressing over the salad, and toss gently to combine.
- Refrigerate at least 2 hours Overnight is even better.

- Preheat the oven to 350°F. Cook the pasta according to package directions, to a slightly chewy "al dente" firmness. (Take care not to overcook the pasta on the stove top, as it will cook an additional amount of time in the oven.) Drain the pasta.
- While the pasta is cooking, cook and crumble the sausage in a very large oven-proof skillet over medium high heat. Transfer the cooked sausage to a medium size bowl and return the skillet to the stove. Drizzle the oil into the skillet along with any remaining grease from the sausage. Add the peppers, onions, and garlic to the hot skillet.
- Cook the vegetables, stirring frequently, over medium high heat. When the peppers are almost tender, about 3-4 minutes, add the mushrooms and continue cooking for an additional 3 minutes, until the mushrooms have browned and softened. Transfer the cooked vegetables to the bowl with a sausage.
- Turn off the heat under the skillet and add the sauce to the skillet, along with the Italian seasoning, red pepper flakes, salt, and pepper. Stir to combine and remove about 1 1/2 cups of the sauce, setting it aside for the moment.
