1 medium onion, halved and thinly sliced
1 red bell pepper, thinly sliced
8 ounces white mushrooms, sliced
1 cup grape tomatoes, halved
1 lb refrigerated pizza dough, at room temperature (if frozen, thawed)
3/4 cup fat-free marinara sauce
1 1/2 cups reduced-fat mozzarella cheese, shredded
2 tablespoons parmesan cheese, grated
36 slices turkey pepperoni, halved

Steps:

  • Adjust the oven racks to divide the oven in thirds and preheat the oven to 450 degrees F. Spray a 10.5 x 15.5 inch jelly-roll pan with nonstick spray.
  • Spray a large skillet with nonstick spray and set over medium-high heat. Add the onion, pepper and mushrooms. Cook, stirring occasionally, until the vegetables are tender and the liquid evaporates, 8-10 minutes. Stir in the tomatoes and cook 1 minute. Set aside.
  • With floured hands, press the dough over the bottom of the prepared pan. If the dough shrinks back, let is rest a few minutes before pressing again. Spread the marinara sauce evenly over the dough. Sprinkle with 1/2 cup of the mozzarella cheese and 1 tablespoon parmesan cheese. Top evenly with the onion mixture and the pepperoni.
  • Bake on the lowest oven rack until the crust is browned on the bottom, 12-15 minutes. Sprinkle with the remaining 1 cup mozzarella and 1 tablespoons parmesan cheese. Bake until the cheese melts, 4-5 minutes longer. Cut into 24 squares and serve at once.

I made this using Turkey Italian sausage and Turkey Pepperoni in hopes of cutting down on the fat. We could not tell the difference in taste between the turkey products and beef or pork. And it is very good and very easy. Serve with Italian bread and green salad. Enjoy

8 ounces uncooked spiral shaped pasta (about 3 cups)
1 lb Italian sausage (casings removed)
4 cups spaghetti sauce
1 (4 ounce) can mushrooms, drained
1 cup grated parmesan cheese
1 (6 ounce) package sliced pepperoni
8 ounces shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • On the stovetop, bring a large pot of water to boil. Cook the pasta according to package directions and drain. Return the pasta to the pot.
  • Meanwhile, in a saute pan over medium heat, cook the sausage; drain. Add the sausage, spaghetti sauce and mushrooms to the pasta and stir to combine. Stir in the Parmesan cheese and half the pepperoni slices.
  • Spread pasta mixture into a lightly greased 9"x13" pan. Top with the mozzarella cheese. Arrange remaining half of pepperoni slices over top.
  • Bake for 20 minutes, until cheese is bubbly.

1 can refrigerated pizza dough
½ cup pizza sauce
3 tablespoons Frank's RedHot®, divided
1 cup shredded mozzarella cheese
¼ cup shredded parmesan cheese
1 cup pepperoni
2 tablespoons clover honey
¼ cup fresh basil, sliced

Steps:

  • Preheat the oven to 425°F (220°C). Grease a baking sheet with nonstick spray.
  • Roll out the pizza dough and cut in half lengthwise (save the other half for another use). Place the dough on the prepared baking sheet and use your fingers to stretch and shape it into an oval.
  • In a small bowl, mix together the pizza sauce and 2 tablespoons Frank's RedHot®.
  • Spread the Frank's RedHot® pizza sauce over the dough, then top with the mozzarella and Parmesan cheeses. Arrange the pepperoni in a single layer over the cheese.
  • Bake the flatbread for 10-15 minutes, or until the crust is golden brown and the cheese is melted.

1/2 cup warm water
4 egg whites
1 teaspoon salt
1 teaspoon granulated sugar
1 teaspoon active dry yeast
2 1/2 cups all-purpose flour (approx)
1/3 cup grated romano cheese or 1/3 cup parmesan cheese
1 teaspoon dried thyme
1 tablespoon poppy seed
1 tablespoon sesame seeds

Steps:

  • In bowl, combine water, egg whites, salt, sugar and yeast. Using wooden spoon, stir in 2 cups (500 mL) of the flour, cheese and thyme; beat until smooth. Add enough of the remaining flour to form soft dough. Turn out onto lightly floured surface; knead several times to form ball. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise for 45 minutes.
  • Punch down dough and turn out onto lightly floured surface; divide into 4 portions. Roll out each portion into 1/8-inch (3 mm) thick circle or oval. Place on lightly greased baking sheets; prick all over with fork. Brush lightly with water; sprinkle with poppy and sesame seeds.

1 garlic clove, peeled

Steps:

  • In a small bowl, mix together the quartered tomatoes, cheeses, basil and dressing.
  • Lightly toast the 2 slices of bread, rub the toasted bread with the peeled garlic.
