- Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

My girlfriends mom made this for me once and I've since mastered the recipe. I use Tony Chachere's Creole Seasoning for these and any hot dogs work fine. Yukon Gold or Red Skin Potatoes taste great with this recipe.

Steps:
- Rinse potatoes and microwave for 4 minutes.
- Cube potatoes and place into skillet with olive oil.
- Sprinkle desired amount of Creole seasoning over potatoes.
- Cook potatoes until light brown.
- Add diced hotdogs and onions to skillet.
- Remove from stove when potatoes are at desired crispiness (10-15 minutes total cook time usually).

CHEESY POTATOES AND HOT DOGS
Steps:
- Wash potatoes and slice thin with skins on. (like scalloped potatoes). Cut hot dogs in 1/4 to 1/2 inch pieces. Slice onion thin.
- In a casserole dish, layer 1/2 of the potatoes, 1/2 of the hot dogs and onion, then layer the other half of potatoes and hot dogs. Mix cheese soup with milk and salt/pepper. Pour over top of potatoes and hot dogs. Drain can of corn and pour on top of casserole (optional).
- Cover and cook at 375°F for 1 hour or until potatoes cooked.

- Cut the cheese into sticks or cubes and fill the hotdogs with it.

Steps:
- Heat oven to 350°F.
- In large bowl, combine hot dogs, soup,corn, onion and mix well.
- Spoon into ungreased 2 quart casserole and set aside.
- In medium sauce pan, bring water, margarine, onion powder and garlic powder to boil.
- Remove from heat and stir in potato flakes and milk
- Add egg and blend well.
- Spoon on top of casserole and spread evenly.
- Bake for 35-40 minutes or until thoroughly heated.
- Sprinkle with cheese and paprika and bake an additional 3 minutes or until cheese is melted.
- Let stand 5 minutes before serving.
