Crock Pot Cheesy Hash Brown Potatoes recipe is just the thing when serving a family breakfast, brunch or Brinner.

Ingredients

2 cans Campbell's Cheddar Cheese Soup (10 1/2 oz cans)
1 1/2 cups milk
1/2 teaspoon Lawrey's Seasoned Salt
1/2 teaspoon garlic powder
1/2 to 1 teaspoon ground black pepper
2 cups shredded cheese (divided (I used Mexican Blend))
2 lb bag frozen Hash Brown Potatoes
Smoked Paprika (optional)

Steps:

In a large mixing bowl mix the cheddar cheese soup, milk, seasoned salt, garlic powder, and black pepper. Whisk until combined.
Add 1 cup of shredded cheese to the bowl and fold to mix in.
Pour the entire bag of Potato's O'Brian into the bottom of a 6 quart or bigger crock pot. I used the Crock Pot Casserole Slow Cooker. See cooking time notes. Break the Potato's O'Brian up so the potatoes are in a single layer.
Pour the cheese soup mixture over the potatoes and spread evenly over the top.
Sprinkle some Smoked Paprika over the top. (Optional)
Cover and cook on low for 4 to 5 hours. Or high for about 3 hours or until the potatoes are cooked through and the cheese sauce is bubbling hot. 20 minutes before serving sprinkle the remaining one cup of shredded cheese over the top, recover and allow cheese to melt.
Serve for breakfast or Brinner (breakfast for dinner) with scrambled eggs and bacon.

1 (2 pound) package frozen Southern-style hash brown potatoes, thawed
4 cups shredded Cheddar cheese
2 (10.75 ounce) cans condensed cream of chicken soup
1 (8 ounce) container sour cream
1 cup chopped yellow onion
1 cup milk
1 pinch seasoned salt, or to taste
1 teaspoon minced garlic
1 cup crushed cheese-flavored crackers (such as Cheez-It®), divided

Steps:

Mix hash brown potatoes, Cheddar cheese, cream of chicken soup, sour cream, onion, milk, seasoned salt, garlic, and 1/2 cup cheese-flavored crackers in a slow cooker.
Cook on Low, stirring occasionally until cooked through, about 2 hours. Stir and top with remaining 1/2 cup cheese-flavored crackers.

When you're cooking for a crowd, break out the slow cooker for an easy, delicious side dish. These crockpot cheesy potatoes are the stuff of legend at potlucks everywhere. Don't count on having any leftovers the next day, but if you do, rewarm them in the microwave and serve them with scrambled eggs for a hearty next-day breakfast.

1 tablespoon butter
1 small onion, diced
3 cloves garlic, finely chopped
2 bags (20 oz each) refrigerated shredded hash brown potatoes
3 cups shredded Cheddar cheese (12 oz)
2 cups sour cream
1 can (10 1/2 oz) condensed cream of mushroom soup
1/4 cup water
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

Spray 5-quart slow cooker with cooking spray.
In 8-inch skillet, melt butter over medium heat. Cook onion and garlic in butter, stirring frequently, 2 to 3 minutes or until translucent and soft.
In large bowl, stir onion mixture and remaining ingredients until well combined.
Place in slow cooker. Cover and cook on Low heat setting 3 hours; stir. Cover and cook on Low heat setting 2 to 3 hours longer or until center of casserole reaches at least 165°F and edges are bubbly. Stir.

Since it's so hot, I've been searching for crock pot recipes for things I normally cook in the oven. This recipe is from the Slow Cooker Fix It and Forget It Cookbook and is credited to Clarice Williams of Fairbank, IA.

2 (10 3/4 ounce) cans cheddar cheese soup
1 1/3 cups buttermilk
2 tablespoons butter, melted
1/2 teaspoon seasoning salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 (2 lb) package frozen cubed hash brown potatoes
1/4 cup grated parmesan cheese
1 teaspoon paprika

Steps:

Combine soup, buttermilk, butter, seasoned salt, garlic powder, and pepper in slow cooker. Mix well.
Stir in hash browns. Sprinkle with parmesan cheese and paprika.
Cover. Cook on Low 4 to 4 1/2 hours, or until potatoes are tender.

1 (30 ounce) package frozen shredded hash brown potatoes
½ cup butter, melted
2 (10.75 ounce) cans condensed cream of chicken soup
¾ cup sour cream
2 cups shredded Cheddar cheese

Steps:

Place frozen hash browns in a slow cooker. Pour melted butter over hash browns. Pour in cream of chicken soup and sour cream, stirring between each addition. Add Cheddar cheese. Cook on Low for 4 to 5 hours. Stir mixture after 2 hours of cooking.

Fluffier than the shredded cheesy potatoes. For added zing, I like to use the "O'Brien" variety of frozen hash browns that comes with bits of red pepper and onion in it. For super-fast prep, use dried minced onion and the prepackaged shredded cheese.
