CROCK POT POTATO AU GRATIN

Steps:
- Wash OR peel your potatoes. Slice to 1/8" thick, set aside. (I like to leave the peel on my potatoes)
- Generously coat slow cooker with non-stick spray.
- In a medium saucepan melt the butter over medium-low heat. Add flour and whisk to combine. Whisk in the milk, garlic powder, pepper, and a generous amount of salt. (I use at least a teaspoon.) Cook stirring frequently just until it starts to thicken. Remove from heat and stir in cheeses.
- Place 1/3 of the sliced potatoes in the bottom of the slow cooker. Sprinkle with 1/3 of the chopped onion. Pour 1/3 of the cheese sauce over the potatoes and onions. Repeat this 2 more times. Cover and cook on high for 3-4 hours or low for 4-6 hours or until potatoes are tender. Let sit 20 minutes before serving.

Steps:
- Butter a 3.5 quart casserole slow cooker OR a 6 quart or larger slow cooker with the butter and set aside.
- Layer half of the sliced potatoes in the bottom of the slow cooker.
- Drizzle potatoes with half of the cream, rosemary and garlic and sprinkle with a bit of salt and pepper. Add half the cheese on top.
- Create another layer of potatoes, drizzle with cream, rosemary, garlic & salt and pepper and top with cheese.
- Cover slow cooker and cook on LOW for 5 to 6 hours or until the potatoes are "fork tender" and the cheese is melted and everything is bubbly.

Steps:
- Heat oven to 375°F.
- Scrub potatoes but do not peel. Cut into 1/8-inch slices to measure about 4 cups.
- Melt butter in 2-quart saucepan over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
- Stir in milk and 1 1/2 cups of the cheese. Heat to boiling, stirring constantly. Boil and stir 1 minute.
- Spread potatoes in ungreased 1 1/2-quart casserole. Pour cheese sauce over potatoes.
- Bake uncovered 1 hour. Mix remaining cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 minutes longer or until top is brown and bubbly.

This recipe is so thick, creamy and umm..umm good! It's a very filling dish that goes well with baked ham around the holidays. A staple in our family on Thanksgiving and Christmas. I usually double the recipe to make sure that I have left-overs to enjoy the next day!

- Spray the bottom of crock pot with non-stick spray. I use Pam when I have it on hand or I use one of the new crock pot cooking liners for quick cleanup.
- Spread the potatoes on the bottom of crock pot.
- Simmer all remaining ingredients just until cheese is melted and well incorporated. Do not bring to a boil.
- Pour cheese mixture over top of potatoes.
- Cover and cook on low setting for 7-9 hours or on high setting for 3-4 hours. Cooking time may vary depending on individual crock pots.

- Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Place potatoes (from au gratin potato boxes), and Cheddar, Monterey Jack and Parmesan cheeses in baking dish.

- Place potatoes over bottom of 5-quart slow cooker.
- Toss gently with diced ham and egg slices.
- Melt butter or margarine in large skillet over medium heat; add onion and celery and saute until tender, about 5 minutes, stirring constantly.
- Sprinkle flour, salt and pepper on vegetables; slowly blend in milk.
- bring to boiling point, stirring constantly until mixture thickens.
- Stir in 1 cup of the grated cheese to melt; stir in parsley.

- Slice into crock pot after peeling (I do not usually peel mine). Mix ingredients in bowl. Cover potatoes with mixture.

- Rub the inside of a 5-quart crockpot with olive oil to coat. Mix the salt and pepper in a small ramekin. Set the potato slices inside the crockpot and sprinkle with a large pinch of the salt and pepper mix. Repeat with the rest of the potato slices, seasoning between each layer.
- Melt the butter in a small pot over medium heat. Add the flour and stir for 2 minutes until very bubbly. Add the garlic and onion powder. Stir and cook an additional 2 minutes until the roux turns golden in color. Add the milk and stir well. Add the sour cream and cheese and stir to form a thick sauce.
- After 3 1/2 hours, the sauce will be hot and bubbly and the potatoes will be tender all the way through, but I recommend an extra 30 minutes for a more scoop-able consistency. Serve with a sprinkle of fresh herbs. Taste and adjust salt as needed.
