GREEN CHILE, CHICKEN, AND CORN SOUP



Green Chile, Chicken, and Corn Soup image

This soup has some of my favorite things in it! I really enjoy it in the fall, just as the weather is turning cold. I can usually still find fresh corn at that time, and it's so great to have a warm soup on a crisp, chilly night! This is from "Southwest Cooks!", a collection of Native American cuisine.

Number Of Ingredients 12

1 medium onion
2 whole cloves
5 cups beef broth
3 cups chicken broth
3 chicken breast halves, skinned
2 large baking potatoes, peeled and diced
2 anaheim chilies
2 3/4 cups fresh cut corn, about 4 ears
1 avocado, sliced
2 medium tomatoes, chopped
salt and pepper
sour cream, fresh cilantro sprigs

Steps:

  • Peel the onion and stud with the cloves. Combine the onion, broths, chicken and potato in a Dutch oven; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until the potato is tender.
  • Remove the onion. Remove the chicken, reserving the broth in the pan. Let the chicken cool, bone it, and chop the meat. Return the chicken to the pan; set aside.
  • Cut chiles in half lengthwis; remove seeds and membranes. Place chiles, skin side up, on an ungreased baking sheet; flatten with the palm of your hand. Broil 3 inches from the heat (with electric oven door partially opened) 6 minutes or until charred. Place chiles in ice water; peel and discard skins. Coarsely chop the chiles, and add to the reserved broth mixture.
  • Stir in corn; bring to a boil. Reduce heat and simmer, uncovered, 4 minutes or until the corn is tender. Taste your soup, and add salt and pepper as needed (depends on the broth you originally used).
  • Ladle soup into individual soup bowls. Top each serving with avocado slices and chopped tomato. Garnish, if desired with sour cream and fresh cilantro.

This crock-pot recipe is adapted from a stove-top recipe. We wanted a recipe using dried roasted corn with cheese and chicken. It does have a kick, hope you enjoy. It was excellent served with a warm loaf of Jalapeno Cheese Bread.

3 cups chicken stock, well flavored
2 tablespoons diced jalapenos
2 medium tomatoes, diced
1 medium onion, diced
2 cups chicken breasts, cooked and cubed
2 -3 whole green chilies, seeds removed and diced or 1 (4 ounce) can diced green chilies
2 tablespoons chili powder
1/4 cup flour
2 tablespoons margarine, melted
1 cup skim milk
6 ounces reduced-fat cheese, shredded
1/4 cup reduced-fat sour cream
1/2 cup dried corn kernels, roasted
fresh cilantro

Steps:

  • 1 In medium pot, bring seasoned chicken stock and chicken to a boil -- turn down and let simmer covered for about 15 minute Remove from heat.
  • 2 In crock-pot. Add onions, peppers, tomatoes, spices, and dry roasted corn. Add cubed chicken and broth. Cook on high setting for about 3 1/2 - 5 hours until corn is tender.
  • 3 Combine margarine and flour to make a roux. Stir into soup. Slowly add milk and sour cream, stirring to incorporate. cook on high until soup thickens slightly. Reduce heat and let cook for a about another half hour on low.
  • 4 Stir in cheese.
  • 6 Serve with chopped cilantro and tortilla chips, Tabasco, rice etc. Texture of the soup should be velvety.not thick.

16 ounces whole kernel corn, frozen
2 tablespoons butter
1 medium onion, chopped
1 (4 ounce) can green chilies, chopped
8 ounces monterey jack cheese, shredded
salt and pepper
1/2 cup sour cream

Steps:

  • Saute onion and green chilies in the melted that has been melted in a saucepan just until the onion is tender.
  • Add frozen corn and cook until heated through.
  • Stir in shredded cheese and salt and pepper to taste and stir until the cheese is melted.
  • Stir in sour cream to mix well and heat the sour cream up.
  • Enjoy.

4 slices bacon
1 lb chicken breast, cubed
1 cup onion, chopped
1 cup red bell pepper, diced
2 garlic cloves, minced
5 cups chicken broth
1 1/2 cups potatoes, peeled and diced
2 1/2 cups corn kernels
1/2 cup all-purpose flour
2 cups milk
1 cup cheddar cheese, shredded
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper

Steps:

  • Lightly oil (use olive oil) the bottom of a large saucepan.
  • Cook bacon over medium heat, in the pan, until crisp.
  • Remove bacon from pan.
  • Set aside.
  • Add chicken, onion, bell pepper, and garlic to bacon fat in pan; sauté 5 minutes.
  • Add broth and potatoes; bring to boil.
  • Cover, reduce heat, and simmer 20 minutes or until potatoes are tender.
  • Add corn; stir well.
  • Place flour in a bowl.
  • Gradually add milk, stirring with a whisk until blended; add to soup.
  • Cook over medium heat 15 minutes or until thick, stirring frequently.
  • Stir in cheese, salt, pepper and cayenne.
  • Crumble bacon and sprinkle over top.

  • Set oven to broil (usually about 550℉) and allow to preheat. Spray baking sheet with cooking spray.
  • Wash Anaheims and Serrano. Remove stems from Anaheims, slice each pepper in half and place with skin side up on cooking sheet. Cut onion horizontally into four large slices and place on same cooking sheet. Place peeled garlic and whole Serrano on same cooking sheet. Place in oven on highest rack and allow to cook about 10-15 minutes. The peppers will be charred and onions will have a few charred looking bits. The garlic may be completely blackened so don't worry. That's what you are looking to find.
  • Place charred peppers in a bowl and cover with plastic wrap to "sweat" for 10 to 15 minutes. They need to cool enough for you to be able to handle them easily. Once cool enough to handle, carefully remove the charred skin from each. It should peel off easily. Remove skin, seeds and stem from Serrano. Place all the peppers in an electric blender with the onions and garlic.
