ALMOST ZERO LOW-FAT BISCUITS
Almost zero-fat, these delicious non-guilt biscuits are tender and fluffy. I have for years called these Zero Fat Biscuits but, due to an insignificant amount of fat in the flour, they are now called Almost Zero Low-Fat Biscuits. Just follow these easy step-by-step photo instructions.

Steps:
- Preheat oven to 400° convection or 425° regular.
- Combine 2 cups AP flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt. Mix well.
- Add 1 1/4 cup nonfat yogurt. Fold in until all dry is incorporated. If you use Greek yogurt, you may need a tablespoon or so of milk.
- The easiest is to do 8 drop biscuits. If you want to cut biscuits, spread the dough on a floured surface about 3/4 inches thick. You can cut six 2 1/2 inch biscuits or eight 2 inch biscuits.
- Place your biscuits on a PAM sprayed baking pan.
- Bake until golden brown. About 12-15 minutes.

EASY CHEESY CHICKEN AND BISCUIT CASSEROLE
Chicken and veggies mixed up in a delicious gravy and topped off with sharp cheddar and semi-homemade drop biscuits.

Steps:
- Preheat oven to 375 degress. Lightly spray 3 quart (9x13) casserole dish with cooking spray.
- In a large skillet, lightly spray with cooking spray and sauté onions for a few minutes until softened. Add frozen veggies to pan and stir together until the veggies are warmed. Add cooked chicken, thyme, and then salt & pepper to taste.
- Add the chicken and vegetable mixture to the casserole dish, pour chicken gravy into the dish and stir until combined well. Evenly sprinkle with the shredded cheddar on top.
- In medium bowl add Bisquick mix and garlic salt. Stir together. Then, add the milk. Mix until a soft dough forms. (If mixture does not seem moist enough add one or two tablespoons of water)
- With a metal spoon drop biscuit dough on top of the cheddar. You will have enough to make 12 biscuits.
- Bake for 20-23 minutes or until biscuits are golden on top. Let sit for a few minutes before cutting into. Enjoy!
CHEESY CHICKEN POT BISCUIT CUPS (LOW FAT, LOW CAL)
A weight watchers recipe I obtained from a message board at www.dwlz.com. Per serving of 2 each: 230 calories, 6 gm fat, 2 gm fiber. WW Points per serving : 5 You could also add more veggies to make this more "pot pie-ish". This may change your point count, depending on what you add.

- Preheat oven to 400 degrees.
- Separate biscuits and place each biscuit in a cup of an ungreased 12-hole muffin pan, pressing dough up sides to edge of cup.
- In a medium bowl, combine chicken, chicken soup, cheddar cheese, parsley flakes, and black pepper. Mix well to combine.
- Evenly spoon chicken mixture into prepared biscuit cups.
- Bake for 12 to 15 minutes or until golden brown.
- Remove from oven. Place muffin pan on a wire rack and let set for 2-3 minutes. Serve at once.

CHEESY CHICKEN POT PIE RECIPE

- Preheat oven to 350 degrees.
- Spray a 9 x 13 inch baking dish with non-stick cooking spray.
- Layer the chicken, carrots, peas, and potatoes in the bottom of the dish. Sprinkle the cheese on top.
- In another bowl mix together 1 1/2 cans of the soup, broth, and milk. (If you want it creamier, add both cans of soup) Season with salt and pepper.
- Pour over the layers in the baking dish.
- Stir together the biscuit mix and milk and pour over the casserole.
- Lightly sprinkle garlic powder on top of the biscuit mixture.
- Drizzle butter over the biscuit topping and bake for about 30-40 minutes or until the top is golden brown.

- Preheat oven to 350-degrees F.
- Spray a 2-quart baking pan with Pam (my pan was 13x10).
- In a large saucepan over high heat bring 1 inch of water to a boil. Add vegetables (asparagus - onion). Cover and simmer until tender. Drain.
- Stir in roasted peppers. Spread vegetable mixture in prepared pan.
- Sprinkle with half of the mozzarella.
- In a bowl bowl whisk together next 5 ingredients (egg substitute - pepper) and then whisk in the flour.
- Pour egg mixture over vegetables.

- Prepare dough first. In a medium sized mixing bowl, combine flour and margarine; with a pastry blender or the back of a fork, cut in margarine until mixture resembles coarse meal. Add in yogurt and mix thoroughly.
- Form dough into 4 equal balls. Cover each portion with plastic wrap and refrigerate for 30 to 40 minutes (can be kept in refrigerator for up to 3 days, or frozen in freezer until ready to use). If dough is frozen, make sure to thaw completely before using.
- For the filling: in a large stockpot, dissolve the flour in the broth with a whisk, and bring the broth mixture to a boil. Add carrots, mushrooms, and onions. Reduce heat to medium-low, cover, and cook until carrots are tender (about 10 minutes).
- Add remaining ingredients except dough (cooked chicken, frozen peas; salt and pepper to taste). Cook uncovered, stirring occasionally, for 5 minutes. Divide mixture evenly among 4 individual casseroles (or 16 oz. soufflé dishes).
- Roll 1 ball of dough between 2 sheets of wax paper, forming a circle slightly larger than the top of the casserole. Lift dough onto 1 filled dish. Using a fork, press edges of dough to rim of dish; gently pierce top of dough to allow steam to escape. Repeat procedure for other pies. Pies can now be wrapped and frozen for future use, or placed into a pre-heated 375 degree oven.
- Place pies on a baking sheet and bake at 375 for 30-35 minutes, or until crust is lightly browned (will be 40-45 minutes if pies are frozen).
- Let pies cool for 10 minutes before serving.

FAT FREE, LOW CAL BISCUITS!
Let me start off by saying HALLELUJAH!! My parents are BIG biscuit eaters, and dinner every night is a battle for me to turn down the biscuits. I adapted this recipe from a traditional "mayo" biscuit, and it is yummy! They come out very fluffy and are not cursed with the nasty baking powder flavor that most healthy biscuits have. I hope to soon experiment with oat flour in this recipe!! This is by far one of my favorite healthified recipes!

EASY CRISPY OVEN FRIES (LOW FAT, LOW CAL)
This is a delicious lower fat, lower calorie baked french fry--evidently soaking the potatoes in the salt-sugar solution draws out some of their water. This way they brown and crisp instead of steam. So yummy! (to me, these taste like the fry-daddy type french fries my mom made me when I was a kid!) My non-dieter husband also deemed these delicious. 159 calories/5 g. fat, 0 mg. cholesterol/28 g. carbs/3 g fiber Weight Watchers Points per serving: 3 This came from a WW book, but I'm not sure which one.

- Preheat oven to 450 degrees. Spray a non-stick baking sheet w/ non-stick cooking spray.
- In a lg. bowl, combine potatoes, 1/4 teaspoons of the salt and all of sugar w/ cold water to cover. Soak 15 min, drain and blot dry.
- In another lg. bowl, toss potatoes w/ oil and paprika. Place in a single layer on the baking sheet.
- Bake, turning potatoes over as they brown, until cooked through and crisp. (Could take anywhere from 25-45 min., depending on how you cut your potatoes and your oven. My fries only took about 25 minute I checked on my potatoes and turned them about every 5 minute or so. You will see them browning and hear them sizzling.) Sprinkle w/ the remaining 1/2 teaspoons of salt.
