I got this from Kraft Food and Family Cookbook. This isn't a weight watcher recipe. However, I always like putting the weight watcher points for me,regardless of how high they are. Weight Watcher Points: 12

2 tsp oil
4 small boneless skinless chicken breast halves (1 lb)
2 c frozen broccoli florets, thawed
1 can(s) (10 3/4 oz) condensed cream of chicken soup
4 oz velveeta cut into 1/2-inch cubes
2 c hot cooked long-grain white rice

Steps:

  • 1. Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 minutes or until done (165 degrees F), turning after 4 minutes. Remove from skillet; cover to keep warm.
  • 2. Add broccoli, soup and Velveeta; mix well. Simmer on medium heat for 7 minutes or until heated through and Velveeta is melted, stirring frequently.
  • 3. Serve chicken and broccoli mixture over rice.
  • 4. *Variation: Prepare using your favorite cream soup and frozen vegetable combination, such as mushroom soup and peas.

2 teaspoons vegetable oil
4 small boneless skinless chicken breasts
2 cups frozen broccoli florets
1 (10 3/4 ounce) can condensed cream of chicken soup
4 ounces Velveeta cheese, cut up
2 cups prepared cooked rice

Steps:

  • Heat oil in large skillet on med-high heat.
  • Add chicken, cook 7 minutes. turning after 3 1/2 minutes. Add broccoli, stir. Stir in soup and velveeta until well blended. Reduce heat to med low and simmer 7 minutes or until chicken is cooked through. Serve over rice.

4 small boneless skinless chicken breasts (1 lb.)
1/4 cup milk
1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes
2 cups frozen broccoli florets
1/4 cup KRAFT Grated Parmesan Cheese, divided

Steps:

  • Heat large nonstick skillet on medium-high heat. Add chicken; cover skillet. Cook 5 to 7 min. on each side or until chicken is done (165ºF). Remove chicken from skillet; keep warm.
  • Add milk, VELVEETA, broccoli and 2 Tbsp. Parmesan cheese to skillet. Cook, uncovered, on medium heat 4 min. or until VELVEETA is melted and broccoli is heated through, stirring occasionally.
  • Return chicken to skillet. Cook and stir 1 min. or until chicken is coated and heated through. Sprinkle with remaining Parmesan cheese.

1 pound chicken breast (pounded ½ thick )
½ teaspoon garlic powder
¼ teaspoon dried basil
¼ teaspoon salt (or to taste)
¼ teaspoon black pepper
1 tablespoon olive oil
¾ cup chicken broth (more as needed)
4 cups broccoli florets
4 ounces cream cheese (cubed)
½ cup sharp cheddar cheese (shredded)
2 tablespoons parmesan cheese (shredded)

Steps:

  • Sprinkle chicken with seasonings.
  • Heat oil in a skillet over medium-high heat. Add the chicken to the pan and cook 2 minutes or until browned. Flip over and cook an additional 2 minutes.
  • Add broth to the pan, scraping up any browned bits. Add broccoli to the pan and cover. Cook covered about 3-4 minutes or until tender crisp and chicken is cooked through (165°F).
  • Remove the broccoli and chicken and place on a serving plate.
  • Add the cream cheese to the pan and stir until melted and creamy, adding more broth if needed. Whisk in the cheddar & parmesan cheese until smooth. Stir the broccoli into the sauce and spoon over chicken.

I got this out of Cook's Country Feb/March 2008 edition. Makes an easy dinner, it's full of good-for-you broccoli, and tastes like you spent hours. My husband wasn't as impressed as I was, but then again, he's not a huge fan of broccoli like I am. The magazine recommends serving it over rice or egg noodles--we used the noodles and it worked great.

1 1/2 lbs boneless skinless chicken breasts (about four)
salt and pepper
4 tablespoons butter
1 onion, chopped fine
1/4 cup all-purpose flour
1 cup low sodium chicken broth
1/2 cup heavy cream
1/2 cup dry sherry
1 1/2 lbs fresh broccoli, florets chopped, stems peeled and sliced thin
1 1/2 cups grated parmesan cheese

Steps:

  • Adjust oven rack to upper-middle position and heat broiler on high.
  • Meanwhile, pat chicken dry with paper towels and season with salt and pepper. Melt one tablespoon butter in large non-stick skillet over medium-high heat. Cook chicken until golden brown, about three minutes per side. Transfer to plate.
  • Add remaining butter and onion to empty skillet and cook until onion is beginning to brown, about 2 minutes. Stir in flour and cook until golden, about one minute. Whisk in broth, cream and sherry and simmer until thickened, about 3 minutes. Return chicken to skillet, reduce heat to low, and simmer, covered, until chicken is cooked through, about 15 minutes. Transfer chicken to broiler-safe (non glass/ceramic) baking dish.
  • While the chicken is cooking, microwave broccoli on high power, covered, in a large bowl until bright green and slightly softened, about 5 minutes. Add broccoli and 1 cup cheese to skillet, stirring to combine. Season with salt and pepper and pour broccoli mixture over chicken.
