3 cups frozen chopped broccoli
2 ounces angel hair pasta, broken into small pieces
1/4 cup butter, cubed
1 tablespoon all-purpose flour
1 cup water
3/4 cup milk
1/8 teaspoon pepper
6 ounces process cheese (Velveeta), cubed
1/2 cup sour cream

Steps:

  • Cook both the broccoli and pasta according to package directions; drain. In a large saucepan, melt butter; stir in flour until smooth. Gradually stir in the water, milk and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat; stir in cheese until melted. Stir in the broccoli, pasta and sour cream; heat through (do not boil).

1 teaspoon chicken bouillon or 1/2 vegetable bouillon cube
1 package (16 ounces) frozen chopped broccoli, thawed
1 medium onion, chopped
1/4 cup butter, cubed
3 tablespoons all-purpose flour
1 cup 2% milk
1 pound process cheese (Velveeta), cubed

Steps:

  • In a large saucepan, bring water and bouillon to a boil. Add broccoli. Reduce heat; cover and simmer for 3-4 minutes or until crisp-tender. Drain, reserving 3/4 cup liquid. , In another large saucepan, saute onion in butter until tender. Whisk in flour until blended. Add the milk and cheese. Cook over medium-low heat until thickened and cheese is melted, stirring frequently. Stir in broccoli and reserved cooking liquid.

1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes
1/8 tsp. garlic powder

Steps:

  • Heat oil in large saucepan on medium-high heat. Add onions; cook and stir 3 to 5 min. or until tender. Add water and bouillon cubes; bring to boil.
  • Add noodles; simmer on low heat 4 min., stirring occasionally.
  • Add remaining ingredients; bring to boil. Cook on medium-low heat 3 to 5 min. or until VELVEETA is melted and soup is well blended, stirring frequently.

1/2-3/4 cup chopped onion
6 (14 1/2 ounce) cans chicken broth or 6 (14 1/2 ounce) cans vegetable broth
8 ounces fine egg noodles
2 (10 ounce) packages frozen chopped broccoli
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
6 cups milk (I use lowfat milk)
16 ounces American cheese

Steps:

  • Heat olive oil in large saucepan.
  • Add onion and saute over medium heat till onions are golden.
  • Add chicken (or vegetable for vegetarians) broth and bring to a boil.
  • Add salt and noodles.
  • Cook uncovered for about 3 minutes, stirring occasionally.
  • Stir in broccoli and garlic powder and cook for another 4 minutes.
  • Add milk, cheese and pepper stirring constantly until the cheese is melted.

3 chicken flavor bouillon cubes
3 cups + 3 cups hot water, divided
1 small onion
1/2 stick butter
1 package (12 oz) frozen homestyle wide egg noodles - defrosted
1 box frozen chopped broccoli - defrosted
4 cups milk
8 oz Velveeta Cheese, cut into cubes

Steps:

  • Place bouillon cubes in 3 cups hot water to dissolve to make broth. Sautee onions in butter in 6-quart pot or Dutch oven. Add broth and 3 more cups of water and bring to boil.
  • Reduce heat to simmer and add noodles. Cook until noodles are done (about 15 minutes). Add broccoli and simmer for 5 minutes.
  • Add milk and Velveeta cheese. Simmer until cheese is melted, being sure to stir thoroughly every 5 minutes to prevent burning on bottom. Reduce heat to low and serve hot.

1/2 lb butter (2 sticks)
1 cup all-purpose flour
1 quart chicken stock
1 quart half-and-half
1 -1 1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon ground cayenne pepper
1 lb broccoli floret
6 ounces sharp cheddar cheese
2 tablespoons chives or 2 tablespoons scallions, chopped

Steps:

  • Melt butter in a large saucepan over medium heat.
  • Add flour and cook, stirring constantly to make a very "blond" roux, about 3-4 minute.
  • Add chicken stock, half and half, salt, mustard, and cayenne.
  • Bring to a simmer, stirring frequently.
  • Add broccoli and reduce heat to a simmer.
  • Cook about 15-20 min, or until the broccoli is crisp-tender.
  • Add cheddar cheese and stir to combine. Simmer until cheese melts.
  • Serve with a topping of chives or scallions and a little more cheese if desired.

1 onion, chopped
6 tablespoons margarine
⅓ cup all-purpose flour
salt and pepper to taste
4 cups milk
3 cups chicken broth
1 carrot, shredded
1 cup broccoli florets
½ cup chopped celery
1 pound processed cheese food (eg. Velveeta), cubed

Steps:

  • In a large saucepan on medium high heat, saute the onions in the butter or margarine until tender. Add the flour and salt and pepper to taste. Mix until smooth. Add the milk slowly, until mixture is thick and bubbling.
  • In a smaller saucepan, bring the chicken broth to a boil. Add the carrot, celery, and broccoli. Cook about 5 minutes, or until tender. Combine the broth mixture with the milk mixture and stir until fully blended.
  • Add the cheese. Allow soup to heat over medium heat until cheese is melted. Important: DO NOT let the soup boil because the cheese will separate and curdle the soup. Serve hot and enjoy!
