EASY cheesy black bean skillet dinner is ready in less than 30 min! This black bean southwestern casserole is hearty enough for meat eaters.

1/2 white onion
1/2 cup red bell pepper
2 cloves garlic
1 Tbsp. olive oil
2 14.5-oz. cans black beans (DON'T RINSE!)
2 cups frozen corn
1/2 cup enchilada sauce
1 cup shredded cheddar cheese
cilantro
4 green onions
sliced jalapenos (fresh or pickled)
salsa or hot sauce
sour cream
tortilla chips
mini bell peppers

Steps:

  • 1. Prepare ingredients: Dice onion. Dice bell pepper. Mince garlic.
  • 2. Heat oil in a large skillet over medium heat. Add onions and pepper, and cook, stirring occasionally, for about 3-4 minutes.
  • 3. Add garlic, both canned beans (DON'T RINSE!), corn, and enchilada sauce to skillet. Bring to a boil, then lower heat to medium.
  • 4. Stirring frequently, let bean mixture thicken, and cook for about 10 minutes.
  • 5. Meanwhile, prep any toppings and/or bell peppers for scooping.
  • 6. Stir cheese into bean mixture and serve with tortilla chips, bell peppers, and desired toppings.

A kosher, vegetarian recipe for Black Bean, Cheese, and Tortilla Casserole, made with corn tortillas, canned beans, tomatoes, and cheese.

2 tablespoons extra-virgin olive oil (plus extra for drizzling)
1 medium onion (trimmed, peeled, and chopped)
3 large cloves garlic (peeled, smashed, and finely chopped)
3 scallions (sliced, white and light green parts only)
1 teaspoon cumin
2 cans black beans (15 ounces each, drained and rinsed)
1 cup tomato sauce
1/4 cup tomato salsa (mild, medium, or hot, depending on preference)
12 corn tortillas (soft)
1 1/2 cups cheddar cheese (shredded)
1/2 cup mozzarella cheese (shredded)
Garnish: guacamole
Garnish: salsa
Garnish: sour cream
Garnish: hot sauce

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Oil a 9- or 10-inch casserole dish and set aside.
  • Warm the olive oil in a chef's pan or large, deep skillet set over medium-high heat.
  • Add the onion and sauté until soft and translucent, about 5 to 8 minutes.
  • Add the garlic, scallions, and cumin, and sauté about a minute more, or until fragrant.
  • Stir in the black beans, tomato sauce, and salsa, lower the heat, and simmer, stirring frequently, for about 5 minutes. Remove from the heat.
  • Cover the bottom of the baking dish with 4 tortillas, overlapping or trimming to fit if necessary (if you are using a rectangular or oblong dish, you may want to cut a couple of the tortillas in half to get a better fit; don't worry if the tortillas don't cover the entire dish.)
  • Toss the cheeses together in a small bowl.
  • Sprinkle the tortillas with 1/3 of the cheese.
  • Top with 1/2 of the tomato-bean mixture, smoothing the top with a spatula.
  • Arrange 4 more tortillas over the beans, top with 1/3 of the cheese, and the rest of the beans.
  • Top the casserole with the rest of the tortillas.
  • Sprinkle evenly with the rest of the cheese, drizzle with a little olive oil, and bake, covered, for 20 minutes.
  • Remove the foil and bake for 10 to 15 minutes more, or until golden and bubbly.
  • Remove from the oven and allow the casserole to rest for 5 minutes before serving.
  • Top as desired with guacamole , salsa, sour cream, and hot sauce.
  • Serve and enjoy.

Cheesy, Spicy Black Bean Bake image

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

3 tablespoons extra-virgin olive oil
5 garlic cloves, peeled and sliced
1/4 cup tomato paste
1 1/2 teaspoons smoked paprika
1/4 teaspoon red-pepper flakes
1 teaspoon ground cumin
2 (14-ounce) cans black beans, drained and rinsed
1/2 cup boiling water
Kosher salt and black pepper
1 1/2 cups grated Cheddar or Manchego cheese (from about a 6-ounce block)

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.

1 Tbsp. oil
3 large guajillo chiles, stemmed, seeded
1 can (14.5 oz) diced tomatoes, drained
1 cup chopped onions
6 bone-in pork chops (2 lb.), 3/4 inch thick
2 cans (15 oz. each) black beans, undrained
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
2 Tbsp. cilantro
1 KRAFT Singles
3 cups hot cooked long-grain white rice

Steps:

  • Heat oil in large skillet on medium-high heat. Add chiles; cook 1 min. or until toasted. Remove from skillet. Add chops to skillet; cook 3 min. or until browned on both sides, turning after 1-1/2 min. Remove from heat.
  • Blend chiles, tomatoes and onions in blender until smooth; spoon over chops. Drain 1 can beans; add to skillet with remaining can of undrained beans. Cover; cook on medium heat 15 min. or until chops are done (160ºF). Top with mozzarella; cook, covered, 5 min. or until melted. Sprinkle with cilantro.
  • Add Singles to rice; stir until melted. Serve with chops and beans.

Ready, Set, Cook! Special Edition Contest Entry: I like to create and/or modify recipes so that they are "Quck & Easy" to accomodate a hectic lifestyle without sacrificing on taste and the enjoyment of food. I came up with this particular recipe in the shower, which oddly enough is where I come up with some of my best culinary creations! The first list of ingredients are simply combined well in a food processor and then transferred to a 9x9 baking dish. The second list is just mixed well in a bowl and then layered on top of the black bean mixture in the baking dish. The third list of ingredients only includes the Paprika which is simply used to dust the very top of the bake before placing it in the oven. The final list of ingredients are used to garnish the top once the bake has finished cooking and had a chance to cool. I suggest drizzling the sour cream in parallel lines about a finger's width apart first and then topping with the red pepper/scallion mixture afterwards.

2 tablespoons taco seasoning

1 cup shredded sharp cheddar cheese
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 400 degrees.
  • Combine 1st list of ingredients into a food processor and blend well until mixture is smooth. Transfer bean mixture to a 9x9 baking dish and spread out evenly.
  • Combine 2nd list of ingredients into a mixing bowl and mix well. Transfer potato mixture into the baking dish and layer evenly on top of the bean mixture.
  • Lightly dust top of the bake with Paprika using the 3rd list of ingredients.
  • Place baking dish in oven and cook for about 20 minutes or until potatoes are lightly browned. Remove from the oven and allow to cool for about 10 minutes.
  • Use the 4th and final list of ingredients for garnish. Drizzle top of bake with parallel lines of sour cream separated by about 1/2 an inch. Then mix the Red Pepper and Green Onions together and sprinkle evenly over top of the sour cream.
  • Serve warm with your favorite brand of tortilla chips and enjoy!
