SUGAR COOKIE CHEESECAKE BARS



Sugar Cookie Cheesecake Bars image

Sugar cookie dough surrounding creamy cheesecake filling. A dessert that has the best of both worlds!

Number Of Ingredients 6

16.5 ounce tube of sugar cookie dough
1 egg
1 tablespoon vanilla extract
8 ounce box of cream cheese ((at room temperature))
OPTIONAL: Sprinkles
OPTIONAL: Powdered Sugar

Steps:

  • Preheat oven to 350°
  • Prepare baking dish with non-stick spray
  • In a mixing bowl, combine the cream cheese, vanilla extract, and egg mixing on slow speed. Some people have said they like to sweeten this mixture up with a little powdered sugar - but that is completely optional.*Note: The cream cheese mixture will be chunky if the cream cheese is too cold. If this happens, fill your sink with a couple inches of hot water and place the bowl in the bath of hot water. This warm water should help bring the cream cheese chunks to room temperature to make a creamy mixture
  • Cut the roll of sugar cookie dough in 1/2
  • Press half of the sugar cookie dough to the bottom of the baking dish for the "curst"
  • Pour the cream cheesecake mixture over the sugar cookie crust
  • Using the remaining 1/2 roll of sugar cookie dough, create flattened "chunks" of dough and place them evenly over the top of the cheesecake mixture.*These will melt, rise, and cover the top of the cream cheese bars as seen in the photos above!
  • Bake for 30 minutes or just until the sugar cookie shows a golden color*Note: sugar cookies burn QUICKLY! It's best to pull them out of the oven right when they appear to be golden as opposed to burning the dough.
  • Let cool for at least an hour. Add sprinkles once completely cooled. Cut into squares once cooled and serve!

TASTES JUST LIKE RICH CHEESECAKE BARS
1 favorite sugar cookie recipe, or 1 (17.5 oz) pkg sugar cookie mix in a pouch, by betty crocker
1 sm box (4 serving size) french vanilla instant pudding
2 Tbsp brn sugar ( packed)
1 stick melted butter= 1/2 cup
3 tsp vanilla extract
2 2 eggs + plus 3 yolks
2 pkg (8oz) cream cheese @ room temp.
1/2 c sour cream
1/2 c white granulated sugar
2/3 c optional: toffee bits, ( pulverized in a blender or food processor)
SO GOOD, YOU JUST HAVE TO TRY THESE. . . .ENJOY

Steps:

  • 1. Preheat Oven @ 350 Spray 9 X 13 baking pan with cooking spray In Med. bowl mix, cookie mix Pudding Mix Brn Sugar,& Melted Butter, together. Add; 1 Tsp vanilla, and 1 egg, blend with a spoon. When dough begins to come together, Use your hands to Knead the dough then form into a ball.
  • 2. Press dough into your Baking dish, and slightly up the sides
  • 3. In another Large Bowl, using your Mixer, Beat @ Room temp. Cream cheese, Sugar, Sour Cream, and the remaining egg and 3 Yolks, add 2 tsp vanilla, Beat Until Smooth and creamy.
  • 4. Spread this cream cheese Mixture over top of the Cookie Dough in your pan. BAKE 25-30 min. til center is set.
  • 5. While bars are Baking; Pulverize the toffee Bits in Blender, Sprinkle Immediately over Dish as removed from the Oven and still Hot. Let Cool . . 30-45 min Cover then place in refer at least 3 hrs or Over Night. Cut into 2-3 inch bars to serve. Very Rich and OH MY GOODNESS BARS!!! Keep refrigerated.

Easy Sugar Cookie Cheesecake Bars are my idea of the perfect dessert. Semi-homemade yet full of decadence, this semi-homemade bar cookie recipe stars cheesecake atop a buttery sugar cookie crust.

1 (17.5 ounce) package sugar cookie mix ((see note 1))
1 (3.4 ounce) box French vanilla instant pudding mix ((see note 2))
2 tablespoons light brown sugar
1/2 cup (1 stick) butter (melted)
2 1/2 teaspoons vanilla extract (divided)
2 whole eggs ( plus 3 egg yolks)
2 (8 ounce) packages cream cheese (softened)
1/2 cup sour cream
1/2 cup granulated sugar
Sprinkles (for garnish)

Steps:

  • Preheat oven to 350 degrees. Coat a 9-inch by 13-inch cake pan with nonstick spray.
  • In a large bowl, combine cookie mix, pudding mix, brown sugar, butter, 1 teaspoon vanilla, and 1 whole egg. Mix well and press in to bottom of pan.
  • In a standing mixer with the paddle attachment, or in a large bowl by hand, beat cream cheese, sour cream, and sugar until smooth.
  • Add remaining whole egg, egg yolks, and remaining 1 1/2 teaspoons vanilla. Beat until smooth. Pour over crust in pan and smooth the top.
  • Bake for 35 to 45 minutes or until center is set. Cool at least 30 minutes. Top with sprinkles. Store in the refrigerator.

1 lb Pillsbury sugar cookie dough
32 ounces cream cheese
4 eggs
1 tablespoon vanilla extract
1 cup granulated sugar
1 (12 ounce) can cherry pie filling

Steps:

  • Press the cookie dough into the bottom of an 8 inch springform pan and bake at 350 about 15 minutes until almost done.
  • Let cool.
  • Meanwhile, beat cream cheese and sugar.
  • Add vanilla and one egg at a time, beating well.
  • Pour into crust.
  • Lower oven to 325 and bake 75-90 minutes until cooked through and browned.
  • Chill overnight in fridge and top with canned cherry pie filling.

Yum! Not sure where I found this recipe, but it's a keeper. My kids love them of course. Kids and cookie dough just go together. The recipe called for graham cracker crumbs, I was fresh out so improvised with Nilla wafer crumbs. I actually think I like them better this way. Enjoy! My photo's

CRUST
1 - 1/2 c graham cracker crumbs
1/3 c melted butter
2 Tbsp sugar
FILLING
1 - 8 oz cream cheese , softened
1/3 c sugar
1 egg
1 tsp vanilla extract
COOKIE DOUGH
1/3 c butter, softened
1/4 c sugar
1/4 c dark brown sugar
1 tsp vanilla extract
3/4 c flour
2/3 c chocolate chips, ( i used milk chocolate )
pinch of salt

Steps:

  • 1. Preheat oven to 325 degree F. For the crust - Mix the graham cracker crumbs, butter, and sugar.
  • 2. Press firmly into the bottom of a greased 9x9 inch baking pan. Bake for 5 minutes.
  • 3. Cream together well the cream cheese and 1/3 cup sugar.
  • 4. Add the egg and vanilla; mix until well blended. Spread evenly over the graham crumb crust.
  • 5. Cream together very well: butter, sugar, brown sugar and vanilla extract. Fold in 3/4 cup flour and salt just until a dough forms. Mix in the chocolate chips.
  • 6. Pick up the cookie dough in handfuls and press into a ball. Break off small nuggets of the dough and sprinkle these evenly over the cheesecake layer.
  • 7. Bake at 325 degrees F for 30-35 minutes or until the cookie dough just begins to brown on top. Cool completely in the pan before cutting into squares or bars.
  • 8. Store in airtight container if not freezing. The recipe calls for a 9 x 9 pan. I used a 9 x 13 baking dish. For a thicker bar, use the 9 x 9. I didn't have one.
  • 9. Enjoy!
