ZUCCHINI HAMBURGER PIE

- In a skillet, cook beef, onion, salt and garlic salt over medium heat until meat is no longer pink; drain. Add the green pepper, oregano, parsley, bread crumbs, cheese and egg; mix well. Set aside. , Place bottom pastry in pie plate; layer 2 cups of zucchini in crust. Cover with beef mixture. Top with tomato slices and remaining zucchini. Place top pastry over zucchini. Cut a few slits in top. , Bake at 350° for 1 hour or until crust is lightly browned.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Just when you thought you had enough zucchini recipes. This one comes from the Monks at Mepkin Abbey in So.Carolina. They grow their own chickens and sell the eggs to make a little extra. (The eggs are delicious!!)

- Heat oven to 350 degrees F.
- Mix zucchini, onion,bisquit mix, cheese, basil, oregano, salt, pepper and garlic.
- Combine oil and eggs.
- Add to the zucchini mix, turning until the zucchini mix is evenly coated.
- Pour into a buttered 10x6 or 9x9 baking dish.
- Bake for 30 minutes or until golden.
- You can test it by placing a butter knife in the center.
- If it comes out clean, it is done.

- Scrambled the ground beef, then saute the onion with the zucchini for 6 minutes, season with salt and pepper.
- Spread the mixture in the pan, put the cheese on top.
- Mix the bisquick, milk and eggs then pour over the ground beef mixture.
- Cook for 25 minutes.
