CHEESEBURGER FRIED RICE



Cheeseburger Fried Rice image

3 egg yolks
1 pound pickle relish, such as Mt. Olive
1 ounce minced garlic
1 ounce mushroom seasoning, such as Po-Lo-Ku
40 ounces soybean oil
1 pound ketchup
1 cup soybean oil
1 pound sliced onion
5 ounces bacon, cooked crispy and fat rendered and reserved
8 ounces ground beef, browned
3 pounds day-old, cooked jasmine rice
1 ounce mushroom seasoning, such as Po-Lo-Ku, or more as needed
1 ounce sugar
1/2 head iceburg lettuce, shredded
2 Roma tomatoes, diced
4 ounces canned nacho cheese (more if you're feeling naughty), warmed
2 ounces yellow mustard
1 ounce sesame seeds
7 pickle chips, such as Mt. Olive

Steps:

  • For the awesome sauce: Add egg yolks and pickle relish to a food processor and pulse until incorporated. Add your garlic and mushroom seasoning and pulse again.
  • Now, go for it: Slowly drizzle your oil into the mix while all the flavors are spinning around and mingling (like you did at last year's holiday party). Don't go too fast though! The sauce may break, and there's no return from that. Be gentle. But make it thick. Thick is good. Transfer to a mixing bowl and fold together all of that mayo goodness with your ketchup.
  • You're done! Make the fried rice now, and everything will be okay. (See Cook's Note.)
  • For the cheeseburger fried rice: Add oil and onions to a hot wok and cook until golden brown and delicious. Add cooked bacon and browned ground beef. Bring some of the reserved bacon fat into the wok and add the jasmine rice.
  • With an aggressive approach, mix, stir, rake, swirl, toss... whatever it takes to bring that rice back to life. Make sure every grain has been given some bacon-fat lovin' and nothing is sticking to the wok, until the rice has been fried and is completely alive again. Show it some respect by seasoning with mushroom seasoning and sugar. Not too much? but not too little. Taste this beautiful creation. It is delicious. If desired, add more mushroom seasoning. Toss in lettuce and tomatoes and mix just until incorporated; not wilted but not raw.
  • For the garnish: Build this beauty like you would any other cheeseburger. Smother with nacho cheese, 3 ounces awesome sauce and mustard. Sprinkle some sesame seeds over the top (what's a burger bun without sesame seeds?) and last, but very certainly not least, the pickle chips. ENJOY.

2 zucchini, sliced 1/2-inch thick
1 tablespoon dried minced onion
2 cups water
1 (5.5 ounce) package Knorr® Rice Sides™ - Beef flavor
2 tomatoes, diced
1 tablespoon Worcestershire sauce
1 cup grated Cheddar cheese
Salt and black pepper to taste

Steps:

  • Brown ground beef in skillet over medium to medium-high heat, stirring to crumble. Transfer browned beef to a bowl.
  • Melt butter the same skillet; add zucchini and saute until just slightly softened, about 5 minutes.
  • Return ground beef to skillet along with dried onions, water, Knorr® Rice SidesTM- Beef, chopped tomatoes, and Worcestershire sauce. Bring to a boil over high heat. Reduce heat to low; cover and cook for 7 minutes. Top with cheese. Let sit 5 minutes before serving.

1 cup ketchup
1 tbsp prepared yellow mustard

Steps:

  • This Cheeseburger Rice is a delicious alternative to a classic burger. Garnished with all of your favorite burger toppings, it's a fun, inventive weeknight meal. Step 1
  • Heat oil in a large skillet over medium-high heat. Add beef and onions and sauté, stirring frequently, until meat is browned and cooked through, about 5-7minutes. Step 2
  • Add water, ketchup and mustard to skillet. Bring to a boil. Step 3
  • Stir in rice. Sprinkle with cheese and cover. Reduce heat to medium-low and simmer for 5 minutes. Step 4
  • Remove from heat and let stand for 5 minutes. Stir to combine. Recipe Tips Pretend you're at your favorite burger place by serving this meal with everybody's favorite burger toppings. Try chopped tomatoes, sliced green onions, pickles, shredded lettuce, bacon, sautéed mushrooms or anything else you think your family will love! If you don't have any beef on hand, substitute ground turkey, chicken or meatless ground for the beef. If you have leftovers from this meal, simply reinvent them as something new. To turn this into chili, combine leftovers in a saucepan with 1 can (15 oz) of diced tomatoes, 1 can (8 oz) of tomato sauce, 1 can (16 oz) of kidney beans and 2 tablespoons of chili seasoning. Stir to combine and bring to a boil. Leftovers can also be turned into stuffed peppers or tomatoes. Simple hollow out bell peppers or large tomatoes, fill with the leftovers and bake at 350°F for 20 minutes.
