CHEESEBURGER MEATLOAF
This meatloaf is extremely juicy, and the potential variety of different flavors is as big as your imagination. I've done American cheese with ketchup and mustard on top and served with dill pickle chips. Another one might be Swiss cheese and mushroom topping.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.
- Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

- Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
- Mix together the bread and milk in a bowl and set aside.
- Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
- Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
- Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
- Slice and serve with the sliced red onions and dill pickle chips.

- Stir together first 10 ingredients in a large bowl just until combined. Place in a 9- x 5-inch loafpan.
- Bake at 350° for 40 to 45 minutes. Pour chili sauce over meat loaf, and bake 20 to 25 more minutes or until meat is no longer pink in center.
- If you are using bacon, place on meatloaf then arrange cheese slices in a crisscross pattern on top of meat loaf. Let stand 10 minutes before slicing.

" CHEESEBURGER" MEATLOAF FOR LACTOSE INTOLERANT CHEESE
This is a recipe that my Father-in-Law adapted to meet the needs of my cheese loving lactose intolerant Hubby. When we had it at his parent's I thought it was made with real cheese! That is how good it is! I just winged the recipe to recreate it and it is delicious! I still can't believe that it isn't real cheese!

- Preheat oven to 350°F.
- Thaw meat in advance and place in a large mixing bowl.
- stir in bread crumbs, sage, coriander, Adobo, oregano, pepper and salt.
- Use hands to mix in eggs, ketchup, soy sauce, soy cheese and red onion (mixing in one ingredient at a time and being sure not to over mix-meat should not feel sticky.) Divide mixture in half and form into 2 loaves.
- Place loaves side by side (not touching) in a medium sized lasagna pan.
- Use fingers to open the top of the loaves and sprinkle in the garlic and add 1/2 a tbs of olive oil to each loaf and squeeze closed.
- Close loaves with hands and top with ketchup if desired (I highly recommend that part). Cook at 350 for 1 hour.
- Let stand 5-10 minutes and serve warm!
