COD AU GRATIN
This cod au gratin is a cheesy seafood recipe using raw cod fillets, baked slowly in a creamy sauce. Topped with grated hard cheese and breadcrumbs.

Steps:
- Preheat the oven to 180°C/355°F/ gas mark 4.
- Melt the butter in a saucepan and incorporate the flour to form a roux.
- Slowly pour in the milk and whisk vigorously to smooth out any lumps that might form.
- Continue stirring until the sauce has thickened then add the zest, mustard, dill, and Dziugas cheese. Season to taste.
- Arrange the cod fillets in one layer in an ovenproof baking dish.
- Pour the sauce over the fish.
- Mix the breadcrumbs, cheddar and oil in a bowl then scatter evenly on the fish.
- Bake for 45 minutes or until it is golden and crispy on top.
- Serve immediately with crusty bread for dipping in the luscious sauce.

- Preheat oven to 400°. Place fillets on a greased baking sheet; season with salt and pepper. In a small bowl, combine the remaining ingredients; pat onto fillets. Bake 15-20 minutes or until fish flakes easily with a fork.

- Place fish in a greased 1-qt. baking dish. Drizzle with butter. Combine mayonnaise and Parmesan cheese; spread over fish. , Bake, uncovered, at 425° for 16-20 minutes or until fish flakes easily with a fork.

CHEESY BAKED FISH
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Place butter in a 9x13-inch casserole dish.
- Place casserole dish in the preheating oven until butter is melted, about 5 minutes.
- Spread onion slices in the bottom of the casserole dish. Place cod skin-side down over onion. Sprinkle seasoned salt evenly on top.
- Mix mayonnaise, Parmesan cheese, provolone cheese, mozzarella cheese, and fresh parsley together in a bowl. Spread over cod.
- Bake in the preheated oven until cod flakes easily with a fork, 20 to 25 minutes.

- Remove skin from fillets and arrange in a greased oven-proof dish, sprinkle with salt & spread with combined mayonnaise & curry powder.
- Cover with foil & bake at 180.C for 25-30 mins or until tender.
- Mix together cheese & crumbs, sprinkle over fillets, return to oven until lightly browned.

EASY CHEESE BAKED FISH
I quite often bake my fish this way. Easy & simple, nothing fancy, but we like the result. I actually do not even measure the ingredients anymore and just throw it together, but these are the original measurements. Sometimes I add a little lemon juice or lemon pepper seasoning and top it all off with a sprinkling of parsley for a little colour.

- Place fish in a greased pan with dabs of butter on top.
- Season with salt& pepper to taste.
- (this is where I sprinkle on lemon juice or lemon pepper if using) Cover with sliced onion.
- Pour on milk.
- Bake at 400 degrees for 12-15 minutes.
- Remove from oven and sprinkle with grated cheddar cheese and a little parsley if desired.
- Return to oven until cheese melts.
