CHEESY SCALLOPED POTATOES
If you don't want ooey gooey cheese covering every single nook and cranny of your scalloped potatoes then look away. These Cheesy Scalloped Potatoes are perfection!

Steps:
- Preheat oven to 400°F (200 degrees C).
- Butter an 8x8 casserole dish.
- Arrange the potatoes and onions in the prepared baking dish, staggering potato and then onion.
- Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened.
- Stir in cheese all at once, and continue stirring until melted and smooth, about 30 to 60 seconds.
- Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours (90min.) in the preheated oven.
- For a crisp topping, change the oven setting to broil for 5 minutes before removing the dish.

- Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. Add garlic powder, Worcestershire sauce, onion powder, and paprika.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish.
- Layer potatoes and onions into the casserole dish. Combine soup, milk and pepper in a bowl, then pour soup mixture over the potatoes and onions. The soup mixture should almost cover the potatoes and onion, if it does not add extra milk.
- Cover dish and bake in preheated 375 degrees F (190 degrees C) oven for 60 minutes or until the potatoes are cooked through. At 30 minutes, remove the casserole from the oven and stir once before returning the dish to the oven. Remove from oven and serve.

I found this recipe in a cookbook called "The Usborne Children's World Cookbook" and so it's very simple and I've found it to be quite a hit.

- Preheat oven to 350°F Peel the potatoes and slice thinly.
- Slice the onion thinly. Melt the butter in a frying pan over low heat and cook onion till slightly soft.
- Butter a baking dish and spread a layer of potatoes on the bottom, spoon some onions on top.
- Add salt and pepper, then sprinkle with cheese. Carry on layering potatoes, onions, cheese, finishing with potatoes.
- Beat the egg into the cream with a fork or whisk. Pour it over the potatoes and sprinkle the remaining cheese on top.
- Bake the potatoes for about 1 1/2 hours. Test them with a knife to check that they are cooked all the way through.
