CHEESE-FILLED GINGER BREAD
This recipe came from Taste of Home's Holiday Recipe Card collection. I haven't made ginger bread in quite some time. This sounds really tempting, with the sweet cream cheese filling!

Steps:
- 1. Preheat oven to 350°F. Grease and flour a 10 inch fluted tube pan.
- 2. FILLING: In a mixing bowl, beat first 4 ingredients, until smooth; set aside.
- 3. BATTER: In a large bowl, combine the flour, sugar, baking soda, salt, & ginger. In another bowl, beat the eggs, milk, oil, and molasses, until smooth. Stir into dry ingredients, just until moistened. Fold in walnuts. Spoon a third of the batter, into the prepared pan. Top with the reserved cream cheese mixture. Carefully, spoon remaining batter over filling.
- 4. Bake for 40-50 minutes, or until a toothpick comes out clean. Cool for 10 minutes, before removing from the pan, to a wire rack.
- 5. GLAZE: Combine confectioners' sugar and enough milk, to achieve desired consistency. Drizzle over bread. Store in the refrigerator. Makes 16-20 servings.

- Combine sugars, cinnamon, ginger and salt in a medium bowl. Add melted butter and whisk to incorporate. Add flour and stir until just combined. Set aside.
- In a small bowl beat cream cheese until creamy and smooth. Mix in the egg, sugar and vanilla and beat until well combined. Pour mixture into a pastry bag or plastic zip lock bag if you don't have a pastry bag. If using a disposable pastry bag cut the tip of the bag. Insert the tip of the bag into one of the muffins and squeeze about two tablespoons of the cream cheese mixture into the gingerbread batter. ( It's a little tricky to know how much is going in so it's kind of a guesstimate...you will see the muffin grow as you fill it. You can go back and add more to some that you think you may not have added enough to at the end. I did have a little bit of the cream cheese mixture left over but some of mine probably could have used more) Continue until all 12 muffins are filled.
- In a small bowl beat cream and confectioner sugar until well combined. Drizzle over the tops of cooled muffins.

- Preheat oven to 350 degrees. Prepare a 9x5x3 loaf pan with a non stick baking spray or line the pan with parchment paper or foil for easy removal and spray the liner with non stick baking spray.
- In a medium bowl, cream the butter with a mixer (hand or stand mixer works) to soften. Gradually add in the sugar, mixing until light and fluffy. Add in the egg and molasses; beat thoroughly. Set aside.
