CORN CEREAL CRUSTED FRIED FISH



Corn Cereal Crusted Fried Fish image

Corn cereal is slightly sweet and extra crunchy, which holds up well to the walleye-a mild flaky whitefish common in the upper Midwest-though feel free to sub out any mild flaky whitefish. The smokiness and tanginess of the tartar sauce balances all the flavors out.

1/2 cup (120 grams) mayonnaise
1/3 cup (65 grams) Greek yogurt
2 tablespoons (56 grams) sweet pickle relish
1 tablespoon grainy mustard
1 tablespoon chopped fresh Italian parsley
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Pinch ground cayenne
5 cups (140 grams) corn cereal flakes
1 teaspoon paprika
1 cup (125 grams) all-purpose flour, for dredging
2 large eggs
2 teaspoons kosher salt, divided, plus more for seasoning
1 1/4 pounds walleye fillets, cut into 8 to 12 pieces (about 4 fillets; depending on size)
Neutral oil, as needed
Lemon wedges, for serving

Steps:

  • For the tartar sauce: In a medium mixing bowl, add the mayonnaise, yogurt, relish, mustard, parsley, smoked paprika, garlic powder and cayenne and stir to combine. Refrigerate until ready to serve. (Makes about 1 cup.)
  • For the fish: Put the corn cereal flakes in a large resealable plastic bag. Crush with your hands or a rolling pin to make medium size crumbs (the mixture should be a little finer than oatmeal). Pour into a shallow bowl and stir in the paprika. Spread the flour in a second bowl and beat the eggs in a third bowl with 1 teaspoon of salt.
  • Season the fish all over with the remaining 1 teaspoon of salt. Dredge in the flour, then the eggs, then roll in the cereal crumbs, patting them on to coat evenly.
  • Heat about 1/2 inch of neutral oil in a large skillet (cast iron or otherwise) over medium heat. The oil is ready when a cereal crumb sizzles on contact. Standing a safe distance away from the stovetop, slide the breaded fish into the oil and cook until golden, 2 to 3 minutes. Turn and cook the second side until golden, 2 to 3 minutes more. Drain on paper towels and season with salt. Serve hot with the tartar sauce and lemon wedges. The fish is best eaten right away but leftover tartar sauce will keep, covered, in the fridge for 2 to 3 days.

THREE CHEESE VEGGIE QUESADILLAS

4 tablespoons feta cheese, drained and crumbled
4 tablespoons grated part skim mozzarella cheese
1 tablespoon crumbled bleu cheese
1 teaspoon olive oil
1 jalapeno, minced
1 clove garlic, minced
1/2 tomato, diced
1 scallion, sliced
1/2 zucchini, cubed
1 teaspoon chopped fresh oregano leaves
2 tablespoons coarsely chopped fresh cilantro leaves
4 (10-inch) flour tortillas
1 cup chopped fresh spinach
1 cup washed and chopped Swiss chard

Steps:

  • In a medium sized bowl mix the cheeses together and set aside, covered, in the refrigerator until ready to use.
  • In a hot saute pan over medium heat the olive oil. When the oil is hot, add the jalapeno chili, garlic, tomato, scallion, zucchini, and oregano and saute for 2 minutes. Fold in the cilantro and set aside.
  • Place the tortillas in a hot dry saute pan over medium heat or on a hot grill and spoon 2 tablespoons of the vegetable saute and 2 tablespoons of the cheese mixture on to each tortilla. Fold the tortillas in half and toast each side for 1 to 2 minutes until the cheese starts to melt. Cut each tortilla in thirds and arrange on a serving plate garnished with spinach and Swiss chard.

2 tablespoons extra-virgin olive oil
1 orange bell pepper, stemmed, seeded and sliced
1 red bell pepper, stemmed, seeded and sliced
1 yellow bell pepper, stemmed, seeded and sliced
1 medium white onion, sliced
1 zucchini, outer green parts only, cut into 3-by-1/4-inch sticks
3/4 teaspoon smoked paprika
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper
1 large clove garlic, grated
1 tablespoon chopped fresh oregano leaves
Nonstick cooking spray, for the pan
Eight to ten 5- to 6-inch white corn tortillas
One 8-ounce bag shredded Monterey Jack and Cheddar mix
Lime wedges, for serving
Sour cream and salsa verde or roja, for dipping (optional)

Steps:

  • Heat the oil in a 12-inch cast-iron pan over medium-high heat. Add the peppers, onion and zucchini. Season with the smoked paprika, salt and pepper. Toss to coat with the oil. Cook, stirring occasionally, until the vegetables are softened and browning, 10 to 12 minutes. Add the garlic and oregano and stir to combine. Cook until fragrant, 1 to 2 minutes. Turn off the heat.
  • Heat a large nonstick pan over medium-high heat. Grease the pan with the cooking spray. Carefully place a tortilla in the hot pan. Add 3 tablespoons cheese to half of the tortilla, spreading the cheese to the edges and allowing some to spill over to create a cheesy crust. Top with a hearty spoonful of the cooked pepper mixture, then top with another 3 tablespoons cheese. Fold the bare half of the tortilla over the cheese and pepper filling. Press down to flatten with a spatula. Cook until the cheese is melted and crusty and the tortilla is browned, 3 to 4 minutes. Flip and cook for another 2 to 3 minutes. Remove to a serving platter. Season with salt and a squeeze of lime. Repeat with the remaining tortillas, peppers and cheese, wiping down the pan as needed. Serve with sour cream and salsa for dipping, if desired.

ONE-PAN PARMESAN-CRUSTED VEGETABLE QUESADILLAS



One-Pan Parmesan-Crusted Vegetable Quesadillas image

2 ounces (56 grams) freshly grated Parmesan cheese, plus 1 cup for crusting
2 ounces (56 grams) shredded mozzarella
2 ounces (56 grams) shredded Cheddar
2 ounces fresh spinach (about 2 cups), sliced
3/4 cup cooked quinoa
1/2 cup frozen whole kernel corn
1/2 cup drained, canned unsalted black beans, rinsed and drained again
Four 8-inch (20-centimeter) flour tortillas
Kosher salt and freshly ground black pepper
Nonstick cooking spray

Steps:

  • Combine the 2 ounces Parmesan with the mozzarella and Cheddar with your fingers in a small bowl and set aside.
  • Wrap the spinach in paper towels to remove excess moisture. Transfer to a large bowl and add the quinoa, corn and beans. Stir to combine and set aside.
  • Heat a large nonstick skillet over medium heat.
  • Meanwhile, place the tortillas on a clean work surface. Working on only the lower halves, divide 1/2 of the cheese blend among the 4 tortillas; top with the spinach-quinoa filling, then sprinkle on the remaining cheese blend. The cheeses are usually salty enough, but season with salt and pepper, if desired. Fold each tortilla in half to make a half-moon.
  • Spray the preheated skillet with nonstick cooking spray for about 3 seconds to coat. Add 2 of the quesadillas to the skillet and cook until the cheese starts to melt and the tortillas are light brown, about 3 minutes. Transfer the quesadillas, cooked side-down, to a plate. Repeat with the remaining 2 quesadillas.
  • Sprinkle 1/4 cup of the Parmesan into the skillet in a half-moon shape, then place 1 quesadilla, cooked side-up, directly on the Parmesan to create a crust. Continue to cook until the Parmesan crust browns and the cheese filling is fully melted, about 3 minutes. Remove from the heat and repeat with the remaining Parmesan and quesadillas. Serve immediately or make ahead and keep warm (see Cook's Note).

1/2 lb boneless skinless chicken breast, cut into thin strips
1/2 cup salsa
1 medium green peppers or 1 medium red pepper, cut into strips
1/2 cup sliced onion
1 1/2 cups kraft shredded 2% milk reduced-fat sharp cheddar cheese
6 (6 inch) flour tortillas

Steps:

  • Spray large skillet with cooking spray.
  • Add chicken and cook on medium-high heat 5 minutes, stirring frequently.
  • #Add green pepper and onion and cook 4 to 5 minutes or until crisp-tender.
  • Pour in salsa and cook an additional 3 minutes or until heated through.
  • Place 1/4 cup of the chicken mixture and 1/4 cup of the cheese down center of each tortilla then fold tortilla over to enclose filling.
  • Place on preheated griddle or skillet sprayed with cooking spray and cook 2 minutes on each side or until heated through.
  • Fold over or cut-into wedges.
  • Serve with sour cream if desired.
  • You can also add 1/2 cup corn or black beans to the filling.
  • Top with shredded romaine lettuce, diced tomatoes and cilantro.
