CHEESE ENCHILADAS

You won't bring home leftovers when you make this cheese enchilada recipe. With a homemade tomato sauce and cheesy filling, they always go fast. You can substitute any type of cheese you wish. -Ashley Schackow, Defiance, Ohio

Number Of Ingredients 15

2 cans (15 ounces each) tomato sauce
1-1/3 cups water
2 tablespoons chili powder
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1 cup sour cream
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups shredded Monterey Jack cheese
2-1/2 cups shredded cheddar cheese, divided
2 medium onions, finely chopped
16 flour tortillas (8 inches), warmed
Optional toppings: shredded lettuce, sliced ripe olives, chopped tomatoes and additional sour cream

Steps:

  • Preheat oven to 350°. In a large saucepan, combine first six ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 4-5 minutes, stirring occasionally. , Mix sour cream, parsley, salt and pepper; stir in Monterey Jack cheese, 2 cups cheddar cheese and onions. Spread 2 tablespoons sauce over each tortilla; top each with about 1/3 cup cheese mixture and roll up. Place in two greased 13x9-in. baking dishes, seam side down. Pour remaining sauce over top. , Bake, uncovered, 20 minutes. Sprinkle with remaining cheddar cheese. Bake until cheese is melted, 4-5 minutes. If desired, serve with toppings. Freeze option: Cover and freeze enchiladas before baking. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

This is the filling to my Enchilada Sauce Recipe. The amounts of each is just estimates. This all depends on how much you put in each tortilla, how big your tortillas are and if you use just one, two or all three choices. If you make all three you can use toothpicks to mark which one is which. None for one, flat for another and round for the last.

1 (16 ounce) bag cheese, finely shredded
1 (16 ounce) bag cheese, finely shredded
1 small onion, finely chopped
1 lb hamburger, cooked and drained (I use a food processor after cooked to get it very fine.)
1 (16 ounce) bag cheese, finely shredded

Steps:

  • Mix your ingredients, Fill your tortillas with a moderate line of one of the above selections, Fold in half twice, Place in greased cake pan, Sprinkle cheese on top and bake at 350 degrees.

My son needed an enchilada recipe for his Food Science class. He wanted my recipe, but I don't use a recipe per se'. I have guestimated here and I think it should be pretty close to what I make. My enchiladas are comfort food. We have these for New Years because we are usually tired of turkey and ham by then. These can be made all beef or all cheese.

1 lb ground beef
1 small onion, chopped fine
1/8 teaspoon garlic salt
1/4 cup olive oil or 1/4 cup vegetable oil
1/4 cup flour
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
2 tablespoons chili powder
1/2 teaspoon dried basil
1 teaspoon ground cumin
1/4 teaspoon dried coriander
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1 (15 ounce) can tomatoes, pureed in blender
14 ounces chicken broth
1/2 cup water
12 corn tortillas
1/2 lb monterey jack cheese, grated
1/2 lb cheddar cheese, grated

Steps:

  • Brown ground beef with onion and garlic salt just until pink is gone.Remove beef from skillet and set aside.
  • In the same skillet heat the oil. Add the next 11 ingredients and stir over heat until bubbly and spices have released their fragrance.
  • Stir in tomato puree, and stir till well blended. Stir in broth and water. Bring to a boil and lower heat.Taste and adjust seasoning. Leave to simmer until slightly thickened.
  • Preheat oven to 400*.
  • In a casserole dish spoon a couple of tablespoons of the sauce to coat bottom. Pick up one tortilla with tongs and dredge the tortilla through the sauce.
  • Leave the tortilla submerged just enough to soften but not fall apart.
  • Lay tortilla in the casserole and spoon 1/12 of the beef mixture & 1/12 of the Jack cheese. Roll the tortilla over the filling and lay seam side down in the casserole.
  • Repeat with the rest of the tortillas. Pour remaining sauce over all the enchiladas. Sprinkle the Cheddar over the top of the casserole.
  • Bake in 400* oven for 20 minute or until sauce is bubbling and cheese is melted.

When I eat at a Mexican restaurant, I always like to order cheese and onion enchiladas as opposed to the ones with meat in them. I am glad I found this recipe. Whip this recipe up with ingredients you have on hand.

2 onions, chopped
1/2 teaspoon dried oregano
1/4 teaspoon salt
1 (15 1/2 ounce) can beans, such as kidney, rinsed and drained (optional)
2 cups shredded cheddar cheese (or monterey and colby)
1 (8 ounce) can tomato sauce
3/4 teaspoon chili powder
8 corn tortillas or 8 flour tortillas

Steps:

  • Preheat oven to 350 degrees.
  • Grease 1 1/2 quart baking dish.
  • In skillet, heat oil over medium-high heat. Add onions, oregano and salt. Cook, stirring occasionally, until softened.
  • Remove from heat, stir in beans, if using, and 1 1/2 cups cheese. Combine sauce, 2 T water and chili powder.
  • Dip each tortilla into sauce; place on plate.
  • Spoon 1/3 cup cheese-onion mixture down center of tortilla. Roll up, place seam-side down in baking dish. Repeat.
  • Top with remaining sauce and cheese.
  • Bake until hot 20-25 minutes.
