1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
Kosher salt and freshly ground black pepper
1 1/2 tablespoons canola oil
4 slices Swiss cheese
4 slices ripe beefsteak tomato, each 1 inch thick
4 slices American cheese
4 round slices fresh goat cheese, each 1/2 inch thick
1/4 cup freshly grated Parmesan cheese
4 hamburger buns, split; toasted (see page 15), if desired
1 handful of arugula leaves

Steps:

  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
  • Cook the burgers, using the oil (see page 16) and topping each one with a slice of Swiss and a basting cover during the last minute of cooking (see page 21). Add the tomato slices to the grill or pan, cover each with a slice of American, a slice of goat, and some Parmesan. Cover and melt for 1 minute.
  • Arrange some arugula on the bun bottoms and top each with a burger and a tomato slice. Cover with the bun tops and serve immediately.

1 package (2 sheets) puff pastry
1 medium onion
1 lb ground beef
1 1/2 tsp ground sage
2 Tbsp Worcestershire sauce
1 tsp black pepper
1 tsp thyme
1 tsp oregano
1 1/2 tsp ground basil
1 bag (14 oz.) frozen peas
1 bag (14 oz.) frozen corn
1 can Alfredo sauce
2 cups Kraft Shredded Mozzarella Cheese
2 Tbsp salt

Steps:

  • Preheat oven to 350°F degrees. Follow puff pastry direction to thaw and while it is thawing start the following:
  • Finely mince onion (I used a chopper to do it) and put in medium frying pan. Add ground beef, sage, Worcestershire sauce, pepper, thyme, oregano, and basil. Cook on medium high stirring occasionally until browned.
  • Cook peas and corn in a separate pot of boiling water for approx. 8-10 minutes. When meat and peas and corn are done, put into a mixing bowl and mix all ingredients.
  • Warm Alfredo sauce on med-low heat. DO NOT BRING TO BOIL! Add warm Alfredo sauce to meat mix in bowl. Add mozzarella cheese and salt and mix well.
  • Unwrap puff pastry on wax paper and put meat mixture on one pastry. Top with second pastry. Press ends of pastry to "close" edges and fold so that the corners will not open during cooking.
  • Wrap cookie sheet in tin foil and spray with cooking spray. Flip pastry onto foiled pan and put in the oven. Bake for 30 minutes or until pastry is golden brown. Let set for 5 minutes before serving.

1 lb ground beef
1 onion (large, chopped)
1 cup Velveeta cheese
1 (16 ounce) jar alfredo sauce
1 (8 ounce) can crescent rolls
16 ounces egg noodles

Steps:

  • 1. Brown ground beef and onion, preheat oven to 350 degrees F.
  • 2. Cook egg noodles til they are soft.
  • 3. Cube velveeta cheese, and add into a casserole dish, along with alfredo sauce.
  • 4. Strain egg noodles when they are done.
  • 5. Add egg noodles and browned ground beef and onion into casserole dish and stir, til everything is covered in alfredo sauce.
  • 6. As soon as done stirring, place crescent rolls ontop of the mixture.
  • 7. Place in the oven to bake for 30 mins, or until crescent rolls are golden brown on top.
  • 8. Serve warm.
