Steps:
- Heat oven to 350ºF.
- Melt butter in medium saucepan on medium heat. Add flour and mustard; stir. Cook 1 min., stirring constantly. Gradually stir in 2% milk, then evaporated milk; cook 3 to 5 min. or until thickened, stirring constantly. Add 1-1/2 cups cheese; cook and stir 2 to 3 min. or until melted.
- Layer potatoes, onions and cheese sauce in 12 (1-cup) baking dishes sprayed with cooking spray; place on rimmed baking sheet. Cover.
- Bake 1-1/4 hours or until potatoes are tender. Sprinkle with remaining cheese; bake 5 min. or until melted.

- Microwave 1 1/2 pounds small Yukon Gold potatoes, turning halfway through, until tender, 10 to 12 minutes; let cool slightly. Break into chunks. Toss with 2 tablespoons olive oil, 2 smashed garlic cloves, 3/4 teaspoon kosher salt and a few grinds of pepper. Roast on a baking sheet at 450 degrees F, stirring once, until browned and crisp, about 30 minutes. Sprinkle with shredded sharp cheddar and chopped chives.

Steps:
- Preheat oven to 400°F (200˚C).
- Slice the potatoes in half, lengthwise, then slice each half lengthwise three times and across four times, to cube.
- Bring a large pot of water to a boil and drop in chopped potatoes, cook 10 minutes.
- Drain potatoes and mix in ranch, garlic powder, paprika, salt, and pepper.
- Transfer to a 9x13-inch (23x33 cm) baking dish.
- Bake for 30-35 minutes, or until nicely browned.
- While still hot, mix in cheddar and chives.
- Allow to cool for 5 minutes.

Steps:
- Use a big pot.
- Saute chopped onions in margarine til soft but not browned.
- In small bowl, combine flour, salt and pepper.
- Stir flour mixture into onion mixture then add milk and half and half and stir and cook over medium heat until mixture begins to thicken (about 3 minutes).
- Turn off heat.
- Add 1 1/2 cups shredded cheddar to the sauce and stir til melted and smooth.
- Add sliced potatoes and stir well to combine.
- Pour mixture into a 9 by 13 casserole dish that you have sprayed with Pam.
- Cover with foil and bake at 350 for 35 minutes.
- Remove from oven, take foil off and sprinkle reserved 1/2 cup cheese over top (or more as desired).
- Return to oven to bake another 30 minutes or so or until potatoes are soft, cheese is melted and edges begin to lightly brown.
- Let stand a few minutes before serving to allow sauce to thicken.

- Empty the partially thawed bag of Simply Potatoes Garlic and Herb hashbrowns into a large bowl. In small bowl, blend the sour cream and cream of chicken soup together and then pour into the hashbrowns and toss until well mixed. Place hashbrowns in casserole dish.

I used five of my husband's favorite ingredients to create the ultimate curl up on the couch dinner. The soup becomes even better when paired with your favorite bread. We prefer a soft garlic bread to dip into the soup and clean up the last few drops on the bottom of the bowl.

- Cook bacon in a large pot over medium heat until browned. Remove from pan and crumble or dice into small pieces. Do not drain fat.
- Add diced onions to the bacon fat and cook until translucent. Drain onions and then return to the pot.
- Add mashed potatoes and milk to the pot. Whisk until smooth.
- Add bacon and cheddar cheese.
- Increase heat to medium high and stir occasionally until the soup begins to boil.

- Pre-heat oven to 375 degrees Fahrenheit. Line 2 large jelly-roll pans (approximately 17.25 x 11.5-inches in size) with parchment paper. Place the 24, half strips of bacon on prepared pans in a single layer. Bake 5-7 minutes, or until bacon has rendered some of the fat and just starting to brown on the edges, but still flexible. Drain on paper towels; pat to remove excess grease.
- Using a 24-cup, non-stick mini muffin pan, line bottom and sides of each mini muffin cup with a half strip of the par-cooked bacon in a circular fashion, making a well in the center, folding or creasing if needed to fit.
- In a large mixing bowl, beat potatoes, eggs, and 1/2 cup of the cheese with an electric mixer on medium-high speed until smooth and fluffy.
- Transfer potato mixture to a large pastry bag fitted with a large star tip. Pipe potato filling evenly into bacon-lined muffin cups in a spiral fashion (cups will be full and potato spirals will extend beyond the height of muffin cups).
