Ham, Apple, and Swiss Panini image

These ham, apple, and swiss panini are the perfect fall sandwich! Use up leftover ham from the holidays and take advantage of the crisp apples the season has to offer.

8 slices multigrain bread
2 tablespoons mayonnaise
2 tablespoons dijon mustard
4 tablespoons butter (softened)
8 oz. thick-sliced ham pieces
1 small apple (cored and thinly sliced)
8 oz. swiss cheese (grated)

Steps:

  • Preheat panini press (alternatively, you can use a grill pan or skillet if you don't have one).
  • Spread 1/2 tablespoon of butter on each slice of bread. Flip bread over.
  • In a small bowl, mix mayonnaise (2 tablespoons) and dijon mustard (2 tablespoons) together. On the non-buttered side of the bread, spread 1/2 tablespoon of mixture on each slice.
  • On four slices of bread, stack the ham, apple slices, and swiss cheese evenly in that order. Flip the remaining slices of bread butter side up on top to complete the four sandwiches.
  • Add the sandwiches one or two at a time (depending on how big your panini press is) to the press, pressing down firmly for 5 seconds and leaving it to cook for approximately 3 minutes, or until golden brown on the outside and the cheese is melted on the inside.
  • Serve hot off the press!

2 tablespoons unsalted butter, at room temperature
2 Granny Smith apples, peeled, cored and cut into 1/4-inch thick slices
1 tablespoon chopped fresh thyme leaves
8 (1/2-inch) thick slices country-style white bread
1/2 cup whole-grain mustard
2 cups (8 ounces) shredded Gruyere
8 slices (8-ounces) Black Forest ham

Steps:

  • In a 12-inch skillet, melt the butter over medium heat. Add the apple slices and thyme. Cook, stirring occasionally, until the apples are slightly soft, about 4 minutes. Cool for 5 minutes.
  • Preheat a panini press. Spread each bread slice with 1 tablespoon mustard. Arrange 1/4 cup of cheese on each of 4 bread slices and top with 2 slices of ham. Divide the apple mixture evenly on top of the ham. Add the remaining cheese and cover with the remaining 4 bread slices. Grill in the panini press until the cheese has melted and the tops are golden and crispy, about 5 to 6 minutes.

8 slices whole grain bread
1/4 cup honey mustard
2 crisp apples, thinly sliced (I like Braeburn or Fuji or Gala)
8 ounces mild cheddar cheese, thinly sliced
cooking spray

Steps:

  • Preheat panini press on medium heat(or use 2 heavy skillets-one to put on top of the panini while cooking to press it).
  • Lightly spread honey mustard evenly over each slice of bread.
  • Layer apple slices and cheese over 4 slices of bread, using about ½ apple and 2 ounces of cheese for each sandwich. Top each with remaining bread slices. Lightly coat panini press with cooking spray(or coat skillet.
  • Grill each sandwich for 3 to 5 minutes or until cheese has melted and bread has toasted.
  • Remove from pan and allow to cool slightly before serving. Enjoy!

Smoked Cheddar & Ham Panini image

This was adapted from a recipe card picked up in a grocery store. Delicious - great for a cold day, with some soup! Feel free to change up the bread to what you prefer - the original called for marble rye, but I put in what we usually use. You can use other types of ham and regular cheddar, but the flavor of the smoked versions really contrast wonderfully with the sweetness of the onions and apple, so I would recommend trying them, if possible. I'm also putting a range on the meat, because we prefer smaller meat portions (the 1/4 lb), but I know a lot of people who like more meat, so you could easily use up to 1/2 lb, if desired. The original directions called for using a panini grill, but I don't have one, so I'm enclosing both methods.

1/4 large sweet onion, cut into thin slices
2 teaspoons maple syrup
4 slices whole wheat bread
1 tablespoon mayonnaise
1/2 large gala apples, cut into 4 slices
1/4-1/2 lb smoked ham, deli-sliced
2 ounces smoked cheddar cheese, cut into 4 thin slices

Steps:

  • Cook onions until tender in a skillet prepared with non-stick cooking spray over medium-high heat.
  • When onion is browned, add syrup, stirring well, and cook for an additional minute.
  • Allow onion to cool. Spread 2 slices of bread with mayonnaise.
  • Layer remaining ingredients on top, ending with the second slice of bread on each sandwich.
  • Spray both sides of each sandwich with cooking spray before placing on panini grill or in skillet.
  • If using panini grill, grill the sandwiches for about 3 minutes, or until cheese is melted and bread is toasted.
  • If using a skillet, cook sandwich over medium heat for about 2 minutes on each side, flipping once, or until cheese is melted and bread is toasted. Use a second skillet to weight down the sandwich on top.

1 tablespoon plus 1 teaspoon yellow mustard
1/2 pound sharp cheddar cheese, thinly sliced
1/2 pound ham, thinly sliced
1 medium Fuji apple, cored and cut into 1/4-inch-thick rings
2 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 375 degrees. Spread half the bread slices with mustard. Layer with cheddar, ham, apple, and more cheddar, dividing evenly. Top with remaining bread slices. Lightly butter both sides of sandwiches.
  • Heat a large nonstick skillet over medium heat. Working in batches, cook sandwiches, turning once, until bread is golden, about 4 minutes per side. Transfer sandwiches to a rimmed baking sheet. Bake in oven until cheddar is melted, about 5 minutes. Cut each sandwich in half on the diagonal, and serve warm.

1 apple, sliced thin (preferably a sweet variety with soft skin)
1 slice thick cheddar cheese
2 -3 slices thin honey-roasted ham
1 -2 tablespoon apple butter, sweet brand
thyme
rosemary

Steps:

  • Core and slice apple thinly, leaving the skin on.
  • Place cheese on one slice of bread.
  • Place Ham on other slice of bread.
  • Layer Apples, about 5-6 pieces, on top of cheese.
  • Spread Apple Butter on Ham.
  • Enclose the sandwich.
  • Sprinkle a pinch of thyme and rosemary on both sides of bread and press in a Panini or George Foreman grill until cheese is melting and both sides are toasted.
