1 stick salted butter
1 cup packed dark brown sugar
1/2 cup heavy cream
2 bananas
1/2 cup chopped walnuts or pecans
1/2 cup dark rum
Dash cinnamon
Vanilla Ice Cream, for serving

Steps:

  • Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
  • Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
  • Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
  • Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

1 pint vanilla ice cream
2 tablespoons butter
1/2 cup dark-brown sugar
1/4 cup dark or gold rum
3 bananas, peeled, halved crosswise and then lengthwise

Steps:

  • Set ice cream out to soften. Meanwhile, in a large skillet, heat butter, sugar, and rum over medium-low. Cook, stirring occasionally, until smooth and bubbly, 4 to 6 minutes.
  • Add bananas, and cook, gently swirling skillet, until bananas are just warmed through, 1 to 2 minutes. Scoop ice cream into bowls, and top with bananas and caramel sauce. Serve immediately.

This is a tasty non-alcoholic version of Bananas Foster that I encountered while at college and have adapted for when I want Bananas Foster but have no alcohol to make it with.

1 tablespoon butter
2 tablespoons brown sugar
1 banana
4 scoops vanilla ice cream
whipping cream (optional)

Steps:

  • Slice up a banana into quarter inch slices.
  • Then melt butter and brown sugar in a frying pan, making sure to stir as you do so.
  • After a minute or so, add the sliced banana and stir to make sure the banana gets coated in the sauce.
  • Let the banana fry, while you quickly scoop out ice cream into two bowls.
  • Pour topping over ice cream and if desired garnish with whipped cream.
  • Immediately serve.

3 tablespoons butter
3 tablespoons brown sugar, packed
1/4 teaspoon cinnamon
1 pinch ground nutmeg
1/3 cup dark rum
2 tablespoons banana liqueur
vanilla ice cream

Steps:

  • Cut bananas in half lengthwise; set aside.
  • In skillet or chafing dish, melt butter over medium heat; stir in sugar until melted.
  • Add bananas, cut side down; cook, turning once, for about 5 minutes or until just barely tender.
  • Sprinkle with cinnamon and nutmeg.
  • Pour rum and banana liqueur over bananas, shaking pan to distribute liquid.
  • Ignite with long wooden match (Be Careful!).
  • Using long handled spoon baste bananas with flaming sauce until the flames subside.
  • Serve immediately with ice cream.

I adapted this recipe from one I saw online at labellecuisine.com I used all extracts because I'm underage. I have NO clue what Bananas Foster tastes like, so I can't vouch for flavor authenticity. The final product tasted more like a banana cream pie and has a REALLY creamy texture. Frankly, *I* prefer a cakier cheesecake myself, but I enjoyed this. My first attempt at a cheesecake too! Not bad. The recipe doesn't mention a water bath, but I used one anyway. I also used black walnut extract for half of the vanilla because I've seen BF recipes that use nuts (namely pecans). Next time, I'll add more cinnamon in the filling and crust because I love cinnamon.

1 graham cracker crust (1-1/2 Ingredient Fiber Crust see my recipes)
24 ounces fat free cream cheese
6 teaspoons non-nutritive brown sugar substitute (Sweet 'n' Low Brown) or 3/4 cup dark brown sugar
5 teaspoons cornstarch
3/4 teaspoon ground cinnamon
8 egg whites (same thing either way) or 1 cup fat free egg substitute (same thing either way)
2/3 cup pureed banana
3 tablespoons banana Schnapps or 3/4 teaspoon banana extract
3 tablespoons light rum or 3/4 teaspoon rum extract
2 teaspoons vanilla extract (I used 1 tsp vanilla and 1 tsp black walnut)

Steps:

  • Preheat oven to 350*F.
  • In a large bowl combine cream cheese, brown sugar, cornstarch and cinnamon.
  • Beat with an electric mixer until smooth.
  • Add egg whites, two at a time, mixing to combine after each addition.
  • Beat in puréed banana, banana schnapps, rum and vanilla extract.
  • Pour the cream cheese mixture over the crust.
  • Bake at 350ºF.
  • for 15 minutes.
  • Lower the temperature to 225ºF.
  • and bake for 1 hour and 10 minutes or until the center no longer looks wet or shiny.
  • (Do NOT do the"knife test"- it only made my cake crack ALL over) Remove the cake from the oven and run a knife around the inside edge of the pan.
  • Turn the oven off; return the cake to the oven for an additional 30 minutes.
  • (I didn't notice this step, but the cake turned out all right, but I'll be sure to remember this NEXT time!:) Chill, uncovered, overnight.
  • Enjoy as is or top with caramel sauce or even the REAL Bananas Foster!
