CHAYOTE SHOOT STIR FRY
Chayote grows as a rambling vine. The tender tips and young leaves are edible and can be used in salads and stir fries.

- Wash and clean Chayote shoots, removing tendrils and hard stems. Break stems into two-inch pieces. In a large pot bring two quarts of water to a boil.
- Blanch chayote shoots in boiling water for 1 minute. Drain and cool in ice water.
- In a wok or large frying pan, heat oil and butter. Add garlic and lightly brown over medium heat, stirring constantly. Do not let butter smoke. Add drained shoots and stir fry about three to four minutes; add salt and pepper flakes to taste. Serve immediately.
- Pepper flakes may be omitted for people who do not like spicy food.

- Peel the chayote using a peeler or small knife. Wear food-grade gloves or oil your hands beforehand to prevent the white substance from irritating your skin. Slice in half lengthwise, then slice lengthwise again. Slice into small strips or to your preferred size. Prepare the rest of the ingredients.
- Heat oil in a pan over medium heat. Add onions and garlic. Stir-fry until fragrant and translucent. Add ground pork. Cook until no longer pink, about 5 minutes. Season with fish sauce. Stir a bit then add tomatoes, cook until softened.
- Add shrimps, oyster sauce and carrots. Stir to combine. Cook for 1 to 2 minutes then add sliced chayote. Stir everything together and let the vegetables absorb all the flavor.
- Pour water. The amount depends on how “soupy” you want the dish to be. Cover with lid and then remove as soon as it starts to boil to avoid overcooking the vegetables.

- Using a vegetable peeler, peel the skin off the chayote. If your chayote has ridges on the sides, you may need to use a paring knife to cut off the skin from the ridges.
- Slice off the top of the chayote. Place the cut side down and slice the chayote in half. Slice off any skin that’s still stuck to the bottom ridges of the chayote. Dig out the seed with a knife or spoon.
- Slice each half of the chayote lengthwise, so that you now have 4 sections. Slice each section into 1/4 to 1/2-inch slices. Give the chayote slices a quick rinse and drain them.
