Wild Rocket (Arugula) and Parmesan Salad image

Quick, easy, healthy, looks like the salad dishes you'd find in an upscale restaurant. You can serve it as a salad before the meal or on the plate with the meal.

2 (5 ounce) packages arugula
¼ cup roughly chopped cilantro
1 teaspoon fresh lemon juice
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 teaspoon red pepper flakes
1 pinch ground black pepper
¼ cup shaved Parmesan cheese

Steps:

  • Toss arugula and cilantro together in a large salad bowl. Drizzle arugula mixture with lemon juice, olive oil, and balsamic vinegar. Sprinkle with red pepper flakes and black pepper; toss salad again. If desired, add more lemon juice, olive oil, balsamic vinegar, red pepper flakes, and black pepper to taste.
  • Sprinkle salad with Parmesan cheese shavings and toss again to serve.

Recipe video above. A classic side salad that makes an appearance on fine dining restaurants and local bistros! It goes with virtually every Western dish, with the pepper flavour of rocket lettuce making it ideal to pair with rich meat-heavy or carb heavy mains like pastas and roasts.

150g / 5 oz rocket / arugula ((4 big handfuls))
15g / 0.5oz parmesan (, shaved finely using vegetable peeler)
1 tbsp balsamic vinegar
2 1/2 tbsp extra virgin olive oil
1/2 tsp each salt and pepper

Steps:

  • Shake Balsamic Dressing in jar.
  • Place rocket in a bowl, drizzle with Dressing then toss.
  • Transfer to serving bowl. Shave over parmesan. Serve immediately.

This delicious, easy-to-make mushroom salad looks really impressive at dinner parties

200g small firm ceps
2 tbsp lemon juice
2 tsp water
75ml extra-virgin olive oil
50g wild rocket
100g parmesan (or vegetarian alternative), shaved or grated

Steps:

  • Carefully wipe ceps with damp kitchen paper. Finely slice, then lay them flat on a large plate. Mix lemon juice with water and seasoning, then whisk in extra virgin olive oil. Brush about half of this dressing over mushrooms with a pastry brush. Sprinkle with sea salt and grind over a little black pepper. Marinate for about 10 mins. Toss wild rocket and Parmesan shavings with the remaining dressing, season. Divide between four plates, then gently place ceps over the top.
