This sugar cookie dates back to a Swedish woman born in 1877! Her daughter, Esther Davis, shared the recipe with me and she came up with all the exact measurements, since the original cookies were mixed by feel and taste. These are my favorite cookies and I hope they'll become yours as well. -Helen Wallis, Vancouver, Washington

1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Additional sugar

Steps:

  • Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and baking soda; gradually beat into creamed mixture., Shape into 1-in. balls. Roll in additional sugar. Place on greased baking sheets; flatten with a glass. Bake until set, 10-12 minutes. Remove to wire racks to cool.

I just made these for my mother's annual Christmas Cookie Exchange - they turned out great and so seasonal if you put green and red sugar on top - perfect for the holiday! Recipe came from Colorado Colore: A Palate of Tastes - cooking time does not include hour to chill . . .

Number Of Ingredients 10

4 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
1 cup butter, softened
1 cup vegetable oil
1 cup sugar
1 cup confectioners' sugar
2 eggs
1 teaspoon vanilla extract

Steps:

  • Sift flour, baking soda, cream of tartar and salt together.
  • Beat butter, oil, sugar and confectioner's sugar in separate mixing bowl until creamy.
  • Add eggs and vanilla and beat until smooth.
  • Add dry ingredients gradually and beat until well blended.
  • Chill, covered for 1 hour.
  • Shape dough into 1 inch balls and coat balls with additional sugar.
  • Arrange balls on ungreased cookie sheet.
  • Flatten with bottom of glass dipped in sugar. Press in additional color sugar for holiday decoration.
  • Bake at 350 degrees for 8-10 minutes or until lightly brown.
  • Cool and store in airtight container.
  • For variations: Add 1 tsp of almond extract or lemon extract, add 1/2 crushed almonds or hazelnuts, add 1 TBS finely chopped lemon zest, add 1 TBS crushed peppermint candies, roll in colored sugar for holidays, or use decorative glass to create pattern on each cookie.

1 cup sugar
1/2 cup canola oil mayonnaise (spread)
1 cup canned pumpkin
1 egg
1 teaspoon orange zest
2 cups oats, uncooked
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pitted prune
1/4 cup chopped walnuts
1/2 cup powdered sugar
1 tablespoon orange juice

Steps:

  • Beat sugar and oil in large bowl until well blended; add pumpkin, egg and orange peel and beat well.
  • Add combined oats, flour, cinnamon, baking soda and salt, stir well.
  • Fold in prunes and walnuts.
  • Drop by tablespoonfuls about 2 inches apart onto cookie sheet lightly coated with cooking spray.
  • Bake at 350 degrees 11-13 minutes or until lightly browned.
  • Cool completely, then drizzle glaze in strips. (blend powdered sugar and orange juice to make glaze).
