BIRTHDAY CAKE WAFFLES



Birthday Cake Waffles image

These super fun waffles-soft on the inside, crisp on the outside-taste just like cake batter! They are quick to whip up anytime, but would make birthday mornings feel even more special. -Andrea Fetting, Franklin, Wisconsin

Yield 6 waffles.

Number Of Ingredients 17

1 cup all-purpose flour
1 cup (about 5 ounces) confetti cake mix or flavor of choice
2 tablespoons cornstarch
3 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons rainbow sprinkles, optional
2 large eggs, room temperature
1-3/4 cups 2% milk
3/4 to 1 cup plain Greek yogurt
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
CREAM CHEESE FROSTING:
4 ounces softened cream cheese or reduced-fat cream cheese
1/4 cup butter, softened
1-1/2 to 2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 300°. Combine the first 5 ingredients and, if desired, rainbow sprinkles. In another bowl, whisk eggs, milk, yogurt and extracts. Add yogurt mixture to flour mixture; mix until smooth., Preheat waffle maker coated with cooking spray. Bake waffles according to manufacturer's directions until golden brown. Transfer cooked waffles to oven until ready to serve., For frosting, beat cream cheese and butter on high until light and fluffy, 2-3 minutes. Gradually beat in confectioners' sugar, 1/2 cup at a time, until smooth. Beat in vanilla. Add enough milk to reach desired consistency. Spread over warm waffles. For a cakelike look, cut waffles into fourths and stack them; decorate with birthday candles.

A family tradition in our home. We like to serve a special breakfast in our home to honour a birthday or some other special occasion. We always have these on Christmas morning too! Strawberries or cherry pie filling and whip cream are some of our favourite toppings.

Yield 5 round waffles

Number Of Ingredients 7

2 large eggs
2 cups flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon sugar
4 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Heat waffle iron Beat eggs in large bowl.
  • Beat in remaining ingredients until smooth.
  • Pour 2/3 cup of batter into center of hot waffle iron (or recommended amount of batter) and close lid.
  • Bake 5 minutes or until steaming stops.
  • Carefully remove waffle.
  • Repeat with remaining batter.
  • Serve with your favourite toppings such as maple syrup, cool whip, fruit etc.

A favourite around our house! We serve it over Celebration Waffles Recipe #74394 and top it with Whipped Cream! Yum!

Number Of Ingredients 4

1 (425 g) package frozen strawberries
2 teaspoons sugar (to taste)
4 teaspoons cornstarch, use less for a thinner sauce, more for a thicker sauce
1 teaspoon vanilla

Steps:

  • Place all ingredients in a small saucepan.
  • Bring to a boil over medium heat and cook until mixture thickens.
  • Remove from heat and serve over waffles warm or serve chilled over waffles if desired.
  • Make a great ice cream topping as well!
