ROASTED CURRIED CAULIFLOWER AND ONION



Roasted Curried Cauliflower and Onion image

A delicious, simple dish of roasted curried cauliflower and onion with the flavors of India. It is quite flavorful so I recommend serving it with a milder main dish, with some plain yogurt on the side and chapatis (Indian flat bread).

12 cups cauliflower florets
2 large onions, quartered
1 teaspoon coriander seeds
1 teaspoon cumin seeds
½ cup olive oil
⅓ cup red wine vinegar
4 ½ teaspoons curry powder
1 tablespoon minced garlic
1 tablespoon paprika
¼ teaspoon chili powder
¼ teaspoon ground cumin
1 ½ teaspoons salt
freshly ground black pepper to taste
⅓ cup chopped fresh cilantro

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place cauliflower florets in a large roasting pan. Pull apart onion quarters into separate layers and set aside.
  • Heat a small skillet over medium heat. Cook and stir coriander seeds and cumin seeds in the hot pan until slightly darkened, about 5 minutes. Remove from heat, crush coarsely with a mortar and pestle, and transfer to a medium bowl.
  • Add oil, vinegar, curry powder, garlic, paprika, chili powder, cumin, and salt to the crushed seeds; whisk to combine. Pour dressing over cauliflower; toss to coat. Spread in a single layer in the pan and sprinkle with pepper.
  • Roast in the preheated oven, stirring occasionally, about 20 minutes. Add onions and stir thoroughly. Continue to roast, stirring occasionally, until vegetables are tender, about 15 minutes more. Garnish with cilantro.

This creamy, vegetarian soup, from Becky Lovatt, is a great way to use up leftover chestnuts, or use freshly roasted chestnuts for a more intense flavour

½ tbsp olive oil , plus a drizzle to serve
1 large onion , finely chopped
1 large cauliflower (about 600g/ 1lb 5oz), cut into florets
250ml milk
850ml vegetable stock
150ml double cream
200g pack vacuum-packed chestnuts , roughly chopped
25g grated parmesan or vegetarian alternative, to serve

Steps:

  • Heat the oil in a large saucepan and add the onion. Cook over a gentle heat for 8-10 mins until the onion softens. Add the cauliflower, milk and stock. Bring to a simmer, cooking for 10-12 mins until the cauliflower is tender.
  • Add the cream, season well and bring back to the boil. Take off the heat, throw in the chestnuts and blend with a hand blender until smooth. Taste and add more seasoning, if you like. To serve, top with shaved Parmesan, black pepper and a drizzle of olive oil.

2 tbsp olive oil
2 large red onions , trimmed at the root and cut into thin wedges
2 tbsp light muscovado sugar
2 tbsp balsamic vinegar
375g sheet ready-rolled puff pastry
100g feta cheese , crumbled
175g black olive , pitted and chopped
1 tbsp extra-virgin olive oil

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Heat the oil in a frying pan, then gently fry the onions for about 10 mins until golden and soft. Add the sugar and balsamic vinegar, then cook for a further 5 mins until the juices are reduced and syrupy. Leave to cool.
  • Unroll the puff pastry onto a baking tray. Score a line a finger-width in from the edge all the way around, then cover the middle with the onion mix. Scatter the feta and olives over. Season and drizzle the extra virgin olive oil over the topping.
  • Bake for 15 mins or until the pastry is risen and golden and the base is crisp. Cut into wedges and serve with a green salad.

ROASTING THE CAULIFLOWER. PREHEAT THE OVEN TO 425. BAKE THIS FOR 15 MINUTES. TURN THE CAULIFLOWER OVER AND ROAST ANOTHER 15 MINUTES. TAKE OUT AND LET COOL
1 small head cauliflower, clean and slice. separate into 1" slices.
3 1/2 Tbsp olive oil
1 Tbsp truffle oil (i used white truffle oil)
salt and pepper to taste
CARAMELIZING THE ONIONS
1 large onion (use vidalia if possible) cut in half and slice thin.
1 1/2 Tbsp good olive oil
TART DOUGH:
1 1/4 c ap flour
1 Tbsp cornstarch....plus 2 more teaspoons!
1/4 tsp salt
6 Tbsp butter, cold,diced in
1 egg
INSIDES:
2 large eggs
1 (7-8) oz marscapone cheese
1/2 c whipping cream
1/4 tsp white pepper
pinch ground nutmeg
1 c grated guyere cheese
1/3 c parmesan cheese

Steps:

  • 1. Preheat oven to 450F. Toss the cauliflower in the oil. Spread out onto a non stick baking sheet. Season with salt and pepper. Cook for 15, then flip. Cook 15 minutes more and remove from oven.
  • 2. In a good skillet, bring 1 1/2 tbps of good olive oil to a shimmer. Add thin sliced Vidalia onions, add in a pinch or two of salt and pepper and stir, stir, stir...for about 30 minutes until they turn a beautiful golden brown. Don't ignore those fronds.
  • 3. MAKE UP THAT DOUGH: I really hate working with pastry, but this was pretty harmless.
  • 4. I used a whisk: Flour, cornstarch, salt and butter. Then add in the egg. I lost my pastry blender in the move to the lower 48 and had to use a fork....gave that up quick and used my grandma's fingers to get the pea sized effect I needed.
  • 5. Smash that dough all together and roll it thin. Yes, I cheated and used plastic wrap as a medium. Transfer the dough to the tart pan and press in. Now lightly coat the dough with 1 TBSP Dijon mustard, bottom and sides.
  • 6. Layering the Stuff: After pressing in the tart dough and brushing the bottom and sides with dijon, add in the onions. Top with cauliflower.
  • 7. In a bowl, mix the eggs, marscapone, cream, white pepper, nutmeg and Guyere. Pour over the top of the tart. I had to use my hands to redistribute the cheesiness.
  • 8. Top with 1/3 cup Parmesan cheese. Bake 350F for 40 minutes.

  • For the pastry, pulse together the flour, thyme, a pinch of salt and the chilled butter in a food processor to make large crumbs. Sprinkle over 3 tbsp cold water and pulse again to bring the mix together to make a dough – use another tbsp water if it’s a bit dry. (Alternatively you can do this by hand in a mixing bowl – use your fingertips to rub in the butter, then use a dinner knife to mix in the water.) Tip out onto a sheet of cling film, shape into a ball, then wrap the pastry in the cling film and flatten it with your palms to make a disc. Chill the pastry in the fridge for 30 minutes.
  • Heat a glug of oil in a large frying pan and fry the onion over a low-medium heat for 20 minutes until softened and slightly caramelised. Add a pinch of salt and the sugar and cook for another 5 minutes. Set aside. 3 Meanwhile, in another frying pan (with a lid), heat the butter and fry the cauliflower florets for 5 minutes, turning, until golden. Transfer half to a plate and set aside, then add the bay leaf and milk to the pan and simmer with the lid on for 10 minutes or until tender. Scoop out the cauliflower (discard the bay) and whizz in a food processor with just enough of the cooking liquid to make a purée (or do this in a bowl with a stick blender). Discard the remaining liquid. Pour the pureé into a large jug or bowl and leave to cool.
  • Heat the oven to 200°C/180°C fan/gas 6. Roll out the chilled pastry on a lightly floured work surface to roughly the thickness of a £1 coin. Carefully use your rolling pin to lift the pastry and unroll it over the tin. Line the base and sides of the tart tin with the pastry, pressing it into the edges and flutes. Trim any excess with a sharp knife, leaving a small overhang. Prick the base a few times with a fork, line the case with foil, then fill with baking beans or uncooked rice. Chill for another 10 minutes.
  • Bake the tart case for 20 minutes, then remove the foil and baking beans/rice and return to the oven for 6-8 minutes until the pastry is golden and feels sandy to the touch. Take the tart case out of the oven and turn the temperature down to 170°C/150°C fan/gas 3½.
