HOT CAULIFLOWER WINGS
Spicy and crispy on the outside, tender and juicy on the inside. Serve these cauliflower wings with a vegan ranch or blue cheese dressing.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Line a cookie sheet with parchment paper.
- Mix flour, paprika, salt, and pepper together. Add enough almond milk to create a slightly thick, soupy texture.
- Place bread crumbs in a shallow bowl. Dip cauliflower pieces one at a time into the batter, then roll in bread crumbs. Place on the prepared cookie sheet.
- Bake in the preheated oven until starting to brown, 15 to 20 minutes.
- While 'wings' are baking, melt margarine and whisk together with hot sauce.
- Reduce oven temperature to 425 degrees F (220 degrees C). Dip 'wings' into the sauce and place back on the cookie sheet; continue baking for 10 to 15 minutes. Serve immediately.

- Preheat oven to 450 degrees. Line a baking sheet with foil and spray with nonstick cooking spray. Wash the cauliflower and cut into bite-sized pieces. In a medium bowl, blend flour, water, hot sauce, garlic salt and dried onion.
- Evenly coat each piece of cauliflower in the batter. Place coated cauliflower on prepared baking sheet in a single layer. Bake for 15 minutes, just until the batter hardens.
- Sauce: Mix together hot sauce, butter and salt. When the cauliflower has finished baking, remove it from the oven and evenly coat each piece with the sauce. Bake an additional 5-7 minutes until the sauce has somewhat dried and the cauliflower is crispy. Let cool before serving. Serve with Ranch dressing. Refrigerate leftovers.
BUFFALO CAULIFLOWER

- Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
- Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put back in the oven for 8-10 mins.
- For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some celery sticks for dipping.

- Preheat your oven to 450°F. Chop up your cauliflower into bite sized pieces.
- In a small bowl, combine the flour, spices, salt, pepper, and milk. In a separate bowl, pour in the panko bread crumbs.
- Dip your cauliflower pieces into the wet mixture, then into the breadcrumbs. Set the pieces on a baking sheet lined with parchment paper. Bake for 20 minutes flipping halfway through.
- In a separate bowl, combine the hot sauce with cream. Once the cauliflower is done, dip the pieces into the sauce and let it sit for a minute.
- If desired, put the cauliflower back into the oven for 5-10 minutes at 400°F.
- Serve hot with ranch, if desired.

- Preheat the oven to 450˚F (230˚C). Line a baking sheet with parchment paper.
- In a large bowl, add the flour, paprika, garlic powder, salt, pepper, and milk, and stir until well-combined.
- Break the head of cauliflower into florets, about 1½-inches wide. Add the cauliflower florets to the batter, making sure each piece is evenly coated. Arrange the coated cauliflower on the baking sheet. Bake for 20 minutes, flipping halfway.
- Meanwhile, in a small bowl, combine the buffalo sauce, coconut oil, and honey and stir until evenly combined. Brush the buffalo sauce mixture on the cauliflower and bake for another 20 minutes.
