2 (12 ounce) bags frozen cauliflower
1 small yellow onion
2 tablespoons butter

Steps:

  • Chop onion and saute in butter until clear.
  • Chop cauliflower and corned beef into small pieces, food processor works great, add to onions and brown. Serve.

1 tablespoon canola or vegetable oil
1/2 pound of cooked corned beef
1 cup fresh or frozen cauliflower florets
1 scallion
1/2 cup chicken broth
1 large egg

Steps:

  • Dice the corned beef into 1/2 inch chunks
  • Chop the scallion
  • Saute the corned beef, cauliflower, and scallions in oil over medium heat for 2-3 minutes
  • Pour in the chicken broth and cover. Let this cook for 5 minutes
  • Add the egg and cook covered for 1-2 minutes depending how you like your egg
