This is a sweet and tangy vinaigrette that can be used on salads, meats, and grilled vegetables.

2 red bell peppers
2 yellow bell peppers
¾ cup red wine vinegar
1 cup extra virgin olive oil
1 teaspoon salt

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil.
  • Cut the peppers in half from top to bottom; remove the stem, seeds, and ribs, then place the peppers cut-side-down onto the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has blackened and blistered, about 5 minutes. Place the blackened peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Once cool, remove the skins and discard. Transfer the roasted peppers to a blender or food processor. Add the red wine vinegar, olive oil, and salt; process until smooth.

1/3 cup Greek yogurt (or sour cream)
3 tablespoons lemon juice
1 tablespoon mild vinegar (white wine, white balsamic, rice, or apple cider vinegar)
1 tablespoon Dijon mustard
2 cloves garlic (minced)
1 teaspoon coarse ground black pepper*
1/2 teaspoon salt (or to taste)

Steps:

  • Add all the ingredients to the jar of a blender and whir until blended.
  • If needed, thin with 1-2 tablespoons of water as needed for pouring - leave as is for using as a dip.

1 teaspoon black pepper
1 teaspoon salt
1 teaspoon Dijon mustard
1 egg yolk
1/3 cup red wine vinegar
1/2 cup white cider vinegar
2 cups salad oil
1 pinch curry powder
2 teaspoons dried thyme
2 teaspoons dried oregano

Steps:

  • In a mixing bowl, combine the pepper, salt, mustard, egg yolk, and vinegars.
  • Whisking constantly, gradually add the oil slowly and gradually until the dressing is emulsified and becomes creamy.
  • Whisk in the curry powder, thyme, and oregano.
  • Chill in refrigerator for at least one hour before serving, so that the herbs can release their flavor into the mixture.
