Time 2h25m

Number Of Ingredients 16

5 dried guajillo chiles, (seeds removed)
3 dried ancho chiles, (seeds removed)
2 arbol chiles, (seeds removed if you want a mild spice level)
3 cups hot water
1 1/2 teaspoon coarse sea salt
3 teaspoons chili powder
2 teaspoons cumin powder
1 teaspoon minced garlic ((about 2 cloves))
1 small portion Abuelita Mexican chocolate ((about 1/8 of tablet - 8 grams))
2 1/2 pounds pork shoulder, (cut into large 4-inch chunks)
1 tablespoon coarse kosher salt
1 teaspoon coarse ground black pepper
2 tablespoons olive oil
4 cups chicken broth ((or beef or vegetable broth))
3 15-ounce cans white hominy, (drained and rinsed (about 4 cups))
1 tablespoon dried oregano

Steps:

  • In a large bowl, combine the dried chiles and 3 cups of hot water. Cover the bowl with a large plate or aluminum foil, and let the chiles soak for about 5-10 minutes, until softened.
  • Transfer the softened chiles and the water they soaked in into a large blender. Add the salt, chili powder, cumin powder, minced garlic and Mexican chocolate. Blend until completely smooth.
  • Season the pork with salt and black pepper. Heat a large pot or Dutch oven over medium-high heat. Add in the cooking oil and then the pork. Sear on all sides until nicely browned.
  • Add the red chile sauce and scrape the bottom of the pot with a wooden spoon to loosen all the brown bits.
  • Add the chicken broth and stir until the red chile sauce and broth are fully mixed together. Bring the pot to a boil, reduce heat to a low simmer and cover. Cook for 2 to 3 hours, until the pork is fall apart tender.
  • Shred the pork with a fork or spatula (it should fall apart very easily). Add the hominy and dried oregano. Stir to combine. Bring to a boil and remove from heat. Taste and season with more salt, if necessary.
  • Serve with toppings such as finely shredded cabbage, cilantro, lime juice, thinly sliced radishes, diced onions, dried oregano and red pepper flakes.

RED PORK POSOLE WITH PICKLED ONIONS AND QUESO FRESCO

Red Pork Posole with Pickled Onions and Queso Fresco image

Provided by Rachael Ray : Food Network

Time 3h35m

Yield 4 servings

Number Of Ingredients 35

4 pounds boneless pork shoulder
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 onion, root end attached and sliced into thin wedges
1 large carrot, peeled and sliced on an angle
2 to 3 small ribs celery (from the heart), sliced on an angle with greens attached
1 small bulb fennel, sliced
4 large cloves garlic, sliced
Small handful sprigs fresh thyme, leaves stripped
2 fresh bay leaves
1 1/2 cups dry white wine
4 cups chicken stock
1 cup cider vinegar
1/2 cup water
1/4 cup sugar
Kosher salt
1 teaspoon coriander seeds
2 red onions, cut into 1/4-inch rings
1 jalapeno, sliced
2 Fresno peppers, sliced
4 ancho chile peppers
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, chopped
1 tablespoon smoked sweet paprika
1 tablespoon chile powder
1 1/2 teaspoons ground cumin
Kosher salt and freshly ground black pepper
2 (14-ounce) cans hominy, rinsed and drained (about 3 cups)
A handful fresh cilantro, leaves picked and chopped
2 cups chicken or vegetable stock
1 generous tablespoon agave syrup or honey
2 limes
Queso fresco or other mild cheese, for topping
Warm, charred flour or corn tortillas, for serving

Steps:

  • To make the braised pork: Preheat the oven to 350 degrees F.
  • Pat the pork dry of any juices and generously season with salt and pepper. Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Place the pork in the pot and brown well on all sides. Remove the pork and reduce heat to medium, add the onion, carrot, celery, fennel, garlic, thyme, bay leaves, salt, and pepper. Cook to soften the vegetables, about 10 minutes, then deglaze the pot with the wine, scraping up the bits stuck to the bottom of the pot. Add the chicken stock and stir, slide the pork back into the pot and bring liquids to low boil. Cover the pot and place in the oven for 2 to 2 1/2 hours, turning the meat 1/2 way through cooking. Keep the pork in the oven until the meat is tender and falls apart when pulled at with a fork.
  • Remove the pork from the pot, place on a platter, and when cool enough to handle, pull the meat apart with 2 forks, divide the meat and reserve one half. Strain the cooking liquids and add to the reserved pork.
  • To make the pickled onions and chiles: In a saucepan over medium-high heat, add the vinegar, water, sugar, 1 teaspoon salt, and coriander seeds, and bring to a boil, stirring until the sugar is dissolved. Arrange the onions and pepper rings in a small container with a tight-fitting lid and pour the brine over the top. Cool, cover, and store chilled for a minimum of several hours and up to several days. Cook's Note: The pickled onions and peppers make powerful companions to the smoky mild stew.
  • To make the red posole: Seed and stem the ancho chiles. Place the peppers in a pot and cover with stock, add a little water, if necessary, to cover. Reconstitute the peppers by bringing the liquids to a low boil, and then reduce the heat to simmer, and cook until the peppers are soft. Carefully transfer the peppers and their liquids to a food processor and process until smooth.
  • Meanwhile, heat about 2 tablespoons olive oil, a couple turns of the pan, in a skillet over medium heat, and add onions, garlic, and season with paprika, chile powder, cumin, salt, and pepper. Cook until the vegetables are very soft, 10 to 12 minutes, stir in the pepper puree, hominy, cilantro, 2 cups chicken stock, honey, the juice of 1 lime, and 1/2 the pulled pork. Add just enough water to form stew as loose or thick as you like, 1 to 2 cups additional liquid. Cool and store for a make-ahead meal.
  • To serve, heat the stew over medium heat. Once hot, spoon the stew into shallow bowls and top with pickled onions and jalapenos, queso fresco, and serve with warm charred tortillas for dipping and wrapping.

CASA CHIMAYO RED POSOLE

Casa Chimayo Red Posole image

Provided by Food Network

Categories     main-dish

Time 3h30m

Yield twelve 10-ounce portions

Number Of Ingredients 13

2 to 3 pounds pork shoulder
1 teaspoon salt
1 bay leaf
1 onion, chopped fine
2 to 4 cloves garlic, minced
1 teaspoon ground cumin
10 to 12 Casa Chimayo red chile pods* (see Cook's Note), rinsed, stems and seeds removed
4 cloves fresh, peeled garlic
Salt
1 pound posole, dried and soaked overnight, or frozen and defrosted** (see Cook's Note)
1 onion, quartered
1 teaspoon salt
Optional garnishes: sliced limes, chopped fresh cilantro, finely chopped onion, oregano, cubed avocado, or grated cheese

Steps:

  • You will essentially be preparing this recipe in three stages: pork, chile and posole. These are then combined into the final posole.
  • For the pork: Place the pork shoulder in a pot and cover with water. Add the salt, bay leaf and onion. Bring to a boil, and then cook over medium heat until tender and falling off the bone, about 1 1/2 hrs.
  • Remove the meat from the broth and let cool; reserve the broth for later. Pull the meat from the bones and cut into bite-size pieces.
  • For the chile: Put the chile pods in about 2 cups of the hot broth (enough to allow the pods to puree easily in a blender) and let soak until soft, about 20 minutes.
  • Put the broth, pods and garlic in a blender and blend until smooth. (Do not fill the blender more than halfway with liquid.) Add salt to taste and set aside.
  • For the posole: Drain and rinse the posole. Put the posole in a cooking pot and cover with water; use about 2 parts water to 1 part posole. Add the onion and salt. Bring to a boil, and then lower the heat and simmer until the posole has started to "bloom", 1 to 1 1/2 hours. The posole will swell and start to resemble popcorn, but will still be chewy. At this point, add the pork, chile and any remaining broth into the posole and let it finish cooking. The key to a successful posole is watching for it to finish blooming. Posole is fully cooked when it has opened completely, and is tender when chewed. Taste and adjust seasonings.
  • Serve in a bowl and place the garnishes on the table so that each person fixes their own.

POBLANO POSOLE

Poblano Posole image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 14

2 large or 3 medium poblano peppers
2 ears corn or 1 cup frozen organic corn kernels
Natural cooking spray
6 to 8 medium tomatillos, peeled and halved
2 tablespoons EVOO
1 red onion, cut into wedges
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin,
4 cloves garlic
4 cups vegetable stock
1 lime, juiced
Handful fresh cilantro, chopped
One 28- to 32-ounce can hominy, drained
To serve: thinly sliced radishes, diced avocado dressed with lime, thinly sliced scallions cut on the bias, lime juice

Steps:

  • Preheat the broiler to high.
  • Place the peppers in the oven and char all over until the skins are blackened. Spray the corn with the cooking spray and broil until charred evenly.
  • Place the peppers in a bowl and cover to cool. Peel and seed the poblanos and coarsely chop. Cut the kernels from the cob.
  • Turn the oven temp to 450 degrees F.
  • Dress the tomatillos with 1 tablespoon of the EVOO and arrange cut-side down on a baking sheet. Arrange the onions and garlic on a second baking sheet and toss with the remaining EVOO, the coriander and cumin. Roast the tomatillos until charred at the edges and lightly browned, 20 minutes, swapping the trays between the upper and lower racks once. Leave the onions and garlic in the oven and let them cook for an additional 10 minutes.
  • Puree the tomatillos, onions, garlic and poblanos with 1 cup of the stock, the cilantro and lime juice. Transfer to a large pot along with the remaining stock and the hominy. Bring to a simmer over medium heat and cook to combine the flavors, 15 minutes. Serve the posole topped with the radishes, avocados, scallions and a little more lime juice.

FELICITA'S POSOLE

Felicita's Posole image

Provided by Michael Chiarello : Food Network

Categories     main-dish

Time 4h35m

Yield 8 servings

Number Of Ingredients 20

2 heads garlic
Extra-virgin olive oil
3 whole ancho chiles, seeded and stemmed
4 pounds pork shoulder blade roast, cut into 2-inch cubes
2 pounds pork back ribs, cut into 2-rib portions
Gray salt
Freshly ground black pepper
4 quarts posole or canned white hominy, drained
1/2 teaspoon dried Mexican oregano
2 onions, peeled and chopped
2 avocados, cut into chunks
2 lemons, cut into wedges
2 bunches radishes, washed and quartered
1 head iceberg lettuce, shredded
Dried Mexican oregano
Tortilla chips or tostadas
Felicitas' Hot Salsa, recipe follows
2 ounces chiles de arbol (80 to 90 chiles)
1 garlic clove, minced
1 teaspoon dried Mexican oregano

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the garlic onto a piece of aluminum foil and drizzle with a little olive oil. Close up the foil and roast until the garlic is soft, about 45 minutes.
  • In a large skillet, heat a thin film of oil over moderate heat. Add the chiles and brown on all sides. Remove the chiles and set the skillet aside.
  • Generously season the meat with salt and pepper. Reheat the same skillet over medium heat and cook the meat until well browned on all sides, about 15 minutes. Do this in batches to avoid crowding the pan, adding additional oil as needed. Remove the meat with a slotted spoon and set aside. Pour off the excess fat from the pan. Deglaze the pan with about 1/2 cup water, scraping the browned bits off the bottom.
  • In a large pot, bring 4 quarts of water to a simmer and add the liquid from the skillet. Add the garlic, chiles, posole, oregano, and pepper to taste. Simmer 1 hour.
  • Add the browned meat. Simmer gently, partially covered, about 2 hours, or until the meat is very tender. Taste and adjust the seasoning.
  • Serve the posole in soup bowls with the garnishes in individual bowls on the side.
  • In a large skillet lined with aluminum foil, toast the chiles over moderate heat for about 5 minutes, until they almost smoke, stirring often.
  • Bring 2 cups of salted water to a boil. Add the toasted chiles, garlic, and oregano. Simmer about 10 minutes, or until the chiles are soft.
  • Pour into a blender. Blend on low speed for several seconds, then increase to high speed for about 1 minute or until smooth. Add water to thin out sauce if you prefer.

  • Add oil to a large pan (dutch oven). Bring to medium high heat. Add pork cubes, onion, cumin, and garlic. Sauté until pork is nicely browned. Meanwhile, in a second large pot (won’t need a lid), cover posole with water and bring to a boil. Add broth to pork, and bring to a simmer. Mix red chile and water, then add to the pork and broth mixture. Add the oregano. Stir well, and cover the pot. Keep the pot at a low simmer. You will need to check periodically, as covered pots have a tendency to boil over.
  • The posole needs to cook about an hour (until tender but not mushy.) When it is done, remove from the heat and drain. I prefer to cook the posole separately so that it doesn’t absorb all the liquid in the pot with the pork. If you’ve substituted canned hominy for the frozen, you will skip this step. You will want to rinse the canned hominy to remove the starch. If you’ve purchased dry posole, follow the instructions on the package to re-hydrate.
  • At this point, the pork should be somewhat tender. However, I prefer to cook the pork for at least 2 hours on the stove, or several hours in a slow cooker. I add the posole about 30 minutes prior to serving to keep it from slurping up the delicious red chile broth.
  • When I am pressed for time, I use my pressure cooker. The pork and onions can be browned on the stove, broth and red chile added, then pressurize on high for about 45 minutes. Depressurize, add the cooked or canned posolé, return to a boil, and then serve.
