2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup granulated sugar
1/4 teaspoon salt
1 1/2 cups milk
1/2 cup yogurt
2 eggs
1/2 cup canola oil
2 -3 apples, peeled, cored and thinly sliced

Steps:

  • Combine dry ingredients and wet ingredients in separate bowls. Pour the wet mixture into dry mixture and whisk until smooth.
  • Heat a griddle or nonstick skillet to medium-high. Brush with a little canola oil. Spoon 1/4 cup (50 mL) pancake batter onto griddle using a ladle. While the first side is cooking, lay apple slices on top of each pancake. Flip the pancakes when bubbles appear on the surface, about 2 minutes. Cook another 2 to 3 minutes or until pancakes are cooked through. Adjust heat if pancakes are cooking too quickly or slowly.
  • Serve with ample maple syrup and butter.

2 cups reduced-fat biscuit/baking mix
Sugar substitute equivalent to 2 teaspoons sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup egg substitute
1 cup fat-free milk
2 teaspoons vanilla extract
1 tart apple, peeled and grated

Steps:

  • In a large bowl, combine the biscuit mix, sugar substitute, baking powder, cinnamon and salt. In a small bowl, combine the egg substitute, milk and vanilla; stir into dry ingredients. Fold in apple. , Pour batter by 1/4 cupfuls onto a hot skillet coated with cooking spray; turn when bubbles form on top. Cook until second side is golden brown.

These spiced, American-style, apple-filled pancakes make a deliciously decadent yet easy to make brunch

300g self-raising flour
1 tsp bicarbonate of soda
2 medium eggs
284ml carton buttermilk
4 tbsp milk
85g melted butter
2 small-medium eating apples , peeled, cored and grated
50g dried cranberries
a little more butter or sunflower oil , for frying
maple syrup , to serve
85g softened salted butter
1 tsp cinnamon
2 tsp caster sugar

Steps:

  • To make the cinnamon butter, mix all the ingredients together, wrap in cling film, shape into a log and chill. You can make this up to 3 days ahead.
  • Mix the flour, bicarb and a pinch of salt in a bowl. Make a well in the centre, then gradually whisk in the eggs, followed by the buttermilk, milk and melted butter. Once the mixture is smooth, stir in the grated apples and cranberries.
  • Melt a little more butter in a non-stick pan or wipe with sunflower oil. When hot, add 1-3 small ladles of batter to the pan to make 1-3 small pancakes (depending on the size of your pan). Cook for 2-3 mins until bubbles appear and the underneaths are set and golden. Flip and cook for a few mins more. Transfer pancakes to a plate, cover with baking parchment and keep warm in a low oven. Cook the remaining pancakes.
  • To serve, stack pancakes on plates, top with a good knob of cinnamon butter and drizzle with maple syrup.

3 tablespoons butter
1 large apple, cored and sliced
½ cup white sugar, divided
2 teaspoons ground cinnamon
4 eggs
⅓ cup milk
⅓ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in an oven-safe skillet over medium heat; cook and stir apple slices, about 1/4 cup sugar, and cinnamon in butter until apples are tender, about 5 minutes.
  • Beat eggs, milk, flour, remaining 1/4 cup sugar, baking powder, vanilla extract, and salt in a large bowl until batter is smooth; pour batter evenly over apples.
  • Bake in the preheated oven until golden brown, about 10 minutes. Run a spatula around the edges of the pancake to loosen. Invert skillet over a large plate to serve.

Apple crisp and pancakes rolled into one. Diced apples add chunky goodness to the Bisquick® batter and then before flipping, the pancakes get topped with a brown sugar-oatmeal streusel.

1/4 cup plus 2 tablespoons packed brown sugar
1/4 cup Gold Medal™ all-purpose flour
1/4 cup old-fashioned or quick-cooking oats
2 tablespoons plus 2 teaspoons cold butter
2 cups Original Bisquick™ mix
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup peeled diced Granny Smith apple (1/4-inch)
1 cup milk
2 eggs
Powdered sugar
Real maple syrup
Sweetened whipped cream

Steps:

  • In medium bowl, mix brown sugar, flour, oats, cinnamon and nutmeg. Cut in butter using pastry blender or fork until mixture is crumbly. Set aside.
  • In large bowl, stir all pancake ingredients until well blended. Heat nonstick griddle to 350°F. or 12-inch skillet over medium-high heat. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush lightly with vegetable oil or spray with cooking spray before heating to help prevent streusel from sticking to griddle.
  • For each pancake, pour 1/4 cupful batter onto hot griddle. Sprinkle each pancake evenly with scant 2 tablespoons and Streusel mixture. Cook 2 to 3 minutes or until bubbly on top and dry around edges. Turn; cook other side until light golden brown around edges about 1 minute to 1 minute 30 seconds. Scrape off griddle between batches of pancakes if necessary.
  • To serve, serve pancakes Streusel side up and top as desired using any of the toppings listed.
