This creamy carrot casserole is always a hit. An easy-to-fix but very special side dish, it goes well with almost any meat or poultry. Even though I serve these dressed-up-carrots often, my family still requests them for Christmas dinner.

Number Of Ingredients 7

8 cups sliced carrots
1 small onion, chopped
1 tablespoon butter
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (4 ounces) mushroom stems and pieces, drained
1/2 cup grated Parmesan cheese
1 cup soft bread crumbs

Steps:

  • Place carrots in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook until tender. Meanwhile, in a small skillet, saute onion in butter until tender. Drain carrots; add onion, soup, mushrooms and Parmesan cheese. , Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with bread crumbs. Bake, uncovered, at 350° for 30-35 minutes or until heated through.

1 1/2 cups canola oil
1 (15 ounce) can carrots, drained
2 cups sugar
1 (8 ounce) can crushed pineapple, undrained
3 eggs
1 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 1/4 teaspoons cinnamon
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
2/3 cup chopped walnuts or 2/3 cup pecans
2/3 cup flaked coconut
2 cups powdered sugar (I use whole box)
1/4 cup butter, softened
8 ounces cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Cake:.
  • Cream the oil, carrots, sugar, pineapple, eggs and vanilla.
  • Add flour, cinnamon, salt, baking soda and baking powder.
  • Add pecans and coconut.
  • Combine dry mix with creamed mix.
  • Pour into lightly greased 13" x 9" pan.
  • Bake the cake at 325 degrees for 40-60 minutes.
  • Cake icing:.
  • Cream all the ingredients together until creamy. Toast some nuts and coconut and add to creamed mixture.Spread on cooled cake.
  • Decorate as desired.

6 medium carrots, cut in large matchsticks
salt water
1/4 cup butter
2 medium onions, thinly sliced
2 tablespoons all-purpose flour
1 cup water
2 teaspoons chicken bouillon powder
1/2 teaspoon granulated sugar

Steps:

  • Cook carrots in salted water until tender.
  • Drain.
  • Meanwhile, melt butter in frying pan.
  • Add onion.
  • Saute until onion is soft and clear.
  • Mix in flour.
  • Stir in water, bouillon powder and sugar until it boils and thickens.
  • Add carrots.
  • This may be kept hot or reheated in the oven.

1/4 cup butter, plus
3 tablespoons butter
1/4 cup onion, chopped
1/4 cup flour
1 1/2 cups milk
1/3 cup Cheez Whiz (or cheese grated)
2 -4 carrots, cooked and chopped
1 tablespoon parsley flakes
salt and pepper
2 cups corn flakes, crushed
3 tablespoons butter

Steps:

  • Saute onion in butter until soft.
  • Stir in flour. Remove fromt heat and add milk.
  • Cook til thick and add cheese.
  • Add spices.
  • Pour over carrots in a casserole dish.
  • Top with cornflakes and 3 Tbsp butter.
  • Bake covered 350F 20-25 minutes.
  • Remove cover for last 5 minutes.
