12 carrots
3 tablespoons good olive oil
1 1/4 teaspoons kosher salt
1/2 teaspoons freshly ground black pepper
2 tablespoons minced fresh dill or parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • If the carrots are thick, cut them in half lengthwise; if not, leave whole. Slice the carrots diagonally in 1 1/2-inch-thick slices. (The carrots will shrink while cooking so make the slices big.) Toss them in a bowl with the olive oil, salt, and pepper. Transfer to a sheet pan in 1 layer and roast in the oven for 20 minutes, until browned and tender.
  • Toss the carrots with minced dill or parsley, season to taste, and serve.

1/4 cup butter, melted
1/4 cup brandy
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Heat oven to 375 degrees.
  • Scrape outer layer of carrots and trim off top and bottom.
  • Cut into strips approximately 3 inches long.
  • Place carrots in an ungreased baking dish.
  • Mix remaining ingredients together.
  • Pour over carrots.
  • Cover and bake approximately 40 minutes, or until your desired level of tenderness has been reached.

Steps:

  • In 2-quart saucepan, place carrots in 1 inch of water. Heat to boiling; reduce heat to low. Cover; simmer 10 to 15 minutes or until tender. Drain well.
  • Add honey and butter to carrots in saucepan. Cook, stirring frequently, until butter is melted and carrots are glazed. Sprinkle with nutmeg.
