For a change-of-pace snack with a boost of nutrition from carrots, try this spread. "Our favorite way to use it is on vegetable sandwiches," says Rebecca Walz of Madison, South Dakota.

1 package (8 ounces) cream cheese, softened
1 cup sour cream
2 small carrots, finely shredded
1/4 cup dried minced onion
1/2 teaspoon salt
Breadsticks, miniature bagels or assorted crackers

Steps:

  • In a large bowl, beat the cream cheese and sour cream until smooth. Stir in carrots, onion and salt. Serve with breadsticks, bagels or crackers.

1 can (2-1/4 ounces) sliced ripe olives, drained
3 green onions, chopped
1 jar (2 ounces) diced pimientos, drained
5 teaspoons taco seasoning
3/4 cup finely crushed nacho tortilla chips
Celery leaves
Assorted crackers

Steps:

  • In a bowl, beat the cream cheese and cheddar cheese until blended. stir in the olives, onions, pimientos and taco seasoning. On a serving plate, shape mixture into a carrot shape; press crushed nacho chips onto entire surface. Place celery leaves at top of carrot. Serve with crackers

2 cups shredded cheddar cheese
1/2 cup finely shredded carrot
1/2 cup finely chopped peanuts
2 tablespoons finely chopped onion
1/4 teaspoon dill weed
Fresh parsley springs
Assorted crackers

Steps:

  • In a small bowl, beat cream cheese and cheddar cheese for 1 minute. Add the carrot, peanuts, onion and dill; mix well. , On a serving platter, shape mixture into an 8-in. log, tapering one end to form a carrot shape. Cover and refrigerate for 2 hours or until serving. , Place parsley at wide end for carrot top. Serve with crackers.

This soft Sheet Pan Carrot Cake makes enough to feed a crowd! This recipe uses a secret ingredient instead of shredded carrots. Topped with a fluffy cream cheese frosting, this dessert will leave everyone wanting the recipe.

3 large eggs
1¼ cup vegetable oil
2 cups flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
12 ounces carrot baby food (3 ( 4 ounce jars ))
8 ounces cream cheese (1 package, softened)
½ cup butter (softened)
¼ cup milk
1 teaspoon vanilla
4 cups powdered sugar

Steps:

  • Heat oven to 350 degrees.
  • In a large bowl, beat eggs and oil for 2 minutes.
  • In a separate bowl, combine the flour, sugar, cinnamon, baking powder, baking soda and salt; add to egg mixture. Add in baby food; mix well.
  • Transfer to a greased 15x10x1 inch baking pan. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
  • While the cake cools, make the frosting. In a large bowl, beat cream cheese and butter until light and fluffy (I love using an electric hand mixer, but you can also do it by hand).
  • Mix in milk and vanilla. Gradually beat in powdered sugar until it reaches the desired consistency (I like to make mine light and fluffy so that it's easier to spread).
  • Gently spread the frosting on the cake using a spatula.
  • Cut into squares and serve.

2 cloves garlic, minced
1 tsp minced ginger
1 green chili, chopped (optional)
1/2 cup chopped onion
1/4 tsp cumin powder

1/4 tsp fenugreek seeds
1/4 tsp cardamom powder
1/4 tsp cinnamon powder
1/8 tsp cloves powder
a generous dash of black pepper
3/4 cup sliced carrots
2 medium potatoes, chopped, 1.5 loaded cups
1/2 head of cabbage, finely chopped
1/2 tsp salt

Steps:

  • In a large skillet, add 1 tsp oil and heat at medium. Add garlic, ginger, chili, and onion. Mix, cook for 5 minutes. Add the cumin, turmeric, fenugreek seeds, cardamom, cinnamon, cloves and black pepper. Mix and cook for 2 minutes to infuse the oil. Add the carrots, potato and mix well. Add cabbage and 1/4 tsp salt. Mix well, cover and cook for 15 minutes. Stir once in between. Add 1/4 tsp or more salt, and 1 tsp olive oil. Mix in, reduce heat to low-medium. Cover and Cook for another 15 minutes or until the potatoes are tender. Serve hot with Ethiopian flat bread Injera and lentil wat, ethiopian greens(gomen wat)
