These are hands down the best Carrot Cake Cupcakes with Cream Cheese Frosting you'll ever find. They're moist without being dense, and have just the right amount of spice. Add nuts or leave them out - it's up to you!

1 cup (100 g) chopped walnuts
1 pound (450 g) carrots (about 3 1/2 cups, grated)
3 large eggs
1/2 cup (120 ml) of buttermilk (or add a teaspoon of lemon juice to regular milk and allow to stand for 10 minutes)
1 teaspoon vanilla extract
2 cups (400 g) sugar
1 cup (240 ml) vegetable oil
1 tablespoon orange zest
3 cups (400 g) all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon ground cardamom
1 teaspoon ground cinnamon
Cream Cheese Frosting:
1 cup unsalted butter, softened
16 ounces Philadelphia cream cheese
2 cups powdered sugar, sifted

Steps:

  • Toast the walnuts: Preheat the oven to 350°F. Toast the walnuts in the oven for 5 minutes. Remove from the oven and set aside to cool.
  • Line 2 standard (12-well) cupcake pans with cupcake liners
  • Mix wet ingredients and carrots: Place the buttermilk, oil, sugar, eggs, vanilla extract, and orange zest together in a bowl and whisk thoroughly. Then stir in the grated carrots.
  • Mix dry ingredients: In another bowl whisk the flour, baking soda, baking powder, salt, cardamom, and cinnamon.
  • Fold dry ingredients into wet, add walnuts: Fold the flour mixture into the carrot mixture, being sure not to over-mix. Fold in the toasted walnuts until evenly incorporated.
  • Bake: Scoop the batter into cupcake papers, filling them about 1/2 to 3/4 full. Bake for 19-21 minutes at 350°F, rotating the pan after the first 15 minutes of baking. Cool for 5 minutes before taking the cupcakes out of the cupcake tin and allowing them to fully cool on a wire rack.
  • Make the frosting: Beat the cream cheese and butter on medium speed until well combined. Sift in the powdered sugar and mix. Spread or pipe onto cooled cupcakes.

1 teaspoon baking powder

3/4 cup (1 1/2 sticks) unsalted butter, melted
1 cup packed light-brown sugar
1 large egg
2 tablespoons plain low-fat yogurt
1/4 teaspoon pure vanilla extract
1 1/2 cups grated carrots (from about 4 medium carrots)
1 package (8 ounces) cream cheese, room temperature
1/4 cup (1/2 stick) unsalted butter, room temperature
1 cup confectioners' sugar
1 1/2 teaspoons pure vanilla extract
1 teaspoon grated orange zest

Steps:

  • Preheat oven to 375 degrees. Line a 12-cup standard muffin tin with paper liners.
  • In a large bowl whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg; set aside.
  • In another large bowl, whisk together melted butter, brown sugar, egg, yogurt, and vanilla. Stir in carrots. Gradually add dry ingredients to butter mixture mixing until well combined. Divide among muffin tin. Bake 25 to 30 minutes, rotating pan halfway through until a toothpick inserted in the center of a cupcake comes out clean.
  • Remove from pan to a wire rack to cool completely before frosting. To frost: Using an electric mixer, beat cream cheese, butter, and confectioners' sugar until smooth; beat in vanilla and orange zest. Top each cupcake with 2 tablespoons of frosting and spread to cover.

3 cups carrots, peeled, grated ends removed (1 lb)
2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda

3/4 cup vegetable oil
1 teaspoon pure vanilla extract
1 cup chopped nuts (optional) or 1 cup raisins (optional)
1/3 cup cream cheese
1/4 cup butter (1/2 stick)

2 cups powdered sugar

Steps:

  • Preheat oven to 325 degrees.
  • Line muffin tins with paper cupcake liners.
  • Peel carrots, chop off ends, and grate finely.
  • Stir flour, cinnamon, salt, baking powder and baking soda together, set aside.
  • In a large mixing bowl, beat eggs until well blended.
  • Add sugar, oil, carrots, and pure vanilla extract, mix well at medium speed.
  • Add flour mixture and nuts or raisins(if desired).
  • Blend on low speed until just mixed, spoon into cupcake liners, about 3/4 full.
  • Place the pans in the preheated oven and bake for 12 minutes.
  • Switch the pans so the pan from the lower rack is now on the upper, and bake for 12 more minutes.
  • Check for doneness--cupcakes should be browned and springy to the touch.

  • Blend with pure vanilla extract, then beat in the powdered sugar at low speed.
  • Add food coloring if desired; it gives the frosting a nice spreading consistancy.
  • If you don't use food coloring, add a drizzle of milk to make the frost spread more easily.
