The BEST Carrot Cake EVER! This cake is super moist and the cream cheese frosting is to-die-for! I don't even like carrot cake and I ate a HUGE slice of this cake! The secret ingredient in this cake is baby food. I know it sounds weird but it adds so much moisture and you don't have any chunks of carrots in the cake. Flour, sugar, baking soda, cinnamon, salt, vanilla, eggs, oil, baby food, cream cheese, butter, and powdered sugar. Can make the cake up to a week in advance. This is PERFECT for the holidays!

2½ cups all-purpose flour
2½ cups sugar
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 tsp vanilla
4 eggs
1 cup vegetable or canola oil
3 (4-oz) jars carrot baby food ((Gerber Stage 2))
1 (8-oz) package cream cheese (room temperature)
1 stick butter (room temperature)
2 tsp vanilla
4 cups powdered sugar
chopped pecans (for garinish)

Steps:

  • Preheat oven to 350ºF. Grease and flour three 8-inch round cake pans.
  • In a large bowl, combine all the ingredients for the cake. Mix well with a hand-held mixer. Divide the batter into the prepared cake pan.
  • Bake 30 to 35 minutes, until a toothpick inserted into the cake comes out clean.
  • Allow cakes to cool for 5 minutes in the pans and then remove from pans and cool completely.
  • Once the cakes have cooled, frost with Cream Cheese Frosting. Garnish cake with chopped pecans, if desired.
  • In a bowl, combine cream cheese, butter, powdered sugar, and vanilla.
  • Mix with a hand-held mixer until light and fluffy.

3 cups granulated sugar
1 1/2 cups vegetable oil
4 large eggs
1 tablespoon pure vanilla extract
3 cups all-purpose flour
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups walnuts, finely chopped
1 1/2 cups frozen grated coconut, thawed
1 1/2 cups pureed carrots (about 6 medium, boiled)
3/4 cup crushed pineapple, drained
2 8-ounce packages cream cheese, at room temperature
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
6 cups confectioners' sugar
2 teaspoons pure vanilla extract
2 cups walnuts, finely chopped

Steps:

  • Preheat the oven to 350 degrees F. Grease the bottom of three 9-inch round cake pans with cooking spray, line with rounds of parchment paper and coat the paper with cooking spray.
  • Make the cake: With an electric mixer, beat the granulated sugar, vegetable oil, eggs and vanilla. Sift together the flour, baking soda, cinnamon and salt. Add the dry ingredients to the sugar mixture. Add the walnuts, coconut, carrot puree and pineapple and beat until smooth. Divide the batter evenly among the prepared pans.
  • Bake the layers until a toothpick inserted into the centers comes out clean, 40 to 45 minutes. Let the layers cool in the pans for about 5 minutes. Run a knife around the edges of each pan and turn the layers out onto wire racks that have been coated with cooking spray. Let the layers cool completely before frosting.
  • Make the frosting: Combine the cream cheese and butter in an electric mixer and beat until smooth. Slowly add the confectioners' sugar and continue beating until fully combined. Add the vanilla.
  • Slice each cake layer horizontally in half using a serrated knife. Place 1 layer on a cake plate and frost with 1/2 cup frosting. Continue stacking the remaining layers, using about 1/2 cup frosting between each layer. Frost the sides and top of the cake with the remaining frosting. Press the chopped walnuts into the sides of the cake. Refrigerate until ready to serve.

Bake at 350° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a bowl, beat cream cheese and butter until smooth. Beat in vanilla and confectioners' sugar until mixture reaches spreading consistency. Spread between layers and over top and sides of cake. Garnish with nuts and blossoms if desired. 3 large eggs
1 tsp baking powder
1 c vegetable oil
2 tsp cinnamon, ground
2 tsp baking soda
1/2 tsp salt
1 1/2 c sugar
2 c flour (mum always used all purpose)
2 jar(s) junior size baby food carrots (or 1 small jar of each carrots, applesauce & apricots as a variant)
1 1/2 tsp pure vanilla extract (or imitation)
2 Tbsp fresh grated carrot (optional if you like a little texture in your cake)

Steps:

  • 1. Mix eggs, sugar and oil together. Sift together and add dry ingredients to wet mix, then vanilla. Fold in carrots.
  • 2. Bake in preheated 350° oven in a lightly greased and floured 9 x 13 pan for 40 to 45 minutes.
  • 3. Cool completely before frosting with your favourite such as cream cheese, butter cream or simple french vanilla frostings. I use canned frostings for the very sporadic times I bake cakes. Mum would make her icing from scratch.

1 1/2 cups finely minced carrots
1/2 cup crushed pineapple, drained
3/4 cup finely chopped walnuts
2 1/2 cups, all-purpose flour, plus extra for pan
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
A pinch of kosher salt
1 cup buttermilk
1/4 cup molasses
4 large eggs
3/4 cup vegetable oil
1 1/2 cups dark brown sugar
2 lbs cream cheese, room temperature
2 sticks of unsalted butter, room temperature
1 teaspoon vanilla extract
1 teaspoon lemon zest
2 cups powdered sugar
1 medium carrot
1/2 stick unsalted butter
2 tablespoons sugar
1/4 cup Cointreau
pinch of salt

Steps:

  • Preheat oven to 375 degrees F. Butter a jelly roll pan and line with parchment. Set aside.
  • Take the carrots and chop into large pieces, then mince in a food processor until you have a fine texture. Drain pineapple and finely chop walnuts. Set aside. In a large mixing bowl add flour, baking soda, baking powder and spices together. In a separate bowl mix buttermilk, molasses, eggs, vegetable oil and dark brown sugar together.
  • Now combine wet and dry ingredients together to make a batter then fold in the carrots, pineapple and walnuts. Pour into the prepared pan and bake in the oven for 25-30 minutes until cake is set and springs back when gently pressed in the middle. Remove the pan from the oven and allow cake to cool on a rack while you prepare the frosting and cointreau carrots (recipes below). Once the cake has cooled, cut into three rectangles by cutting the cake lengthwise twice. Stack the cake up into three tiers with cream cheese frosting in between each layer. Frost the outside of the entire finished cake - smoothing off the edges and corners (an offset spatula works well). Top with Cointreau carrot rounds and drizzle a little of the syrup on top as well.
  • Using a kitchen mixer, combine cream cheese and butter until blended and you have a smooth, light texture. Add the vanilla, lemon zest and powdered sugar and beat until combined. Continue to beat until smooth and glossy - about 7 minutes.
  • Slice carrot up into rounds. Add carrot, butter, sugar, cointreau and salt to a small saucepan over medium heat. Bring to a simmer and reduce until syrupy - about 5 minutes.

  • Place first 9 ingredients (through 2 teaspoons vanilla) in a large mixing bowl.
  • Beat with electric beaters or mixer paddle for 2 minutes on medium speed.
  • Pour the batter into the prepared pan.
  • Bake in 350ºF oven for 30 minutes, until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool completely; prepare icing in the meantime.
