CARROT AND PINEAPPLE COLESLAW
My neighbor Rodger every year during the holidays or barbecues would make this coleslaw and I loved it! Its sweet and creamy and was always gone, quickly. He finally gave me the recipe after years of asking and I'm glad I have it since I no longer live near him anymore. I think of him anytime I have this and miss him terribly....

- 1. In a small bowl, combine the cabbage, carrot, onion and pineapple. (I cut the pineapple chunks in half) In another small bowl, whisk the mayonnaise, sour cream, salt, sugar and lemon juice; pour over pineapple mixture; toss to coat. Chill for about an hour or two.

Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the carrots and pineapple; heat through.
