My mother, who was Japanese, made a dish very similar to this. After a lot of experimenting, I came up with a version that is very close to the one she used to make. This beef curry stew recipe is special to me because it brings back memories of her. -Gloria Gowins, Massillon, Ohio

3/4 pound beef stew meat (1- to 1-1/2-inch pieces)
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons all-purpose flour
1 tablespoon canola oil
1 large onion, cut into 3/4-inch pieces
2 tablespoons curry powder
2 teaspoons reduced-sodium soy sauce
2 bay leaves
3 cups beef stock
1-1/2 pounds potatoes (about 3 medium), cut into 1-inch cubes
2 large carrots, thinly sliced
1 tablespoon white vinegar
Hot cooked brown rice, optional

Steps:

  • Sprinkle beef with salt and pepper; toss with flour. In a Dutch oven, heat oil over medium heat; cook beef and onion until lightly browned, stirring occasionally. Stir in curry powder, soy sauce, bay leaves and stock; bring to a boil. Reduce heat; simmer, covered, 45 minutes., Stir in potatoes and carrots; return to a boil. Reduce heat; simmer, covered, until meat and vegetables are tender, 1 to 1-1/4 hours, stirring occasionally. Remove bay leaves; stir in vinegar. If desired, serve with rice.

3 pounds boneless, well-marbled beef chuck, cut into 1 1/2-inch pieces
3 tablespoons olive oil
¼ cup all-purpose flour
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 yellow onions, chopped
6 cloves garlic, peeled and smashed
2 tablespoons balsamic vinegar
1 ½ tablespoons tomato paste
2 ½ cups water
2 cups dry red wine
2 cups beef broth
2 teaspoons oregano
1 ½ teaspoons white sugar
1 teaspoon Worcestershire sauce
1 teaspoon beef bouillon
1 teaspoon dried basil
½ teaspoon paprika
½ teaspoon dried thyme
3 bay leaves
6 baby Yukon Gold potatoes, halved
4 large carrots, peeled and cut into flowers
½ pound fresh green beans, trimmed
3 ribs celery, chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pat beef dry and toss in olive oil in a bowl. Add flour, salt, and pepper and mix to coat evenly. Shake off any excess flour.
  • Brown meat in 3 batches in a large Dutch oven or heavy pot over high heat, turning with tongs, 5 to 8 minutes per batch. Let the beef sear on one side before turning. Transfer beef to a large plate.
  • Combine onions, garlic, and balsamic vinegar in the same pot. Cook and stir with a wooden spoon to scrape brown bits from the bottom of pan, about 5 minutes. Add tomato paste and continue to cook, 3 to 4 minutes more. Add beef with any juices back into the pan. Add water, wine, beef broth, oregano, sugar, Worcestershire sauce, beef bouillon, basil, paprika, thyme, and bay leaves. Stir with a wooden spoon to loosen any brown bits from the bottom and bring to a boil.
  • Cover pot with lid, transfer to the preheated oven, and cook until beef is tender, about 2 hours.
  • Remove pot carefully from the oven and add potatoes, carrots, green beans, and celery. Cover and place back in the oven until potatoes are tender, 50 to 60 minutes more. Remove bay leaves. before serving.

A very simple recipe made with the goodies you already have on hand--nothing fancy but good wholesome food!

1 -1 1/2 lb beef stew meat, cut in 1/2 inch cubes (or venison, elk, or buffalo)
1/2 cup flour
2 -4 tablespoons olive oil
8 button mushrooms, cut in quarters
3 stalks celery, sliced
1 medium onion, diced
2 carrots, 1/4 inch chunks
2 russet potatoes, 1/2 inch chunks
1 beef bouillon cube
1 bay leaf
1 tablespoon steak seasoning
1/2 tablespoon Kitchen Bouquet
salt
pepper
1 quart water (4 cups)
2 tablespoons flour
1 cup cold water

Steps:

  • Preheat dutch oven with 1/2 of the olive oil.
  • Mix flour& salt& pepper together and dust 1/2 the meat, placing in the hot oil.
  • Brown on all sides and repeat with the rest of the meat, adding more olive oil if necessary.
  • Remove the meat from the pan and drain on a paper towel.
  • Add the onion and celery to the pan and add a pinch of salt.
  • Use the juices from the onion and celery to deglaze the pan, scraping up the brown bits on the bottom.
  • When the onions & celery start to get soft, add the mushrooms and a pinch of salt.
  • Sauté until the mushrooms start to "collapse".
  • Add the carrots, potatoes, bay leaf, steak seasoning, kitchen bouquet, and bullion cube.
  • Pour the water over and cover, simmering at least 1 hr and 2-3 hours if possible.
  • If you need thickener, add the flour to the cold water and beat with a fork, strain into your boiling stew and continue to stir until it comes back to a boil, set to simmer and cover again for 15 minutes, check for seasoning.

1 pound lean stewing beef, cut into small cubes
1/3 cup all-purpose flour
1 scant teaspoon curry powder
1/2 teaspoon ground ginger
1/2 teaspoon onion powder
1/2 teaspoon salt
dash freshly ground black pepper
2 tablespoons vegetable oil
2 ribs celery (sliced)
1 medium onion (diced)
3 cups beef broth
1 medium sweet potato (peeled and cut into small cubes)
2 medium carrots (chopped)
2 small to medium potatoes (peeled cut into small cubes)
1/2 cup baby lima beans
1 can (14.5 ounces) diced tomatoes with juice

Steps:

  • Gather the ingredients.
  • In a plastic food storage bag, combine cubed beef, flour, curry powder, ginger, onion powder, salt, and pepper. Shake to coat the beef and set the bag aside.
  • Heat the vegetable oil in a large saucepan over medium heat. Add the celery and onion; sauté until just tender.
  • Add the beef and all excess flour to the celery and onion mixture. Stir well. If necessary, add a little more oil. Continue cooking, stirring, until beef is lightly browned.
  • Add the beef broth; cover and simmer for 30 minutes.
  • Add sweet potato, carrots, potatoes, and lima beans. Cover and simmer for 30 minutes.
  • Add tomatoes. Cover and simmer for 10 minutes longer.
  • Enjoy!

2 pounds cubed beef stew meat
3 tablespoons vegetable oil
4 cubes beef bouillon, crumbled
4 cups water
1 teaspoon dried rosemary
1 teaspoon dried parsley
½ teaspoon ground black pepper
3 large potatoes, peeled and cubed
4 carrots, cut into 1 inch pieces
4 stalks celery, cut into 1 inch pieces
1 large onion, chopped
2 teaspoons cornstarch
2 teaspoons cold water

Steps:

  • In a large pot or dutch oven, cook beef in oil over medium heat until brown. Dissolve bouillon in water and pour into pot. Stir in rosemary, parsley and pepper. Bring to a boil, then reduce heat, cover and simmer 1 hour.
  • Stir potatoes, carrots, celery, and onion into the pot. Dissolve cornstarch in 2 teaspoons cold water and stir into stew. Cover and simmer 1 hour more.
