OMA'S APFELKUCHEN (GRANDMA'S APPLE CAKE)

My husband's German family calls this Oma's apfelkuchen, which translates to "Grandma's apple cake." They've been sharing the recipe for more than 150 years. I use Granny Smith apples, but any variety works. -Amy Kirchen, Loveland, Ohio

5 large egg yolks
2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened
1-1/4 cups sugar
2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons cream of tartar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

4 -5 cups baking apples, Granny Smith (or other)
1 1/4 cups white flour
1 teaspoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1/2 cup unsalted butter
1 egg
2 tablespoons milk
2 tablespoons unsalted butter
3/4 cup sugar
1 1/2 tablespoons white flour
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
  • Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
  • In a small bowl, beat egg with 2 T milk and add to dry mix.
  • Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
  • Pare and core apples.
  • Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
  • Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
  • Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.

1/4 teaspoon kosher salt
1/2 teaspoon vanilla extract
1/2 pound (2 sticks) unsalted butter, cold and cut into pieces
1 pound cream cheese, at room temperature
3/4 cup sugar
1 teaspoon vanilla extract
1 egg, at room temperature
2 tablespoons sugar
1 1/2 teaspoons ground cinnamon
3 Granny Smith apples, peeled, if desired, cored, and thinly sliced

Steps:

  • Preheat the oven to 450 degrees. Lightly grease and flour a 9x13-inch pan.
  • To make the crust: Place the flour, sugar, and salt in a large bowl or food processor fitted with a steel blade and mix to combine. Add the vanilla and butter, a little at a time, and mix until it resembles cornmeal. Press into the prepared baking pan and transfer to the oven. Bake until slightly golden but not brown, about 12 to 15 minutes. Set aside to cool.
  • Lower the oven temperature to 400 degrees.
  • To make the filling: Place the cream cheese, sugar, and vanilla in the bowl of a mixer fitted with a paddle and beat until creamy. Add the egg, mix to combine, an pour over the cooled crust.
  • Place the sugar and cinnamon in a small bowl and mix to combine.
  • Place the apples on top of the filling in two or three columns. Sprinkle with the cinnamon sugar and transfer to the oven. Bake until firm and a rich brown, about 20 minutes. Cut into 20 to 24 pieces.

1/2 cup/127 grams unsalted butter (1 stick), plus butter for greasing pan
1 1/2 cups/200 grams all-purpose flour, plus flour for dusting pan
1/2 cup/100 grams sugar, plus 1 tablespoon for sprinkling apples
1/4 cup/85 grams raw honey
3 eggs
1 tablespoon grated ginger
2 ounces/56 grams candied ginger, diced
1/2 teaspoon grated lemon zest
1/2 teaspoon salt
2 teaspoons baking powder
3 medium apples, peeled and quartered
1/4 cup/50 grams sugar
1/4 cup/85 grams honey
3 tablespoons lemon juice

Steps:

  • Make the cake: Heat oven to 325 degrees and position a rack in the middle of the oven. Butter and flour a 9-inch cake pan, preferably a springform pan.
  • With an electric mixer, cream the butter and sugar, then add honey and whip for 1 minute, until fluffy. Beat in eggs one at a time, until well incorporated, then whip for 2 minutes. Stir in grated ginger, candied ginger and lemon zest.
  • Whisk together flour, salt and baking powder and add to bowl, mixing briefly to make a stiff batter. Pour batter into prepared pan.
  • With a paring knife, cut slits in each of the apple quarters on the rounded, outer part of the wedge, slicing partway through at 1/8-inch intervals. Arrange apple quarters slit-side-up over the batter. Sprinkle surface with 1 tablespoon sugar.
  • Place cake pan on a baking sheet and put on middle rack of oven. Bake for about 45 minutes, or until an inserted skewer emerges dry. If cake is browning too rapidly, tent with foil until done. Cool on a rack, then carefully unmold.
  • Make the glaze: Put sugar, honey and lemon juice in a small saucepan over medium heat, stirring until sugar is dissolved and mixture bubbles, about 2 minutes. Paint surface of cake and apples with warm glaze. Cake will keep for several days, tightly wrapped, at room temperature.

1 1/2 cups peeled and chopped apples
1 1/2 cups peeled and thinly sliced apples
2 tablespoons apple juice

1 teaspoon ground cinnamon
1/2 teaspoon lemon juice
1/2 cup rolled oats
1/4 cup butter or margarine

Steps:

  • Preheat oven to 350 degrees F
  • In a bowl, combine 1/2 cup butter, 1/4 cup sugar, and 1/4 teaspoon vanilla. Gradually beat in 1 1/4 cups flour. Press crumbly mixture onto bottom and up sides of 9-inch pie plate. Bake in oven for 5 minutes. Cool.
  • Beat cream cheese, 1/4 cup sugar and 1/2 teaspoon vanilla until combined. Beat in egg. Pour over crust.
  • Mix apples, juice, remaining sugar, 2 tablespoons brown sugar, cinnamon and lemon juice. Spoon over cheese. Bake for 45 minutes.
  • Combine oats, 1/3 cup flour and 1/3 cup brown sugar. Cut in 1/4 cup butter or margarine, to resemble coarse crumbs. Sprinkle over pie. Bake for 15 to 20 minutes more.

1 cup sugar, divided
2 teaspoons ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder

VANILLA SAUCE:
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups cold water
2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Arrange apples in a greased 13x9-in. baking dish. Combine 1/2 cup sugar and cinnamon; set aside 1 tablespoon. Sprinkle remaining cinnamon-sugar over apples. , In a small bowl, combine the flour, baking powder and remaining sugar; beat in the milk and butter until blended. Drop by tablespoonfuls over apples; sprinkle with reserved cinnamon-sugar. Bake at 350° for 35-40 minutes or until golden brown. Remove to a wire rack., Meanwhile, in a saucepan, combine the sugar, cornstarch, salt and water until smooth. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; add butter and vanilla. Serve with warm kuchen.

1/2 teaspoon baking powder
1/2 teaspoon sugar
1/2 teaspoon salt

1 large apple or 2 small apples (such as Gala), cored and thinly sliced crosswise
1 cup half-and-half
2 large eggs

Steps:

  • Make the crust: Preheat oven to 375 degrees. Whisk flour, baking powder, sugar, and salt in a large bowl. Using your fingers, work in butter until just incorporated. Press into a 9-inch pie plate.

2 cups sugar, divided
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350°. Place 2 cups flour and salt in a food processor; pulse until blended. Add 1 cup butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Press mixture onto bottom of a greased 13x9-in. baking pan. Bake until edges are lightly browned, 20-25 minutes. Cool on a wire rack., In a large bowl, combine apples, 1 cup sugar and cinnamon; toss to coat. Spoon over crust. I WAS APPLE PICKING EARLIER... SO IT'S NOW TIME TO GET RID OF SOME APPLES... I FOUND THIS RECIPE THAT I MADE MANY YEARS AGO.... IT WAS GIVEN TO ME BY A CHEFS WIFE THAT COOKED FOR A VFW. MAY BE SERVED WARM TO GUESTS WITH A CUP OF COFFEE.

1 - yellow cake mix w/pudding in mix
4-6 - macintosh apples, cored and sliced
1 tablespoon(s) cinnamon
3/4 cup(s) sugar
1 stick(s) butter, sliced in thin pieces

Steps:

  • Preheat oven to 350 degrees. You'll need a 9 x 13 baking dish, lightly greased.
  • Prepare cake mix as per directions BUT omit 1 egg.
  • Pour into greased pan.
  • Peal , core and slice apples [not too thin].
  • Place apples in a row over the cake mix, covering it.
  • Mix together the cinnamon and sugaar.
  • Sprinkle over the top of the cake.
